A Study on Dietary Behavior and Health Condition of Employees at Department Stores

A study has been performed to provide the basic information about the current dietary habits, health related behaviors, and body indices and to bring forward the importance of this information to the people's attention based upon the relation between employee's life patterns and health conditions in their daily lives. Three hundred and five department store workers were examined from August 2006 to September 2006. With the average BMI values 23.9 +/- 2.2 for males and 20.0 +/- 1.9 for females, both gender groups were in normal, but 62.2% of the males were overweight and 15.4% of the females were under-weight. Regarding dietary and health related factors on how they perceive themselves, as normal were 204 (66.9%) the most and bad and very bad were respectively 43 (14.1%) and 5 (1.6%). Half of the subjects (43.2%) perceived sleeping hours to be insufficient, and 64.4% of them need to exercise regularly. As problems related to eating habits, they reported irregular meal times, overeating, preference of hot and spicy food, skipping meal, unbalanced meals. Regarding weight control they have attempted were the most (73.0%), after weight reduction, 51.2% of the subjects had side effects, such as gastrointestinal troubles, anemia, dizziness, sense of fatigue, constipation, physiological disorder, and diarrhea, etc. In the food habit score, it was shown that overall average score of the subjects was 62.63 +/- 9.86 which is lower than other studies. Female (62.76 +/- 10.15) had better score than male (61.67 +/- 8.06). While the item with the highest point was eat all three meals of the day, that was the lowest point, exercise every day. The food habit score of the younger group had lower than older group, and also they preferred sweet foods to other group. The results suggest that nutrition education for workers at specific working fields needs to be more focused on the improvement of dietary habits and health status of workers.

Comparison of Dietary Behaviors Related to Sodium Intake by Gender and Age

This study was performed to understand recognition and behaviors related to sodium intake of Korean adults. The data were collected from subjects including 267 male and 285 female adults in nationwide and compared by gender and by age. We found that the male group showed significantly higher smoking, alcohol drinking, and exercise does the female group. The older group (40 to 59 years) revealed significantly higher exercise and lower alcohol drinking; however general disease and hypertension prevalence, diet therapy practice, and meditation for hypertension were higher. Recognizing sodium levels of foods containing high-sodium, and sodium-nutriture labels when purchasing foods, and knowing differences between salt and sodium of the male group or recognizing sodium levels of foods containing high-sodium of the older group was worse than the other. Among the 32 food behaviors, only 12 were identified as significantly correlated to sodium intake levels including behaviors of preferring Chinese and Japanese foods to Western foods, preferring kimchi to raw vegetables, completely consuming soup, stew, noodle liquid, liking of dried fish and salted mackerel, frequent eat-outs or delivered foods, and so forth. There were significant differences between gender or age groups in terms of sodium intake-increasing behaviors; the male group showed higher behaviors of preferring salty taste and eating all broths. And the older group revealed higher behavior of adding table salt as well as the previous two, however, the younger group showed more behaviors of eat-outs or delivered foods and not the liquid of kimchi.

Development and Evaluation of Validity of Short Dish Frequency Questionnaire (DFQ) for Estimation of Habitual Sodium Intake for Korean Adults

