Body Image Recognition and Dietary Behaviors of College Students According to the Body Mass Index

This study was performed to investigate the body image perception by BMI and the dietary behaviors in 803 college students (408 males and 395 females). The degree of obesity was divided into an underweight group with BMI less than 18.5 kg/m(2), a normal group with BMI of 18.5~22.9 kg/m(2), an overweight group with BMI of 23~24.9 kg/m(2) and an obese group with BMI over 25.0 kg/m(2). The average ages of subjects were 22.9 years in males and 20.2 years in females. The average weight and height of male subjects were 175.3 cm and 69.6 kg, respectively and those of female subjects were 162.5 cm and 52.0 kg, respectively. The average BMIs of male and female subjects were 22.6 kg/m(2) and 19.7 kg/m(2), respectively. The distribution of subjects who perceived their current body image as ideal body image was 25.7% in males and 10.9% in females, showing that the body image satisfaction of male subjects was 1.5 times higher than that of female subjects. Body image perception for their own bodies was mostly shown as the average or standard shape both in males and females with 64.2% and 54.2%, respectively, but males showed a higher perception rate than females and 31.1% of females and 19.5% of males perceived their bodies as lean shape (p < 0.01). The body image satisfaction was 4.20 in males and 3.70 in females, showing more satisfaction in the male subjects (p < 0.001). The correlation between body image and physical variables in male subjects indicated that CBI and IBI showed statistically significant correlation and also BMI showed statistically significant correlation with IBI (p < 0.001) and CBI (p < 0.001). The frequency of eating out increased as the frequency of skipping meals increased (p<0.001) and the frequency of having snacks increased as the frequency of eating out increased (p < 0.01). The correlation between body image and physical variables in female subjects showed that CBI and IBI (p < 0.001) had statistically significant correlation. Body weight showed statistically significant correlation with CBI (p < 0.001), BMI (p < 0.001) and height (p < 0.001). The frequency of eating out increased as height (p < 0.01) and the frequency of skipping meals (p < 0.001) increased. When both male and female subjects wanted leaner body shapes, they preferred much leaner shapes despite their current body images belonging in the normal range. Additionally subjects preferred the body image in the normal range in cases when their current body images were lean. In particular, more female subjects had strong desires to become leaner in their body images than male subjects, which could be analyzed as a risk factor for physical harm. From the above results, it is considered that both male and female subjects need to establish proper recognition and dietary behaviors for their body images and also need nutritional education and counseling for desirable weight control methods.

Dietary Life and Eating-Out Style Related to Breakfast Frequency of Male Students in Culinary College

This study was to investigate dietary life and eating-out style related to breakfast frequency of male students in culinary college. This survey was conducted using questionnaires for 110 male students at college in Hongseung. Mean height and body weight of those we investigated was 174 cm and 70.5 kg. The one to two times per week breakfast eating group was 34.55%, which is exceedingly numerous; none per week breakfast eating group was 30%; three to four times per week breakfast eating group was 15.45%; everyday breakfast eating group was only 9.09%. The breakfast frequency was very low, and the not-eating breakfast problem is serious to think of in male college students. Mean weight, body fat and body mass index (BMI) of the everyday breakfast eating group was lower than the other group even it was not significant. The self-boarding house or dormitory living condition group was not eating breakfast was significant. So a correct dietary life and eating habit should be taught further for male college students. The smoking group was a significant low frequency of breakfast eating, as well as the lower frequency of breakfast, or worse recognition of self health condition. Higher frequency of breakfast showed more contentment of self body weight. Cooked rice was significantly the most preferable for breakfast. The lower breakfast frequency tended to eat breads or cereals. The lower frequency of breakfast, self recognition of eating rate as speedier was significant, and tended to have a higher frequency of eating-out because of being annoyed by cooking. The lower breakfast frequency ate out more. Twenty five percent of the everyday breakfast eating group ate out because of a special day, and thirty five percent of the not eating breakfast group did so because of being annoyed by cooking. Their mean dietary evaluation grade was under the normal grade, which means that culinary college male students?dietary lives were poor. The lower frequency of breakfast and lower grade of food life evaluation, indicates the importance of nutritional breakfasts education should be improved for male culinary college students also.

