Evaluation of Diet Quality of Children and Adolescents Based on Nutrient and Food Group Intake and Diet Quality Index-International (DQI-I)

It is suggested that evaluation of diet quality may be a great indicator of nutritional assessment. The aim of this study was to evaluate the diet quality of children and adolescents based on nutrient and food group intake and Diet Quality Index-International (DQI-I). This survey was conducted through questionnaires and diet record survey to 477 students (elementary school students; n = 131, middle school students; n = 136, and high school students; n = 210). The results showed that high school students were significantly more often to skip breakfast compared with the other groups. The middle and high school students consumed significantly higher intakes of food and energy compared to the elementary school students. Also the number of nutrients in Index of Nutritional Quality (INQ) < 1.0 of high school students were significantly higher than that of elementary and middle school students. The Korean's dietary diversity score (KDDS) of elementary school, middle school and high school students were 4.1, 4.4 and 4.3 respectively. The average DQI-I of elementary school, middle school and high school students were 66.7, 65.5, and 63.7, respectively and there was significant difference. Also, middle school students showed to have higher score in variety and adequacy category compared with the other groups, and elementary school students appeared to have higher score in moderation category. In conclusion, high school students appeared to have unhealthy dietary habits in terms of high frequency of skipping breakfast and lower INQ and DQI-I score compared to the elementary school and middle school students. Therefore, the proper dietary management should be needed for high school students.

Nutrient Intakes and Blood Lipids According to Obesity Degree by Body Fat Percentage among Middle-Aged Women in Gunsan City

The purpose of this study was to compare nutrient intakes and blood lipids of middle-aged women according to the obesity index by %Fat. Subjects were assigned to one of the following groups based on percentage of body fat (%Fat): normal weight (18% ~ < 28%), overweight (28% ~ < 33%) and obesity (over 33%). Nutrient intakes were evaluated based on questionnaires of 24 hours recall method and blood lipids were analyzed by blood analyzer. The results were as follows. 1) Nutrient intakes were that carbohydrates and fat intakes in obesity group were higher than normal and overweight group but the difference was not significant, and protein intake rate was similar all groups. The intake rate of calcium was higher in normal group than obesity group (p < 0.05), and obesity group ingested under dietary reference intakes. The intake rate of iron was higher in obesity group than normal group (p < 0.05). 2) TG, TC, VLDL and TC/HDL in obesity group were higher than normal group (p < 0.001). The attack rate of coronary heart disease in obesity group is higher than normal group (p < 0.01), LDL, blood glucose and blood pressure in obesity group were higher than normal group (p < 0.01), and HDL was a little higher in normal group than obesity group, but the difference was not significant. 3) The correlation of anthropometric measurements, blood glucose, blood lipid, and blood pressure had significant results. Weight was associated positive level with blood glucose, blood lipid and blood pressure. Waist and WHR were associated positive level with blood glucose and blood lipid but weren't associated with blood pressure. BMI was associated positive level with blood glucose, blood lipid and blood pressure, %Fat was associated positive level with blood lipid and blood pressure, but wasn't associated with blood glucose. These results suggest that the decrease of waist on blood glucose control is better than decrease of % Fat and BMI, the decrease of %Fat and BMI on blood pressure control is better than decrease of waist, and the decrease of %Fat on blood lipid control is better than waist and BMI. The nutritional education for obesity treatment must perform to analyze the blood and assess the obesity degree by %Fat, waist and BMI before nutritional education, so the obesity treatment will be effectively.