The aim of this study was to develop various types of a dish frequency questionnaire (DFQ) for estimating the habitual sodium intake and to evaluate the validity of a 125 item dish frequency questionnaire (DFQ 125) with the DFQ 70, DFQ 36 and DFQ 15. For the DFQ 125, one hundred and twenty five dish items were selected based on the information of sodium content of a one serving size, consumption frequency and dish items that contributed most to the variation of sodium intake. Frequency of consumption was determined through nine categories ranging from more than 3 times a day to almost never to indicate how often the specified amount of each food item was consumed during the past 6 months. The sodium intake estimated with DFQ 125 was 5775.0 +/- 3636.3mg, 12.6% higher than that estimated with a 24 hr urine analysis (5009.7 +/- 1541.9mg) and significant correlation was observed between them (r = 0.3315, p < 0.001). When sodium content in broth leftover was subtracted from the total intake, the actual sodium intakes was decreased to 5309.6 +/- 3076.6mg, which was 3.2% higher than that with a 24-hr urine analysis. Overall, 56% of subjects in the lowest quintile of sodium intake computed with DFQ 125 were also in the lowest of adjacent quintile while categorization into the opposite quintile were 4.9%. DFQ 70 was developed from DFQ 125 by omitting the food items not frequently consumed, selecting the dish items that showed higher sodium content per one portion size and higher consumption frequency. The sodium intake estimated with DFQ 70 (5026.6 +/- 3107.1mg) showed only 0.2% difference from that estimated with a 24-hr urine analysis, significant correlation with it (r = 0.3199, p < 0.001) and higher proportion of subjects to be classified into the same or adjacent quintile. The sodium intake estimated with DFQ 36 or DFQ 15 was also significancy correlated with that estimated with a 24-hr urine analysis (r = 0.3441, p < 0.001; r = 0.321, p < 0.001 respectively) and more. The proportion of subjects was classified into the same or adjacent quintile. However, the actual sodium intake estimated with DFQ 36 or DFQ 15 were 3534.0 +/- 1804.6mg and 2508.0 +/- 1261.5mg, respectively, 31.3% or 51.3% less than that estimated with a 24-hr urine analysis. It seems the DFQ 125 with subtraction of sodium content in broth leftover or DFQ 70 can be used quantitatively to estimate sodium intake of adults. DFQ 36 or DFQ 15 can be used as a screening tool or to assess the changes of sodium intake after nutrition education.

Sodium Intakes of Korean Adults with 24-hour Urine Analysis and Dish Frequency Questionnaire and Comparison of Sodium Intakes According to the Regional Area and Dish Group

This study was performed to assess the sodium intakes of Korean adults using a 24-hr urine analysis and dish frequency questionnaire (DFQ) according to each dish group and the regional area. The subjects of this study were comprised of 552 adults (male: 267, female: 285), aged 20-59yr residing in the metropolitan area (N = 200), Chungcheng-Do (N = 117), Jeolla-Do (N = 117), and Gueongsang-Do provinces (N = 118). The subjects were recruited from the residents who once participated or are participating in the various health programs offered by the public health center. The number of subjects who completed the 24-hr urine collection was 205 (male : 110, female : 95).The mean age and BMI of the subjects were 39.0+/-11.7 y and 23.1+/-2.9 kg/m2, respectively. The mean systolic and diastolic blood pressure was 119.5+/-15.4 mmHg, and 77.1+/-11.1 mmHg, respectively. Eighteen percent of the subjects responded that they are currently smoking, 36% drinking and 50.4% exercising. Twenty point six percent of the subjects were assessed as having hypertension according to their systolic or diastolic blood pressure(SBP > or = 140 mmHg or DBP > or = 90 mmHg) measurements in the present study. Salt intake of the subject estimated with 24-hr sodium excretion was 12.7 g/d (male : 13.4 g/d, female : 12.1 g/d) based on the sodium excretion rate as 82%. Salt intake estimated with DFQ was 14.7 g/d (male : 16.2 g/d, female : 13.4 g/d), 2 g more than the salt intake estimated with 24-hr urine analysis. The four dish groups that contributed most to the sodium intake in order were kimchi (I1571.4mg), soup and stew (1260.5 mg), fish and shellfish (706.3 mg) and noodle and ramyeon (644.3mg). Salt intake estimated with DFQ was the highest in the subjects of Gueongsang-Do (17.0 g/d), second highest Chungcheong-Do (16.4 g/d) and the lowest in the metropolitan area (13.0 g/d). Subjects of Gueongsang-Do showed the highest sodium intakes in most of the dish group, whereas subjects of the metropolitan area showed the lowest. Residents of Chuncheong-Do revealed the highest sodium intake with kimchi and ofJeolla-Do the higher sodium intake with the main dish (meat, fish and beans). The highest salt percentage of kimchi (3.0+/-0.8%) and soybean paste (14.5 +/-5.1%) were observed in Gueongsang-Do, whereas individuals of the metropolitan area were observed as having kimchi (1.6 +/-0.5%) and soybean paste (7.4 +/-1.6%) with the lowest salt percentage. Men were observed as having more salty kimchi (2.4 +/-0.1%) than women (2.1 +/-0.1%).

