A Study of the Frequency of Food Purchase for Snacking and Its Related Ecological Factors on Elementary School Children

- In order to investigate food purchase frequency of elementary school children and its related ecological factors, 4314th, 5th and 6th grade elementary school children and their mothers, living in Seoul and Daejon, small city and rural area of Chungnam Province, were participated in this study. The subjects and their parents were surveyed by a selfrecording questionnaire about food purchase frequency and some ecological factors. Average height and weight of the subjects by gender and grade were similar to or a little bit more than the 1998 Korean Growth Standard. According to relative body weight, 30.6% and 10.8% of the subjects belonged to under-weight and obesity categories, respectively. Of the subjects, 46.9% used PC telecommunication or internet, 53.8% of them used it for less than an hour per day, and 46.4% watched TV for 2 to 4 hours a day. About 42% of the subjects spent 500 Won or less daily to buy snacks. A half of the subjects took snacks once a day because of hunger. Mothers' nutrition knowledge score was averagely 8.16 out of 13 full score and the average attitude score was 43.22 out of 50 full score. Foods purchased more than once a week were milk and yoghurt, cookies, ice-cream, ramyun, and gum in order. Family income, parents' education level, mothers' nutrition knowledge and food attitude score, students' snacking frequency and TV watching time showed significant correlations with purchase frequencies of some individual food items. In conclusion, the elementary school children considered taste most important rather than nutrition in buying snacks and most frequently bought carbohydrate foods and concentrated sugars except milk. Ecological factors such as mothers' nutritional knowledge and food attitude, TV watching time and snacking frequency had influenced the children's food purchase frequency. Accordingly, it is necessary to educate both children and their mothers about good food purchase and the importance of snacking.

- For the purpose of developing 'Web-Based Nutritional Education Program', this study did instructional analysis, analysis of entry behaviors and learner characteristics to select instructional contents for nutritional education program for junior/senior high school students. Survey questionnaires were distributed from October 21, 2002 to October 26, 2002 to a total of 564 junior/senior high school students in Seoul. The total number of questionnaires collected and used in our study was 479, which is 84.9% of the total questionnaires distributed. As a result of the curriculum analysis of 'Techonolgy-Home economics', subjects related with 'food and nutrition' in the 7th educational course study result, lessons including the contents of food and nutrition were 'nutrition and meal of adolescent' in 7th grade, 'family meal management' in 9th grade and 'practice of home life' in 10th grade. According to the curriculum analysis, 'nutrition' and 'food' were chosen for the superior subjects of nutrition education program and four subordinate subjects per superior one were developed. Then, entry behaviors and learner characteristics were analyzed: life characteristics, internet usage, anthropometrics data and nutritional knowledge. Students were interested in using computer and preferred passive activity to dynamic activity. According to the analysis of internet usage, WBI for students should composed active parts such as game, moving image, immediate reply and follow-up by e-mail, bulletin board and community activity. Students' BMI were in normal range but they were lacked nutritional knowledge. We wrote performance objectives that were specific behavior skills to be learned, the conditions under which they must be performed and the criteria for successful performance. The next step for developing the WBI nutrition education program would be based on the results mentioned above.

The Effect of Antioxidant Vitamins Supplementation on Blood Pressure, Plasma Lipids, Folate, and Homocysteine Levels in Smokers and Non-Smokers of College Students in the Gyeonggi Area