Association of Serum Lipids and Dietary Intakes with Serum Adiponectin Level in Overweight and Obese Korean Women

This study was done to investigate the association of blood clinical parameters and dietary intakes with serum adiponectin level. Athropometric measurement, dietary intakes, serum lipids and adiponectin levels were examined in 160 overweight and obese women. The subjects were divided into 5 groups by quintile according to serum adiponectin level. Weight, BMI, waist circumferences and waist/hip ratio of the highest quintile group were significantly lower than those of the lowest quintile group. Serum lipid analysis showed a significant higher level of TG, LDL-cholesterol, LDL/HDL ratio, AI, and serum hs-CRP in the lowest quintile group. Similarly, correlation data also showed that serum adiponectin level was positively correlated with serum HDL-cholesterol level (p < 0.01) and was negatively correlated with BMI (p < 0.01), waist circumferences (p < 0.01), waist/hip ratio (p < 0.01), systolic (p < 0.01) and diastolic blood pressure (p < 0.05), TG (p < 0.01), LDL-cholesterol (p < 0.05), LDL/HDL ratio (p < 0.05), AI (p < 0.01), Homa-IR (p < 0.01), hs-CRP (p < 0.05) and leptin (p < 0.05). Dietary intake data showed that protein intake was significantly lower in the highest quintile group compared to the lower quintile groups while intakes of vitamin C was significantly higher in highest quintile group after adjustment by BMI, waist and energy intake, In addition, the highest quintile group had higher fiber intakes than the lower quintile groups. These results might suggest that a diet high in fiber and vitamin C and low in protein for obese patients would better be recommended to improve adiponectin level. However, further research is needed to elucidate the association of dietary intakes or dietary patterns and serum adiponectin level.

Development of an Educational Web Site and e-Learning System for Elementary School Students to Reduce Sugar, Natrium and Fat Intakes

This study was carried out to reduce children's sugar, natrium and fat intakes and establish their healthy lifestyle. To achieve these goals, we developed an educational web site and an e-learning system. The targets of this web site are children, parents and educators. This site has various information about sugar, natrium and fat, and has special menus for each target: such as the 'Let's study' for children, 'Guides for child's eating' for parents, and 'Educational softwares, Lesson plans/materials, and Textbooks/Teaching guides' for educators. We developed three nutrient characters and applied them to the web site. We provided information in the form of texts, images, flash and sounds. This site has special boards in 'Nutrition cafe' menu to interchange information or their successful stories between the connecters. We developed an e-learning system with two courses. One is for junior elementary students and the other is for senior students. Children can study each nutrient step by step in a course according to their academic ability and concern. Also, they can evaluate their academic achievement in this system, which was uploaded into 'Let's study' in children menu in the web site. Conclusively this web site and e-learning system could contribute to reducing children's sugar, natrium and fat intakes by helping children study them systematically and effectively by on-line system. We expect this e-learning system would be a new nutrition education system to make nutrition education more active.

The Effect of Nutrition Education Using Animations on the Nutrition Knowledge, Eating Habits and Food Preferences of Elementary School Students

The purpose of this study was to conduct nutrition education using animations for the establishment of proper eating habits among elementary school students and to evaluate its effectiveness. The subjects of this study were two classes of fourth grade students in an elementary school located in Daegu-city. There were 29 students in each class. One class, the "nutrition-education" group, received nutrition education; the other class, the "no-education" group, did not receive the education. After completing the eight nutrition lessons, the effectiveness of the education was analyzed by measuring changes in the nutrition knowledge, eating habits and food preferences of the nutrition-education group vs. the no-education group. Before nutrition education, there was no significant difference between the two groups in terms of nutrition knowledge. However, after the nutrition education, the nutrition-education group's nutrition knowledge was significantly improved, compared to that of the no-education group (p < 0.001). Following education, the nutrition-education group's responses to the "eating habit" item, "I eat fruits every day," were significantly more positive, compared to the responses of the no-education group (p < 0.01). However, for the ten food groups listed as food preferences, except for fish and shellfish (p < 0.05), there was no significant difference in the responses of the two groups. Following the education, the nutrition-education group showed significantly increased preferences for 12 food items (red beans, mackerels, yellow corvinas, dried laver, kelps, radish, lettuce, pears, kiwi fruits, plums, grapes and sweet drinks made from fermented rice) out of 112 items, compared to the selected preferences of the no-education group. After education, 75.9% of the students in the nutrition-education group indicated changes in their eating habits, and 89.6% of them answered that the nutrition education helped them change their eating habits. The most helpful medium for changing their eating habits was animations (31.0%), followed by songs (20.7%) and lectures (17.2%). As a result of this study, after completing the nutrition education, students in the nutrition-education group showed significant changes in food preferences, and their level of nutrition knowledge was significantly increased. However, their eating habits did not actively change. Therefore, in order to establish proper eating habits, a longer period of consistent education is required, using various educational media and learning methods such as extracurricular activities and discretionary activity programs.