The Analysis of the Dietary Factors Related to Climacteric Symptoms in Middle-aged Women

The purpose of this study was to investigate the dietary intakes in middle-aged women (pre and postmenopausal) and relation to climacteric symptoms. We conducted the anthropometric measurements, climacteric symptoms survey, and dietary intake to assess the nutrient intakes. Also, dietary quality indices were evaluated. The subjects, over 40 years old, were 168 middle aged women ( pre = 74, postmenopausal = 94), mean age was 48.9 +/- 3.6yr. The anthropometric measurements showed that 59% of subjects were overweight and obese. Climacteric symptoms that were answered "yes" in 50% plus in the subjects, were dry eyes, forgetfulness, difficult concentration, large joint pain (shoulder), fatique, backache, dry skin, joint pain (ankle and knee), dry mouth, dizziness, depression and lonesomeness, snore, morning stiffness, and hot flash. Some symptoms showed significant difference between pre and postmenopausal groups. The average energy intake was 1602.1 Kcal, which was 82% of the Korean EER. The subjects had lower vitamin A, riboflavin, folic acid, Fe, Zn and Ca intake than Korean RI. The lowest nutrient intake was Ca. The mean of food intake was 1294.2 g and MAR of diet quality indices was 0.83. In relation to dietary factors with climacteric symptoms, significant correlations have been found between total protein, animal protein, lipid, cholesterol and niacin intake and "fatique", energy, carbohydrate, thiamin, vitamin B6, folic acid, vitamin C, Na, K and Fe intake and "dry skin", Ca intake and "difficult concentration". Our results indicate that dietary factors (food and nutrients intake, INQ, NAR, MAR) may effect the prevention and reduction of some climacteric symptoms in middle aged women.

Comparison of Food Intakes and Serum Lipid Levels in Overweight and Obese Women by Body Mass Index

This study was done to investigate the health-related habits, dietary intakes and serum lipid levels in overweight and obese women by body mass index (BMI). Subjects were 137 pre-menopausal women aged 19 to 49 years. They were divided by 3 groups, overweight (23 < or = BMI < 25), obese (25 < or = BMI < 30) and morbidly obese (BMI > or = 30) according to their BMI. Body composition was determined by bioelectrical impedance analysis (BIA) method. Dietary intakes were examined by 3-day record method and nutrient intakes were analyzed by the Computer Aided Nutritional analysis program for professionals (CAN-pro 3.1). Serum lipid levels were measured using automatic biochemical analyzer (Selectra E). The average age, height, weight, and BMI of subjects were 31.7 years old, 159.3 cm, 69.4 kg, and 27.4 kg/m(2), respectively. Their average consumption of energy were 12 kcal and 86.4% of estimated energy requirement (EER). Their mean ratio of carbohydrate : protein : fat was 55.2 : 14.6 : 30.2. Particularly, the fat consumption of subjects tended to be elevated with increasing BMI. There was no significant difference in nutrient intakes among 3 groups. But the mean intakes of Ca, Fe, vitamin C and Na of all the subjects were 70.1%, 87.2%, 75.7% of recommended intake (RI) and 258.9% of adequate intake (AI), respectively. The intakes of vegetables and seaweeds were significantly higher in morbidly obese group while the intake of fruits was higher in overweight group compared to the other groups. Serum lipid analysis showed that there were no significant differences in the levels of total cholesterol, triglyceride and LDL-cholesterol among the groups. But the serum HDL-cholesterol level of the overweight group was significantly higher than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the morbidly obese group compared to the other groups. In addition, The systolic blood pressure of morbidly obese group was significantly higher compared to the other groups. Overall data suggest that morbidly obese women have to more concern about reducing systolic blood pressure and serum lipid levels by decreasing their fat consumption and salt intakes as well as loosing body fat. In addition, all the subjects participated in this study have to be careful about their meals and health-related behaviors in order to prevent obesity-related chronic diseases.

The Health Status and Nutrient Intakes of Elderly Female in Daegu Area

This study was designed to evaluate health and nutritional status of elderly females according to their family type. The participants were 157 elderly women (41 living alone, 45 living with a spouse, and 71 living with family). Among them, the subjects answered that their health rated as good condition, the elderly living with a spouse had significantly higher proportions than those living alone and living with family. Serum cholesterol and fasting blood glucose of the respondents living with a spouse were lower than those of the respondents living alone or with family. A dietary assessment with a 24-hour recall method represented that the elderly living alone had lower nutrient intakes, especially the intake of Ca. Most of women living alone or with family were consuming less than 75% of the Korean Recommended Dietary Allowances (RDA). For the females living with a spouse, the number of nutrients consumed below 75% of the Korean RDA were significantly lower than that for those living alone and the elderly living with family. As a result of the above analysis, the health and nutritional statement of old women with a spouse was better than that of the old living alone or with family.