A stydy on Nutritional Status and Eating Behaviors of Underweight Adolescent Boys Using 2001 NHANS of Korea

This study was performed to identify nutritional status and eating behaviors of underweight male adolescents aged 15 to 19 years. The subjects selected by using the data of KNHANS-2001 were 32 underweight boys and 135 normalweight ones. We found that weight, waist and hip circumference of the underweight group were significantly different to normal-weight group, but height and waist-hip ratio were not. Their serum indices belonged within normal ranges and showed no difference between the two groups. Their energy and nutrient intakes were mostly poor. The level and proportion of the subjects below EAR, NAR and INQ of each nutrient were not significantly different between the two groups. There were no difference of frequencies of skipping meals, snacking and eating-out between the two groups, either. When comparing frequencies of food intakes, the underweight group consumed significantly more of fermented fishes and less milk than the normal-weight group. And the former had significantly more rest/sleep, nodoes and supplementation and less regular excercise than the latter. The underweight group perceived more correct self-images than the normal-weight group and they tried more to increase their body weight during weight control practice (p < 0.001). It was concluded that the underweight group showed no different biochemical indices, nutrient intakes, and dietary behaviors to the normal-weight group, but they revealed significantly higher non-active activities like rest and supplementations.

Relationship between Nutritional Status and Facial Sebum Content of Young Women

This study was performed in order to identify nutritional factors affecting on skin sebum content with 131 female university undergraduates in 2003. We measured the sebum contents of 4 facial spots to classify their skin types. Daily energy and nutrient intakes of the subjects were not deficient except in calcium and iron, which were 466.2 mg (66.6% RDA) and 8.5 mg (53.4%RDA) relatively. We observed no significant difference of energy and nutrient intakes among the 3 skin types. But significantly higher consumption of grains and slightly higher frequencies of several food groups (excepting starches) were shown in oily skin types, so they might have higher nutrient intakes. Serum indices and food preferences mostly revealed no difference among the 3 skin types. But in the oily skin type, serum phosphorus levels were significantly lower than others, suggesting phosphorus-rich food consumption like soft drinks and grains could lead to a dry skin type rather than an oily one. Also in the oily skin type, sweet taste preference was slightly lower than others; moreover, sweet intake was lower samely significantly. There was mostly no significant relationship between facial sebum contents and nutrient intakes, dietary behavior, food frequency and food preference except in some factors. Animal protein intake showed a significant negative relationship toward facial sebum content. On the other hand, in normal skin type, fishes consumed was slightly higher than others, so that higher animal protein consumption presumably leads to normal skin type. Frequency of fried food and bacon and preference of fried foods showed slightly negative relationships toward facial sebum content. Regular meal times showed significantly increased facial sebum content.

Developing Breakfast Menus for Most Easily Breakfast-Skipping Groups

This study was conducted to develop the standard breakfast menu for those weak groups having insufficient breakfast intake. The following three target groups are classified as: 16 - 19 years old high school male student, 20 - 29 years old female who have job or college students, 20 - 29 years old male or female who have job (double income family). While developing menus for each target groups, we applied several basic guidelines for meal planning as follows: Nutrient intake level was set to 1/3 of RDA, while the energy level to 1/4 of RDAs. Most frequent meal pattern of Koreans was adapted; Suitabilities of appropriate serving size and cost for middle-income families were considered; Domestic foods and ingredients were used. We developed 24 menus summed by 2 menus for each season and three target groups. When evaluating the menus, most of the breakfast menus were sufficient of nutrients as a meal for the subjects. Three food groups such as grain/starch group, meat/fish/egg/bean group, vegetable/fruit group were included in all menus. Even though milk/dairy products group was not excluded for some menus, other calcium substitutes like anchovies were used. Oil/nut/sugar group was used to a minimum. The average number of foods for each menu was 12.8, which ranged from 10 to 17 depending on the menus. The average weight of the menus including soup was 822 g, 633 g and 730 g for each target group, respectively. The average price of the menu ranged from 2,000 to 3,500 won per person. The above results could be applied at home as well as foodservice institutes and furthermore could offer information for developing breakfast-substituting food products.