Changes of Obesity Index, Serum Lipid Profiles and Nutrient Intakes in Obese Children after the Weight Control Program of Nutrition Education

The purpose of this study was to evaluate the effect of a weight control program on anthropometric values, serum lipid profiles and nutrient intakes. The subjects of this study were 38 obese children (boy : 17, girl : 21) with obesity index over 120%. The weight control program for obese children included nutritional education (50 min) and exercise (50 min) for 10 weeks. The nutrition intakes of the children were surveyed before and after the weight control program by 24hr recall test. The BMI, Rohrer Index, Obesity Index, WHR (Waist - Hip ratio) and body fat(%) were significantly decreased after completion of the weight control program. The total cholesterol and HDL-cholesterol of subjects were significantly increased after the weight control program. Distribution of serum lipid profiles was slightly changed. The energy intakes were significantly decreased (p < 0.001). from 1760.8 kcal to 1435.2 kcal. In addition, the intakes of P, Zn, retinol, vitamin B1, vitamin B2, vitamin E and niacin were significantly decreased. while intakes of vitamin C and folate were increased. Calcium and folic acid were upper 25% of subjects, under EAR(Estimated Average Requirements) intake before the weight control program. The distribution of energy intakes was significantly changed into positive status; fat percentage was decreased 26.3% to 22.1% (p < 0.01). Carbohydrate was increased 58.6% to 61.2% (p < 0.05). Meal distribution of energy intakes was changed; calorie percentage from lunch significantly increased from 32.2% to 38.3%. Calorie percentage from snack significantly decreased from 17.7% to 13.5%. In conclusion, weight control program for 10 weeks is effective in obesity index and nutrient intakes although serum lipid values were a little changed.

Effects of the 12 Weeks Weight Control Program on Improvement of BMI, Nutrition Knowledge, Physical Fitness and Stress Levels of Adult Obese Women

This study was conducted to investigate the effects of a weight control programs on BMI, nutrition knowledge, physical fitness and stress level of adult obese women. The subjects of this study were 36 adult obese women aged 30-65 years whose BMI were above 23 kg/m2. The weight control program for obese women included nutritional education, exercise and cognitive behavioral therapy for 12 weeks. The BMI of the subjects was significantly decreased (p < 0.001) from 27.1 kg/m2 to 26.4 kg/m2 after the 12 weeks of the weight control program. In addition, the weight of body fat was significantly decreased (p < 0.001) and % body fat was significantly decreased (p < 0.05) from 35.4% to 34.9% after completion of the weight control program. In addition, nutritional knowledge (p < 0.001) and eating behavior scores (p < 0.01) were significantly increased. However, the food intake scores were not changed after the program. Stress levels of the adult obese women were significantly decreased (p < 0.001) from 85.63 to 66.88 and also obesity stress levels were significantly decreased (p < 0.01) after the weight control program. In the physical fitness levels of the subjects, muscle endurance (p < 0.05) and ability of balance (p < 0.01) were significantly improved after completion of the weight control program. There were positive significant correlations between general stress and obesity stress level (p < 0.05), and negative correlations between stress level and food intake score (p < 0.05). These results showed that the weight control program for adult obese women may be effectively used to improve weight reduction, physical fitness and stress levels.