Seasonal Nutrient Intakes of Elderly Women Living Alone as Compared to Those Living with Family in the Gyeongbuk Rural Area

For the rapidly growing elderly population, the achievement and maintenance of good nutritional status is critical to health, functioning and quality of life. Elderly women living alone have been identified as a group associated with poor nutrition. The purpose of this study was to assess dietary intakes of elderly women living alone as compared to those of elderly women living with family in a rural area and to examine seasonal variation. The subjects are 49 elderly women living alone and 41 elderly women living with family who reside in Goryeong-gun, Gyeongbuk, and their food intakes were assessed once each time in summer 2005, winter 2005-2006, and spring 2006. The average ages were 74.7 years for living alone and 72.8 years for living with family. Education level was not different between the two groups. Height, weight, body mass index, systolic and diastolic blood pressures, and fasting blood glucose were not significantly different between the two groups. Average intakes of major nutrients, nutrient adequacy ratio, mean adequacy ratio and index of nutritional quality were lower in the elderly women living alone compared with the elderly women living with family in summer, but the differences in intakes of most nutrients became insignificant both in winter and in spring. High carbohydrate and low fat diet was prevalent and intakes of carbohydrate and fat in summer deviated from macronutrient acceptable distribution ranges. Percentages of the subjects who consumed energy less than 75% of the estimated energy requirement and nutrients less than the estimated average requirement were higher than those reported by the Third National Health and Nutrition Examination Survey. In summer, the percentage of the subjects who consumed energy less than both 75% of the estimated energy requirement and 4 nutrients less than estimated average requirements was 58.5% of the elderly women living alone, which was higher than 26.5% of the elderly women living with family and that of National Nutrition Survey. Therefore, nutrition policies including nutrition education and support are necessary to improve nutritional status of elderly, especially elderly women living alone and should reflect regional and seasonal characteristics.

Effects of Nutrition Counseling on Quality of Diet, Iron Status and Hematic Parameters in College Women Who Have Self-Recognized Anemic Symptoms

Iron deficiency is the most common nutritional problem that affects people of all ages in both industrialized and developing countries. Especially, college women are the target population for dietary iron deficiency. Recent study showed that the nutritional status of college women was poor because of insufficient food consumption and repeatabled weight reduction. The purpose of this study was to investigate the effects of nutrition counseling on the diet quality, nutritional status of iron and hematic parameters in college women who have self-recognized anemic symptoms. Anthropometric and dietary assessments as well as blood analysis, were carried out before and after the 8 weeks of nutrition counseling. During the experimental period, the 31 subjects were given nutrition education by a clinical dietitian. Nutrition counseling consisted of pathology of anemia, nutrition information for iron deficient anemia, diet information of balanced meals and menu choices for eating out. As a result, the frequencies of consumption of legumen and vegetables significantly increased after nutrition counseling (p < 0.05). Daily intakes of protein, especially animal protein, vitamin E, niacin, heme iron, and zinc significantly increased (p < 0.05). After nutrition counseling, some self-reported clinical symptoms such as 'dizziness', 'fatigue', 'short of breath', 'headache', 'sleeplessness', and 'beating heart' were significantly improved. Serum levels of transferrin (p < 0.01) and total iron binding capacity levels (p < 0.05) significantly increased. It could be concluded that the 8 weeks of nutrition counseling might be effective on quality of diet as well as iron status and it might also improve the some hematic parameters in college women who have self-recognized anemic symptoms.

Effect of Nutritional Education and Exercise Intervention on Reducing and Maintaining Weight in Obese Women

This study was performed to investigate the effectiveness of nutritional education and exercise intervention on reduction and maintenance of weight. The subjects were 24 obese women whose body mass index (BMI) was over 25 kg/m(2). Nutritional education was performed once a week and swimming was done three times a week throughout this 12 week program. The subjects were recalled 1 month after the program was complete. Nutrient intakes were assessed by 24 hour recall method. Also food habits, dietary behaviors and nutritional knowledge were investigated by self-administered questionnaires before and after the weight control program and one month after completing the program. Height, weight, body composition and blood levels were measured before and after the weight control program and one month after completing the program. During the 12 weeks of the weight control program, body weight significantly decreased from an average of 69.7 kg to 65.8 kg and to 65.1kg after one month (p < 0.05). Body fat and BMI also significantly decreased (p < 0.01). Cholesterol and blood sugar levels decreased after 12 weeks and increased one month after completing the program. After taking nutritional education, the nutritional knowledge scores increased. Calcium intake significantly increased after completing the education and one month after completing the program (p < 0.01). Iron intake significantly decreased from an average of 12.1 g to 11.3 g after completing the program and increased to 15.5 g one month after completing the progrom (p < 0.001). We concluded that our nutritional education and exercise program was effective for reducing and maintaining weight.