A Comparison of the Resting Energy Expenditure of Korean Adults Using Indirect Calorimetry

The purpose of this study was to provide baseline data for revising the recommended energy intake for Korean adults. We recruited 290 adults so as to determine their resting energy expenditure (REE) and energy intake. The REE was measured by indirect calorimetry. We also calculated the REE from prediction equations formulated by World Health Organization (WHO). The energy intake for two consecutive days was assessed using the 24 hour recall method. The body weight, lean body mass (LBM) and percentage body fat were measured using the INBODY 3.0 system. We compared the results of three age groups; 20 to 29 years, 30 to 49 years and 50 years or more. The average energy intake of each age group was below the 7th Korean Recommended Dietary Allowances (RDA). The average energy intake was lower in the older age groups. However, no difference was observed among the age groups when the energy intake as a percentage of the Korean RDA was compared. Our measurement of the REE was higher than the REE calculated by the WHO's method. Correlation coefficients between the measured and the calculated values of REE for all age groups showed significant correlations (r = 0.475-0.672). As the ages of all the subjects increased, the REE/kg of body weight decreased. There were no significant differences in the REE / kg of the LBM between the different age groups; however, the REE/kg of the LBM was higher in the female group than in the male group. Negative correlations of the REE with the age (r = -0.242) and body fat ratio (r = -0.313) were observed; positive correlations of the REE with the BMI (r = 0.265), height (r = 0.570), weight (r = 0.562) and LBM (r = 0.586) were also found (p < 0.01).

The Caloric Intake Status and the Eating Habits in College Male Students Living Alone or Sharing Accommodation with Friends

To investigate effects of the shared living on nutrient intakes,250 college male students who were living alone (104 men) or sharing accommodation with friends (134 men) were participated. Their average age was 22.6 years, their average height was 171.8 cm, their average weight was 65.6 kg and their average Body Mass Index (BMI) was 22.2. The caloric intakes of the men living alone or sharing accommodation were 55.9% and 72.5% of the Korean Recommended Dietary Allowance (RDA), respectively. The decreased caloric level of the group living alone seemed to be due to their decreased protein and fat consumption as compared to that of the group sharing accommodation. The group living alone consumed increased amounts of fiber for breakfast and half the carbohydrates, but more fat (p<0.05) in snacks than the group sharing accommodation. The daily carbohydrate : protein : fat (C : P : F) ratio averaged 58.6 14.1 27.3, which is a lower carbohydrate and a higher fat ratio than the Korean recommended ratio. However, the group living alone was closer to the Korean recommended ratio than the group sharing accommodation. The food intake habits were evaluated as being poorer in the group living alone as compared to the group sharing accommodation, less frequent consumption of fried/pan-fried dishes, and fruits/juices, but more frequent consumption of instant/processed foods. In comparing the eating patterns of the two groups, the group living alone showed better eating habits, such as more 'breakfast eating' and less 'snacking in the morning, afternoon or late at night' whereas the group sharing accommodation showed better eating habits such as less 'picky eaters' and less 'eating out'. In the group living alone, their lower caloric intake was assumably due to their fewer side dishes, however they showed higher eating frequencies of instant i processed foods. Since the lifestyle of living alone seems to grow gradually among young men, we strongly recommend dietary education for them.

Nutritional Status of Mentally Retarded Children by Residence and by Degree of Handicap