A Study on the Consumer Perception and Factor Analysis of Food Tourism

The purpose of this study is to investigate consumer perception and importance of food tourism properties and performance of the properties in Sangju province of Gyeongsangbuk-do. The study has found that persons who have food tourism experiences (75 persons, 50.7%) had slightly more than not experience persons (72 persons, 48.6%). Additionally, most of the respondents were usually satisfied with the local foods. Also, it was found that food tourism had been taken 1-2 times per 6 months (48 persons, 64.0%) on average, and 135 persons (91.2%) had intention of experiencing food tourism. According to the result of Importance-Performance Analysis (IPA) on consumers' food tourism properties, high importance was on 'There are attractive landscapes.' (4.52 +/- 0.56), 'Accommodations with reasonable price.' (4.18 +/- 0.80), and 'The food of the area is famous.' (4.15 +/- 0.73); and the properties such as 'There are local specialty shops or markets selling local produce.' (3.03 +/- 0.83), 'The climate is temperate.' (3.03 +/- 0.87), and 'There are attractive landscapes.' (3.02 +/- 0.98) showed average performance. A factor analysis about consumers' importances to the food tourism properties shows that the factors were divided into four kinds and each of the factors were named as 'convenience-stable propensity', 'valued-oriented propensity', 'adventurous-aggressive propensity' and 'traditional-active propensity'. Variance ratios of each factor were 22.319%, 10.286%, 8.723% and 6.239%, respectively. According to the result of a reliability analysis, Cronbach's alpha value was 0.8621, implying that reliability of each item was very high. Therefore, it is considered that development of food tourism products and promotion strategies therefore should be designed based on the importance of food tourism properties hereafter.

The Interrelations among Nutrition Education, Satisfaction with School Lunch, School Lunch Leftovers and Self-rated Mental or Physical Health: The Elementary School Children in Daejeon Area

The purpose of this study was to examine the interrelations among current status of nutrition education, satisfaction with school lunch, school lunch leftovers and self-rated mental or physical health in order to find out the effective method of nutrition education. For this, a questionnaire survey of 623 primary school 5th and 6th-graders in Daejeon area was carried out. The eating places were classrooms (41.1%) and restaurants (58.9%). A 59.2% of students have received nutrition education and the opportunity of receiving nutrition education was more in 5th-graders than in 6th-graders (p < 0.001). The score of nutrition knowledge was 9.4 +/- 2.8 out of 15. When the score of nutrition knowledge was higher, the practical use of nutrition knowledge was higher (r = 0.134, p < 0.01); the score of school lunch leftovers were less (r = -0.116, p < 0.01); and the score of self-rated mental health was more positive (r = 0.198, p < 0.01). The practical use of nutrition knowledge was 2.9 +/- 1.1 out of 5. When the practical use of nutrition knowledge was higher, satisfaction with school lunch was higher (r = 0.105, p < 0.01); school lunch leftovers were less (r = -0.103, p < 0.01); the score of self-rated positive mental health was higher (r = 0.293, p < 0.01); and the scores of self-rated negative mental health (r = -0.119, p < 0.05) and physical health (r = -0.126, p < 0.01) were lower, thus rating their health more positively. The score of satisfaction with school lunch was 3.4 +/- 1.0 out of 5. When the satisfaction with school lunch was higher, the score of school lunch leftovers was less (r = -0.216, p < 0.01); the score of self-rated positive mental health was higher (r = 0.147, p < 0.01); and the score of self-rated negative health was lower (r = -0.121, p < 0.01). The score of school lunch leftovers was 2.9 +/- 1.4 out of 5. When the school lunch leftovers were less, self-rated positive mental health was significantly higher (r = -0.146, p < 0.01); and the scores of self-rated negative mental health (r = 0.135, p < 0.01) and physical health (r = 0.223, p < 0.01) were significantly lower, thus presenting positive health. Therefore, in order to maintain positive health condition, it is necessary to carry out nutrition education, which is able to raise the nutrition knowledge and practical use of nutrition knowledge, school lunch satisfaction and to reduce the school lunch leftovers.