- This study was performed to investigate the effect of vitamin C and E supplementation on blood pressure, plasma lipids, folate, and homocysteine levels in smokers and non-smokersof college male students in Gyeonggi Area. The nutrient intakes were determined by a 24hr-recall method. The subjects were divided into six groups: vitamin C supplementation group (n: smokers = 10, nonsmokers = 10), vitamin E supplementation group (n: smokers = 10, nonsmokers = 10), vitamin C and E supplementation group (n: smokers = 10, nonsmokers = 10), respectively. There were no significant differences between the smokers and nonsmokers in terms of anthropometric measurements. Systolic and diastolic blood pressure were significantly higher (p < 0.05) in smokers than that of non-smokers. There was no significant difference in energy and other nutrients intakes between smokers and non-smokers. In plasma lipids levels, smokers had higher plasma triglyceride, LDL-cholesterol, VLDL-cholesterol, total cholesterol concentration than that of non-smokers (p < 0.05). HDL-cholesterol level of smokers had a tendency to be lower than that of nonsmokers. In smokers, AI, TPH, LPH were significantly higher than that of non-smokers (p < 0.01). Plasma folate, homocysteine levels were not significantly different between smokers and non-smokers. The effect of antioxidant vitamins supplementation in smokers: In vitamin C supplementation group, HDL-cholesterol level was significantly increased (p < 0.01) and AI, TPH, LPH were significantly decreased (p < 0.01). In vitamin E supplementation group, HDL-cholesterol level was significantly increased (p < 0.05). In vitamin C and E supplementation group, LPH was significantly decreased (p < 0.05). The effect of antioxidant vitamins supplementation in non-smokers: HDL-cholesterol level was significantly increased (p < 0.05) and AI, TPH, LPH were significantly decreased (p < 0.05) by vitamin C supplementation group. Plasma homocysteine level was decreased by vitamin E supplementation group in non-smokers p < 0.01). The results of this study showed that smoking had a tendency to increase plasma lipids levels that factor into the risk of coronary heart disease. It is considered that antioxidant vitamin supplementation in smokers had a tendency to decrease cardiovascular disease than in nonsmokers.

Maternal Plasma Homocysteine Levels and Pregnancy Outcomes

- Elevated maternal plasma homocysteine concentrations have been associated with adverse pregnancy outcomes, including birth defects, low birth weight, preeclampsia, spontaneous abortion, placental abruption, and other maternal or fetal complications. The purpose of this study was to assess the maternal plasma homocysteine level during pregnancy and to investigate the relationship between the plasma homocysteine concentrations and pregnancy outcomes. Venous blood samples were drawn from 82 pregnant women who were grouped with gestational age, 1st trimester (n = 26), 2nd trimester (n = 27) and 3rd trimester (n = 29). The concentration of plasma homocysteine was analyzed by HPLC, and pregnancy outcomes including gestational length, maternal weight gain, infant birth weight, and Apgar score were collected with the medical records of the pregnant women. The levels of plasma homocysteine of the pregnant women at the 1st, 2nd, and 3rd trimester were 5.7 +/- 3.7 micronmol/L, 5.6 +/- 4.1 micronmol/L and 7.0 +/- 4.5 micronmol/L, respectively, which had not showed any significant difference. The result of this study showed that in case of the pregnant women at the 1st trimester, the maternal plasma homocysteine level of the pregnant women whose gestational length was less than 38 weeks was significantly high (p < 0.01) compared to that of the pregnants whose gestational length was more than 38 weeks. And also, the level of homocysteine of the pregnant women at the 2nd trimester was significantly low when the maternal weight gain was high (p < 0.05). These findings suggest that maternal plasma homocysteine level at early stage of gestation will be a predicter of gestational length and maternal weight gain.

- ABSTRACT To assess the quality of nutrient intake by area of Korean adults, a dietary survey with the 3-day record method was obtained from 324 subjects aged 40 years and older but younger than 70 (52.4 +/- 8.7) living in a rural area (Ansung) and suburban area of a middle-sized city (Ansan). The quality of nutrient intake was assessed by analyzing Nutrient Adequacy Ratio (NAR), Mean Adequacy Ratio (MAR) and Index of Nutritional Quality (INQ). The average daily mean energy intakes were 1,832 kcal for Ansung and 1,842 kcal for Ansan, respectively. Daily intakes of fat for Ansung and Ansan subjects were 40.9 and 40.3 g, and those for protein were 75.1 and 73.1 g, respectively. The overall calorie: protein: fat ratio (CPF) of energy intake was 63 : 17 : 20. Daily mean intakes of protein, fat, calcium, phosphorus, iron, potassium, carotene, sodium, thiamin, and niacin were significantly higher in Ansung residents than in Ansan subjects (p< .05). The average intakes of energy, calcium, vitamin A were lower than Recommend Dietary Allowance (RDA) in both areas. Note, over 30% of the study subjects had less than 75% of RDA of calcium, vitamin A and riboflavin. The MAR was higher in Ansung than Ansan residents (0.86 and 0.85, respectively; p< .05). INQs were over 1 for most nutrients except calcium (0.87), and that of calcium and phosphorus was each significantly higher in Ansung than Ansan subjects. Based on these results, nutrient intake quality of subjects aged 40 to 69 years living in the surveyed rural area is comparable to that of semi-industrialized suburban area in Korea. Dietary deficiency in all of calcium, vitamin A, and riboflavin, however, was a common problem for both rural and suburban residents.