We studied the nutritional status of on mentally handicapped children living at home or in institutions since early teenage years are nutritionally important. The subjects of 7 to 12 year old mentally retarded children attending a special education school in Seoul were surveyed with questionnaires as well as 2-day dietary recall records, with the help of persons of their care-giver when needed. Among the 64 children, 54.7% are living in institutions and the rest of them are living at home. They were ranged from the trainable (64.1%), the educable (26.6%), and the non-trainable (9.4%). Their average daily intake of energy intakes (%RDA) was 2,070.1 kcal (94.1%), Ca 603.9 mg (75.5%), Fe 11.1 mg (92.5%), Vt.A 507.5 RE (84.6%), Vt. B2 1.1 g (88.2%), niacin 14.1 g (93.6%) and Vt. C 58.2 g (83.1%). Their average intakes of these nutrients were significantly higher in subjects of institutions than at home. The nutrients consumed at a much higher level than the RDA of the normal children were Vt. B1 (1.6 g, 146.8%) and protein (75.3g, 136.9%). The higher percentage of children at home were under consumed of several nutrients (< 75% RDA) than ones in institutions. When comparing the degree of handicap, energy and nutrient intakes except Vt. C were highest in educable children than trainable ones or Dawn's children. MAR of the diets of the subjects was 0.84. Children at home showed lower MAR as well as NAR of each nutrients, whereas children belonged to INQ < 1 were less at home. Handicapped children at home were snacking higher amount relative to their calorie intake and too frequently, that may lead to their poor nutrition. There was positive correlations between factors of nutrition and physical and dietary behaviors, but there were no correlations between factors of nutrition and health-related habits. Nutritional caring mentally handicapped children in institutions seemed to be more effectively managed.

Eating Behaviors and Food Preferences of Mentally Retarded Children according to the Degree of their Handicap

The handicapped frequently suffer from inappropriate food intake often resulting in overweightness, malnutrition, and poor growth and development. Our study was done on 7 to 12 year old mentally retarded children attending a special education school in Seoul. We administered questionnaire surveys and 3-day dietary recalls of the subjects, with help when needed from their stay-at home or their care-giving teachers. The questionnaires covered the general characteristics and dietary behaviors of the subjects. The degrees of handicap of the 142 children ranged from the trainable (54.9%), the educable (31.0%), and the non-trainable (14.1%). Of the children studied, 70.4% had 'breakfast always', which was higher than normal. Appetites were highest in the Down's Syndrome group. We found that the more serious the handicap, the higher the breakfast eating ratio and appetite level. The main reason for their missing breakfast differed accroding to the handicap level: 'late rising' in the educable and non-trainable groups but 'no appetite' in the trainable group. Most of the children (52.2%) spent less than 20 minutes eating their meals, the parents described their children's dietary habit problems as a pica (22.3%) or overeating (17.3%), and they indicated that teaching the children how to use spoons and chopsticks (33.1%) was the most stressful. Actually more than 85% of the subjects could not use chopsticks, and skill of using cutlery was significantly different according to the degree of handicap. The food preference for milk products was the highest. It was interesting that the handicapped who had serious food pica didn't like food groups such as grains/starches, meats/fishes/eggs/beans or vegetables/fruits.

Development of a Simple Evaluation Questionnaire for Screening the Dietary Patterns of Overweight Young Adults

A study was performed to develop as a screening tool, the Simple Evaluation Questionnaire for screening Overweight Dietary Patterns in people in their 20's. We used the data from the 20 to 29 year old subjects who participated in the three surveys: the health behavior survey, the dietary habit survey and the food intake survey - as part of the National Health and Nutrition Survey of 1998. The 1,493 adults were classified into two body fatness groups, that of normal (including the underweight), and the overweight (including the obese) on the basis of their relative body weight (RBW). When comparing general variables between the two groups, significant differences (11 variables) were found in gender, sadness/depression state, stress level, age, number of diseases, age when overweightedness started, maximum body weight, sleep length, presently a smoker, everyday smoking habits, number of alcoholic drinks in the past month, and the number of alcoholic drinks when drunk, as well as snacking frequency and fatty food consumption. There were significant differences between the two groups in the three variables of daily soup/kuk, pan fried fish/meat/poultry and cooked fish paste/ham/dried squid in terms of cooked food intake, and 11 variables of food size, cooked rice, stews, vegetables and kimchi at breakfast, panfried foods and beverage/teas at lunch, cooked rice and stews (liquid) at dinner, cooked fish paste/ham/dried squid at snacks and cooked fishpaste/ham/dried squid at snack between lunch and dinner. In terms of raw food intake, we observed significant differences (8 variables) in daily food intake and grains, grains/vegetables/fishes (shellfish) at breakfast, meat at lunch and milk at snack after dinner. After developing questions with indicators and analyzing the indicators by logistic regression analysis using 34 variables, including these 33, plus eating-out frequency, we chose 10 questions for the simple evaluation of dietary patterns for the overweight category, in order to give each one point each. Among them we assigned an additional point to one question and two points to another question. The average scores of the overweight and normal groups, as shown by the questionnaire developed, were 5.97 +/- 2.36 and 7.36 +/- 2.21, respectively. A score of seven points was selected as the cut-off point. We examined the sensitivity, specificity and positive predictive value of the questionnaire to the results of 49.3%, 75.4% and 68.8%, respectively. The total score categorized as an overweight dietary pattern was 30.2%.