Amounts and Food Sources of Nutrients of Elementary School Lunch Menus by the Type of Foodservice and the Percent Energy from Fat

This study was conducted to assess macro- and micronutrient compositions in school lunch menus based on the 'Dietary Guideline' for School Lunches. Ninety-five dieticians in elementary school in Chungbuk were asked to complete a questionnaire on characteristics of the school lunch program (such as type of foodservice, food production system), the information about dietitians (such as age, education, and job history), and the extent of the use of processed foods and frozen foods. They were asked to return the questionnaire with the menus including the name and the quantity of every food ingredient offered during a week. A total of 554 lunch menus provided for a week of June 2004 were analyzed. Average nutrient content per meal was as follows; 660 kcal, energy; 92.9 g, carbohydrate; 26.7 g, protein; 21.1 g, fat; 287 microgramRE, vitamin A; 0.5 mg, thiamin; 0.5 mg, riboflavin; 29.3 mg, vitamin C; 338.2 mg, calcium; 3.9 mg, iron; and 97 mg, cholesterol. Average percentages of energy from carbohydrate, protein and fat was 56.2%, 16.2%, and 29.0%, respectively. The mean nutrient content per meal was higher in rural-type than in urban-type schools. The weekly menu of 40% of the schools provided < 55% of energy from carbohydrate, and 39% of the schools offered lunch that provided > or =30% of energy from fat. The micronutrient content was generally high when the percent energy from fat was less than 25%. Our results showed that only 52.6% of the schools provided lunches with the energy composition as in the 'Dietary Guideline' of School Lunches. Whole Milk was the major contributor to fat, saturated fatty acid and cholesterol. We suggest that school foodservices start to provide low fat milk instead of whole milk to reduce fat, saturated fatty acid and cholesterol. If low fat milk is served instead of whole milk, percentage of energy from fat and saturated fat can be reduced from 29% to 25%, and from 10.2% to 9.1%, respectively, and cholesterol could be reduced from 97 mg to 79 mg. Efforts to meet 'Dietary Guideline' for School Lunches should be made, especially to reduce fat intake, while maintaining essential nutrient intake at sufficient levels for children.

Analysis of Menu Patterns of Noodle Meals in the School Foodservices in Busan and Gyeongnam Province

The purpose of this study was to classify noodle meals into a few groups according to their menu patterns and cooking methods from the 318 noodles and Ttokgook menus of 360 elementary school foodservices around Busan and Gyeongnam province. Noodle meals with high frequency were also analyzed by season and region to give information for menu planning and to improve elementary school foodservices. The menus were collected from the internet (http://www.kdclub.com) and the home pages of elementary schools between December 2004 and September 2005. Taking all kinds of noodle meals together, the serving frequencies were significantly different among regions, but were not different from season to season. Three different menu patterns were revealed from the collected noodle menus. The most frequently served menu pattern was "main dish + starchy food & dessert + fruit & beverage + kimchi" Gooksu, Ttokgook, Udong, and Kalgooksu meals were served with this menu pattern. The menu pattern of Jajangmeon meal was "main dish + side-dish + starchy food & dessert + fruit & beverage + (kimchi)" . For the Bibimmeon and the spaghetti meals "main dish + soup + starchy food & dessert + fruit & beverage + kimchi" was used. Ttigim, Danmugy, Saengchae, and chicken were frequently selected as side dishes in the overall noodle menus. More side dishes of a wide variety were served in Ttokgook meal, whereas Danmugy was the most preferred food item as a side dish with Jajangmeon and Udong meals. Corndog, Mandu, Ttok, Matang, and doughnut were preferred food items as a "starchy food & dessert" with most kinds of noodle meals, except spaghetti with which only garlic-bread was served. The fruit and beverage items were not different with the majority of noodle meals. These results suggest that cost, food habits, compatible flavor combinations, and food preference of children rather than nutritional considerations contributed to the selection of food items for the components of noodle meals in the school foodservices.