- This study was carried out to investigate the dietary attitudes, nutrition knowledge, nutrient intake, eating-related characteristics of dancing major and non-major female university students. The survey was conducted from October 1 to November 10, 2003 by questionnaires and data analyzed by SPSS program. The results are summarized as follows: 25.5% of the underweight group, 53.6% of the normal weight group, 12.5% of the overweight group and 66.7% of the obese group had correct perception about their body image. Eighty-one point three percent of the dancing majors and 77.2% of the non-majors were concerned about weight control, and 71.3% of the dancing majors and 64.5% of the nonmajors had weight control experiences. There were no significant differences in nutrition knowledge scores and dietary attitude scores between dancing majors and non-majors. There were no significant differences in 'predisposition to obesity scores' between dancing majors and non-majors, and the scores were low. 'Predisposition to anorexia' scores and 'uncontrollable urges to eat' scores were significantly higher in the dancing majors compared to the non-majors. Intakes of the nutrients were lower than those of the Korean recommended dietary allowances (RDAs), except vitamin C in the dancing majors. Intakes of calories, calcium and iron were lower than those of the RDAs in the nonmajors. Dietary attitude was positively correlated with nutrition knowledge but was negatively correlated with 'uncontrollable urges to eat'. In the dancing majors, 'predisposition to obesity' showed significantly positive correlation with obesity rate and 'uncontrollable urges to eat' and was negatively correlated with nutrition knowledge and dietary attitude. In the non-majors, obesity rate showed positive correlation with 'predisposition to obesity' and 'uncontrollable urges to eat'. Therefore proper nutritional education program and recommended dietary allowances are required for dancing majors to improve their nutritional status.

- This study was designed to compare general characteristics and dietary habits between volunteers for a nutrition survey and non-volunteers using a questionnaire. Volunteers were recruited by advertising on the homepage of a university to assess nutritional status by examining dietary intake for three days and blood analysis. Non-volunteers were selected from some classes not related to nutrition. There were no significant differences in sex, monthly allowances, eating-out cost, drinking and exercise between the two groups, while the proportion of self-boarding was higher in the volunteer group than in the non-volunteer group, and smoking rate of volunteers was approximately 2.4 times lower than that of non-volunteers. Volunteers were less concerned about their diet than non-volunteers. No significant differences in concern about health, considering factors in their diet, self-evaluation of their diet, learning experience about nutrition, and vitamin/mineral supplement use were observed. The frequency and the place of eating-out for dinner were significantly different between the two groups. More proportions of volunteers tended to eat regularly and eat breakfast. Volunteers consumed seaweeds more frequently, and milk, fruits and fast foods less frequently than nonvolunteers. Our results indicate that some characteristics and dietary habits of volunteers are different from those of non-volunteers. However, we could not show that volunteers were more interested in their diet and had desirable dietary habits than non-volunteers. Further research on the characteristics of volunteers who participate in nutrition survey may be helpful to interpret and generalize the survey results.