When comparing variables between the two groups, significant differences were found in gender, education, job, employment status, perceived health status, sadness / depression state, stress level, age, number of diseases, age when overweigh-tedness started, maximum body weight, sleep length, drinking pattern (yes / no), amount of alcoholic drinks, frequency of intoxication or drunkeness, amount of alcoholic drinks when drunk, intensity of exercise, frequency of exercise, exercise duration, skipped meals, small meals and drug supplements. In terms of food intake, there were significant differences in the daily food intake in terms of breakfast, dinner, daily kimchi and dairy products. In terms of mealtimes, we found differences in the amount of cooked rice at breakfast, kimchi at lunch, soup / kuk at dinner, fresh vegetables for snacks, fried foods for snacks between breakfast and lunch, and fruits / juices for snacks between lunch and dinner. After developing questions with indicators and analyzing the indicators by logistic regression analysis three times, we chose 10 questions for a simple evaluation of dietary patterns for the overweight-type category in order to give one point each. Among them we selected two questions to add one additional point and one question to add two additional points. The average scores of the overweight and normal groups, as shown by the developed questionnaire, were 5.97 +/-2.36 and 7.36 +/-2.21, respectively. A score of seven points was selected as the cut-off point. We examined the sensitivity, specificity and positive predictive value of the questionnaire to the results of 67%, 59% and 62%, respectively.

Comparison of the Total Antioxidant Status and Usual Dietary Intake in Normal and Overweight Males

This study was conducted to measure the difference in the total antioxidant status(TAS) of overweight and normal weight adults, and to investigate the correlation between TAS and the nutrient intake. Anthropometric parameter, TAS, biochemical parameters and dietary intake were measured in the normal weight group(n=17, BMI 20-25, obesity index 90-110%, body fat 16-20%) and overweight group(n=13, BMI > 25, obesity index > 120%, body fat > 25%) among Korean young males. The TAS of the overweight group was significantly higher than that of the normal weight group(p<0.01). Among biochemical parameters, the average uric acid concentration of the overweight group was significantly higher(p<0.05) compared to that of the normal weight group indicating, the uric acid concentration reflects TAS. Usual dietary intake showed that the intakes of Ca and vitamin B2, are below RDA. The average intake of vitamin C in the overweight group was significantly lower than that in the normal group(p<0.05). There was no difference in the intake of carotene and vitamin E between groups. The diet quality of both groups was satisfactory. The result of the correlation analysis on TAS, the uric acid concentration, and the measured indexs are as follows : In the overweight group, TAS was negatively correlated with alchol drinking, and uric acid concentration was positively correlated with BMI, obesity index, and TAS. In conclusion, TAS was significantly higher in the overweight group than that of the normal group, although no association was found with nutrient intakes. Serum uric acid showed a positive relationship with TAS indicating, it is a possible determinant of the antioxidant capacity.