School Food Service Satisfaction and Menu Preferences of High School Students: Focused on Iksan, Cheonbuk

The purpose of this study was to investigate school food service satisfaction and menu preferences of high school students in Iksan, Cheonbuk area. Self-administered questionnaires were completed by 692 high school students. Data was analyzed by SPSS 11.5 statistical software. Significant differences between genders were tested by the chi-square-test or t-test. The mean satisfaction score with school food service were 2.8 points out of 5 points. The satisfaction scores for menu (2.8 points) and food temperature (3.1 points) were low, but satisfaction with hygiene and facilities (2.7 points) and service (2.6 points) were lowest. The reason that high school students left food was 'the food taste is not good' (65.3%). The school food service areas needing improvement according to the subjects were food taste (39.3%), hygiene (24.3%). The mean score for menu preference was 3.7 points. The highest menu preference menu for the rice category was stir-fried rice (bokeumbap), for the soup was meat soup, for the kimchi was Korean cabbage kimchi. Based on the results we made the following suggestions: To increase the satisfaction with school food service, changes in the school food service policies are needed at the government and school levels. Efforts should be made to improve the taste of school food. The school food service menu should be improved by taking into account the preferences of the users. There is also a need for the development of nutrition programs like nutrition consulting linking students and family, and nutrition camps that will encourage correct dietary habits.

Task Analysis and Education Need of Dietitians in the Contracted Business & Industry Foodservice

The purposes of this study were to investigate importance level and performance frequency of the dietitians' duties and task elements, to examine the actual condition of education and need for education, to analyze the interrelation between their tasks and education, and to provide the direction of education for the contracted Business & Industry (B & I) foodservice dietitians. The task elements of receiving, ordering, HACCP management and directing serving process were done almost every day. In terms of the importance of tasks, food sanitation management, personnel sanitation management, receiving and ordering were high. Meanwhile, the computerization of their works was being carried out on the whole, showing a higher frequency in all the details of procurement management and accounting management, as well as task elements such as menu planning, leftover and food waste management, HACCP management and human resource management. In the past three years, HACCP management, cost management, planning work schedule and allotting a task, general business and sale bond management were increased most and rapidly. For the actual condition of education, dietitians got more education for the duty of sanitation, safe and facility/utility management than any other duty, while they did less education of procurement management and office management than others. Meanwhile, the education for sanitation, safe and facility/utility management and accounting management were very much required. For the relationships of frequency of duty and the necessity of education, seven task elements including food sanitation management were correlated positively. Eighteen tasks besides menu planning had a significant positive correlation between the importance of duties and the necessity of education.

A Study on Nutrition Knowledge, Dietary Attitudes and Nutrition Education Needs among Child-Care Teachers

This study was conducted on 175 child-care teachers, who participated in in-service education, to research the methods to improve child-care teacher's nutrition management capability for infants and children. Investigated results of child-care teachers' nutrition knowledge, dietary attitude status, and needs on nutrition education in child-care centers are as follows: The score of child-care teachers' nutrition knowledge was 10.83 points out of 15, which is about 72%. Total score increased as teachers' age but not significantly different from their career duration, since teachers who have a child-care career less than 5 years acquired 10.91 points, which is higher than 10.64 points of teachers having more than 5 years of child-care career. Teachers' average recognition to the nutrition knowledge was 90.6%, increased significantly by the older they are, and decreased according to the accumulation of their career. The average accuracy of the nutrition knowledge was 79.7%, increased in proportion to the teachers' age. The marks of child-care teachers' dietary attitude were 41.3 points (possible score range 5-50) and 83%, older teachers tended to have more desirable dietary attitude. As indicated by the increment of child-care career, the score of emotional attitude tended to be increased but which of cognitive and behavioral attitude showed a declining tendency. Nutrition information which child-care teachers were mainly interested in were correct selection of food (58.1%), obesity and weight management (52.7%), and nutrient content of food (44.9%). Nutrition education contents which child-care teachers needed were 'nutritious food and menu for child' (72.2%), 'health management of child' (69.2%) and meal management of child (40.2%). Nutrition education methods, which child-care teachers considered as of desirable ones, were cooking class of small scale (31.8%), visiting class at child-care center (26.5%). In consequence, the nutrition knowledge and dietary attitude of child-care teachers were not good and showed different issues by age and career duration. Therefore, it is requisite to intensify nutrition management courses in child-care teachers' qualification and in-service education courses which has actual necessity and suitability based on teachers' age, career, and the type of child-care center, and to disseminate these through public health centers and child-care & education information centers to pursue the efficient balance of nutrition education programs.