- This study was designed firstly to measure the job satisfaction (JS) levels of personnel engaged in contract foodservice management company (CFMC), secondly to compare the job satisfaction levels by personal and companyrelated characteristics, and thirdly to identify the effects of JS facets on overall job satisfaction. Of 1135 respondents, there were 712 employees in the headquarters and 423 in the branch office. From an analysis on job satisfaction, overall job satisfaction level was 3.22 out of a maximum 5 and the co-worker (3.71) facet of JS was the highest job satisfaction followed by supervision (3.32), work itself (3.26), working condition (3.15), promotion (2.95) and payroll (2.74). In comparison of job satisfaction by personal characteristics, the personnel who were male (p< .01), had associate degrees (p< .01) or long-term careers in foodservice field (p< .05), or were regular employees (p< .01) perceived significantly higher than others for overall JS. In comparison of the job satisfaction by company-related characteristics, overall JS was significant by company scale (p< .01) and by work place (p< .05), but it was not significant by operating group. Finally, on the regression analysis for the effects of JS facets on overall JS, adjusted R2 was 0.534 (p< .001) and all six JS facets, especially payroll, had a positive effect on overall JS significantly (p< .001). Considering that the goal of enterprise on profit-making through customer satisfaction (CS) and the role of personnel on CS at moment of thrust (MOT), the findings confirmed the necessity for continuous internal marketing and human relation management focusing on the lower level of JS facets.

Effect of Resistant Starch on Human Glycemic Response

- In order to observe the effects of resistant starches on human glycemic response, nine female university students were investigated using cellulose (CED), resistant starch 3 (RS3D) and resistant starch 4 (RS4D) diets. Each woman's blood sugar and insulin, triacylglycerol and free fatty in plasma concentration were measured at fasting state, then 15, 30, 45, 60, 75, 90 and 120 minute after each test diet feeding. Glycemic indices of the Cellulose diet (CED: 57.9 +/- 3.00), the Resistant starch 3 diet (RS3D: 52.6 +/- 7.9) and the Resistant starch 4 diet (RS4D: 52.9 +/- 10.2) were similar to each other, but they were significantly lower in comparison with those of white wheat bread diet (WWBD: 100). Insulinemic indices of the CED (49.8 +/- 8.2), RS3D (50.0 +/- 7.3) and RS4D (72.4 +/- 7.7) were significantly lower in comparison with the white wheat bread diet (WWBD: 100), but among the dietary fiber diets, the insulinemic index of RS4D was significantly higher than the CED and the RS3D. Plasma triacylglycerol contents of the CED, RS3D and RS4D including WWBD showed gradual increase in tendency after lowering in early stage of each test diet feeding, but not significantly different in each dietary fiber added diet. Plasma free fatty acid contents of the CED, RS3D and RS4D including WWBD showed gradual decrease in tendency after each test diet feeding, but not significantly different by each dietary fiber added diet. In above results, we speculate that resistant starch 3 controls rapid elevation of blood sugar by delaying intestinal digestion and absorption of cellulose, but the result appears to be different from RS4 in comparison. Thus, RS3 intakes may contribute to the diet therapy of diabetic humans, but more studies on RS4 is needed in the future.

- To evaluate the antioxidative effect of maengjong-juk (Phyllostachys pubescens) extract coated rice in vivo system, maengjong-juk extract coated rice diets were fed to C57BL/6 mice for 16 weeks. Plasma total antioxidative capacity, hepatic lipid peroxidation, protein oxidation, activities of antioxidative enzymes and total glutathione content were measured. Plasma total antioxidative capacity was elevated significantly in maengjong-juk extract diets supplemented group in a dose dependant manner. Hepatic TBARS contents were significantly decreased in maengjong-juk extract diets supplemented group compared to high cholesterol group. Maengjong-juk extract coated rice diets suppressed the protein oxidation significantly in liver. Activities of hepatic antioxidative enzymes such as total SOD, Cu,Zn-SOD, Mn-SOD, GSH-Px and catalase activities of maengjong-juk extract coated rice diets were significantly higher than those of high cholesterol diet. Total hepatic glutathione content was significantly increased by maengjong-juk extract coated rice diets administration. According to this study, numerous antioxidative materials and phytochemicals containing in maengjong- juk extracts appear to protect antioxidative systems in C57BL/6 mice fed bamboo extract coated rice diet.