Determining Obesity Frequency of Rural Children by Skinfold Thickness, Analyzing Their KAP Related ti Obesity and Obesity Camp Strategy

A survey was conducted on 222 students in two elementary schools in rural areas, one was a rural small city and the other was in the countryside. By measuring their skin-foldness in 4 spots by caliper, the body fatness of 5 grades(BFGr) of the subjects was resulted as follows ; 28.0% of boys and 6.7% of girls were classified as obese the and 34.1% of boys and 31.1% of girls as overweight. Comparing by region, children in the small city seemed to be fatter than the ones in the countryside(21.7% vs. 17.2% as obesity). Comparing by gender, boys were fatter than girls(28.0% vs. 6.7% as obesity). When recategorizing body fatness from 5 grades(BFGr) into 3 groups(BFGp) as overweight group(obesity+overweight), normal and underweight group(underweight+severe-underweight), we observed no significant difference in childrens dietary habits and food intake frequencies by BFGp. Overweight and underweight groups enjoyed snacking before dinner more frequently than the normal group(42.1-59.3% vs. 31.5%). The subjects showed poor nutrition knowledge score with relatively high attitude score about weight control and dietary behavior score was a little lower than the attitude score. Nutrition education programs, like camps, should stress on childrens nutrition knowledge. BFGp related to obesity attitude positive, a very low level and the latter related to diet, exercise and fasting attitudes at positive levels. Therefore overweight children seemed to be motivated easily. Also the higher the in exercise-value score, the more increased was shown in exercise attitude at positive, very low level. Emphasizing exercise-value in camp programs might make childrens exercise attitude more positive. As strategies for a rural obesity camp program are being developed by obese and non-obese children. The camp would be held over summer vacation for 3 days(2 nights) at the participants expence not exceeding 50,000 won. Contents of the program cover nutrition knowledge, and exercise-value as well as cooking lessons, exercise practice, and self-esteem enhencement.

Nutrient Intakes and Health-related Behaviors of the Elderly in Rural Area

A study about health status of the elderly in rural area was performed with 110 home-bound elderly. The results obtained by questionaires and personal interviews recall were as follows. 1) Subjects were 68.6 years of age on average. They revealed the physical tendency of not overweight but high blood pressure. 2) We found that seniors who live alone in rural area were more than in urban area. 3) Average daily intakes of energy and protein of rural elderly were lower than the Korean RDA and the intakes of Ca, riboflavin and niacin in female were also lower. 4) Nutrient intakes were related to family income, food expense, smoking amount, drinking frequency and duration of exercrse, which suggested the needs of nutrition education for the seniors and meal services especially for the low-income elderly.

Dietary Living in North Korea according to the Defectors

We performed a study to understand the dietary situation in North Korea and to compare the difference between the North and the South. Two hundred North Korean defectors from the North since 1990 participated in this survey. Information was collected from December, 1997 to February, 1998 by mailing pre-tested questionnaires, which had been confirmed by 10 previous interviewers. The final data from 157 defectors(107 male and 33 female with 17 unidentified gender) were analyzed. We found that (1) North Koreans are lowr in height, weight and BMI than South Koreans, (2) The North Korean diet is very simple and monotonous. It is limite to their local and unprocessed foodsand dishes, which is far from the trend of globalization and readiness. (3) On the other hand, in the North, the government control on foods diminished because food shortage leads to free market activity where housewives manage their own foodservices, and to accelate their eating-out behaviors. (4) Profound differences between the South and the North in dietary life are noticed by the defectors as English words and Korean words. Efforts to understand and learn about each other is necessay before not too late.

Nutritional Status of the Elderly Living in Cheongju - I. Health-Related Habits, Dietary Behaviors and Nutrient Intakes

The health-related habits dietary behaviors and nutrient intakes of the elderly living in Cheongju were investigated by interviews with a questionnaire from August to September in 1996. The responses of 169 free-living elderly aged over 65(male 91, female 78) were analyzed. Thirty-six percent of the subjects smoked currently, 33%, drank alcoholic beverages, and 52% exercise regularly. Exercise was mostly in the from of walking for 1/2-1 hour. Significantly higher proportions of males smoked, drank, and exercised as compared to females. Food groups eaten at every meal were examined on a 5-point scale, and the consumption scores were compared with groups according to sex, age, smoking, drinking, and exercise habits. The elderly who exercised regularly got significantly higher scores in their calcium intakes and the variety of the 6 food groups than the elderly who did not exercise. The dietary assessment data showed that the energy intakes of males and females were 81.9% and 72.8% of the RDAs, respectively. The proportions of the elderly consuming less than 75% of RDAs of vitamin A and calcium were 96.5% and 91.1% of the total subjects, respectively. Higher educational status, more pocket money and regular exercise had positive effects on nutrient intakes, while smoking and drinking among females, but not males, had negative effects. Therefore, to improve nutritional status of the elderly, intake of vitamin A-and calcium-rich food such as milk with regular exercise should be emphasized on the education program.

Comparisons of Teachers' Satisfaction with School Lunch Program in Middle and Elementary Schools run by Foodservice Management Type

Teacher's satisfaction with school lunch programs run by foodservice(FS) management types were surveyed with questionnaire at 5 middle and 4 elementary schools. The 88 middle and 104 elementary school teachers who participated and schools' FS management were of 5 types : self/conventional, contracted/conventional, contracted/commissary and contracted/dosirak delivery. Most teachers knew correctly their schools' present FS management types and thoroughly understood the main reasons for needing school lunch program with proper nutrition, better taste and balanced diets in addition to the first reason its less work than preparing homelunches. Teacher's satisfactions with their present school FS were high in self/conventional and contracted/conventional and was very low in contracted/commissary and contracted/ dosirak Taste, hygiene, nutrition and dining facilities in turn were pointed out to be improved : firstly hygiene in the self and firstly taste in the contracted. Particularly dining-rooms were found to have narrow space, uncomfortable chairs and tables, unclean, and having unpleasant smells. Teachers observed that the overall students' food habits such as eating more various foods and better table manners through that school lunch programs, particularly the self-managed types were improved. Conclusively most teachers emphasized school lunch programs to be continued and preferred self-managed types and contracted/conventional types as the second best in having less work to manage, better, taste, nutrition and hygiene, less cost and better nutrition education in turn. And they thought school founders should handle the finances needed to newly establish or repair the school FD facilities, otherwise provided with the partial aid of student's parents.

We performed this study to understand the health status and food intake of North Koreans. Information was collected by individual closed in-depth interviews of 11 escapers from North Korea as well as books, newspapers and North Korean movies. Interviews were done from October, 1996 to May, 1997, covering their heights and weights, their appearance and disease, food system and intake of various main/side foods, concern about health and hygiene. North Korean's height and BMI were lower than those of South Koreans. Difference of BMIs between North and South Koreans was profound in middle aged women than in other age groups. Childrem showed many malnutrition appearances of moon face, large abdomem, arrow-like legs, flaky skin, decolored hair, etc.. Main foods in North Korea were rice-shaped corn, corn flour, wheat flour and wet noodle, and side foods were kimchi and/or soups and steamed soy paste. Food supply system there seemed not to work normally for many years, so foods, especially in cities, has been extremely short in government-operating shops, but some in private market. Many housewives were eager to make and sell simple snack food products, We noticed that North korea schools didn't check students' health even though their medical policy was based on preventive medicine. Their living environmental hygiene was shown to be oyt of control.

Comparisons of Students' and their Parents' Satisfaction of School Lunch Program in middle School by Foodservice Mangement

A study about the satisfaction of school lunch program was performed to 591 students and 541 parents in 5 middle schools by FS management system. The FS systems of the participating schools were 3 type of self-operating/traditional, self-operating/commissary and catering/delivery systems. Most joyful mealtime to students were identified as lunch because of eating with friends. Satiety after school lunch and leftover were different by FS system, such as adquate satiety greater in self-operating one and leftover food more in catering one than in the others. Foods tasted better in self-operating system than in catering one. The later was very poor for keeping soup hot and found more salty, more sweet and hotter than home meal. Students showed no difference in nutrition education but agreed greater to learning etiquette and to habit of various foods in self-operating system than in catering one. Students concluded they prefered school lunches to home-prepared lunches. Less work to prepare lunches home, better taste and nutrition, same meals to all students and nurition education were main reasons for parent to need school lunch program and they showed higher satisfaction of present school FS in self-operating system than in catering one. Parents claimed hygiene, taste, nutrition, nutrition education, food amount and service should be improved, especially in case of catering system and stressed on hygiene as the most important criteria for good school FS Management. They supported strongly school lunch program to coninue and prefered self-operating system than the others.
