Anthropometric and Nutrition Status of Institutional Children

This study was designed to investigate the malnutrition rate with anthropometric indices for the nutrient intake of 74 children aged 4-12 years old in three child welfare institutions in Cheonan city. The average heights and weights of the children are much lower than the Korean average height and weight. The mean BMI is 17.0+/-1.53. In terms of heighter-for-age, 16.0% of the samples beong to below -2 standard deviation from the mean of the reference group. In terms of weight-for-age, 16.0% of the children belong to below -2 standard deviation. In terms of weight-for-height, 4.0% of the children belong to below -2 standard deviation. The standard deviation scores(Wt/Age, Ht/Age) indicate negative signs for seventy to eighty percent of the children. This is due to the lower consumption of the important nutrients that children consumed and almost all nutrients much less than the recommended daily allowances. Special nutrition welfare policies and programs targetings child welfare institutions should be developed to provide adequate nutrition for children in residential care.

Effect of Nutrition Education Program on Body Fat and Blood Lipids of Obese Young Adolescent Girls

The purpose of this study was to evaluate the effect of a nutrition education program on 42 obese young adolescent girls. Nutrition education was performed for six months including both group and individual programs, and was focused on improving their eating habits and food composition. The topics discussed once a week included : eating habits, lifestyle management, 5 basic food groups, snack and fast-food, how to eliminate empty calories, fat and hyperlipidemia, food diary, benefits and methods of exercise, vitamin and minerals, evaluation of fad diets, yo-yo effects and so on. The effects of the nutrition education program were evaluated for nutrition education and exercise regimen group (NE+E), nutrition education only group(NE), and control group(C). NE+E group had additional exercise programs 3times each week, while NE group was educated about exercise only by a nutrition education program. In both NE+E and NE groups, there was a significant decrease in bodyfat compared to C group, but NE+E group had a greater change than NE group(5.5% vs 3.1%). In addition, serum triglycerides decreased about 40mg/dl and total cholesterol 20mg/dl in both NE+E and NE groups. But HDL-C level was increased only in NE+E group. The greater changes in body fat and blood lipid levels occurred between the pre- and mid terms fo the education regimen. They kept their changed measurement throughout the 6 months follow-up studies. The results of this study show that this nutrition education program is helpful for obese adolescent girls in decreasing body fat and serum lipid levels. Also, the combination of an exercise regimen with the nutrition education proved to be more effective.

An Analysis of Dietary Intakes and Plasma Biochemical Indices in Female College Students by Skin Types

This study was done to investigate the nutrient intakes and plasma biochemcial indices in 68 female college students according to their skin types. Nutrient intakes were investigated by quik estimation. The plasma TG and total cholesterol levels were measured by the Spotchem sp-4410. The plasma levels of retinol and alpha-tocopherol were measured by HPLC. In addition, the activities of antioxidant defense enzymes such as plasma glutathione peroxidase(GSH-Px) and glutathione reductase(GHS-Rd) were determined. All data were statistically analyzed by SAS PC package program. The results of this study were as follows : The average age, height, weight, BMI, systolic blood pressure and diastolic blood pressure ofthe subjects were 20.9+/-1.9yr, 160.7+/-4.3cm, 53.0+/-7.1kg, 20.5+/-2.4kg/m2, 105.3+/-11.5mmHg and 70.6+/-7.7mmHg, respectively. Ten students(14.7%) had normal skin type, 19 students(27.9%) had dry skin type, 11 students(16.2%) had oily skin type, 17 students(25.0%) had acne and 11 students(16.2%) had mixed skin type. The intakes of energy and fats in oily skin group were significantly higher(p<0.05) than those of the dry skin group, but vitamin C intake in the mixed skin group was significantly higher(p<0.05) than those of the dry skin group, but vitamin C intake in the mixed skin group was significantly lower(p<0.05) than that in other skin types. The intakes of other nutrients were not significantly different among skin types. The analysis of lipids showed that the plasma total-cholesterol level of mixed skin group was significantly lower(p<0.05) than that of the oily skin group, whereas other lipid levels were not significantly different. The other parameters such as retinol, alpha-tocopherol, GSH-Px and GSH-Rd of plasma were not significantly different among skin types. Overall results indicate that dietary intake pattern may influence skin type and thereby some blood biochemical indices can be different by skin types.

A Longitudinal Study of the Iron and Zinc Intakes of Korean Infants from 1 to 3 Months-Breast-Fed vs Formula-Fed Infants

This study was carried out to longitudinally investigate the iron and zinc intakes and correlation with growth performance of 25 male breast-and formula-fed infants from 1 to 3 months postpartum, longitudinally. There were four groups breast fed(BF) and three formula fed groups((FFM, FFN and FFP). Milk intakes and the concentration of iron and zinc from human milk and the formulas were measured. The iron content of human milk was 2.07+/-1.05(0.63~5.65) microgram/ml. The zinc content was 2.43+/-1.14(0.70~5.30) microgram/ml. Both were not significantly different among postpartum months. The average iron intake of the breast-fed and formula-fed infants was 1.6+/-0.7mg/day and 8.4+/-2.3mg/day, respectively. The iron intake of breast-fed infants was higher than previous reports. And that of formula-fed infants was higher than the RDA. The average zinc intake of the breast-fed group was 1.9+/-0.9mg/day and formula-fed infants' was 2.7+/-0.7mg/day, which was higher than the RDA. There was no correlation between these mineral intakes and the growth performance during 1 to 3 postpartyum months. So, extensive studies of the iron content of human milk and wide cross-sectional studies for establishing iron and zinc recommended dietary allowances for infants are needed.

Nutrient Intakes and Health-related Behaviors of the Elderly in Rural Area

A study about health status of the elderly in rural area was performed with 110 home-bound elderly. The results obtained by questionaires and personal interviews recall were as follows. 1) Subjects were 68.6 years of age on average. They revealed the physical tendency of not overweight but high blood pressure. 2) We found that seniors who live alone in rural area were more than in urban area. 3) Average daily intakes of energy and protein of rural elderly were lower than the Korean RDA and the intakes of Ca, riboflavin and niacin in female were also lower. 4) Nutrient intakes were related to family income, food expense, smoking amount, drinking frequency and duration of exercrse, which suggested the needs of nutrition education for the seniors and meal services especially for the low-income elderly.

Strategies to Improve Elderly Nutrition : Comparisons of Dietary Behavior according to the Mean Nutrient Adequacy Ratio

A deep understanding of the dietary patterns and nutrient intake is important for assessment of possilbe nutritional risk and for establishing nutrition improvement strategies. This study was conducted toexamine the dietary characteristics of a nutritionally poor elderly group compared to the middle-and highly-nourished group. Elderly participant was recruited from local elderly centers in Suwon city in 1998. Trained dietitians interviewed 119 elderly(35 males, 84 females) aged 60 years and over for collecting dietary data(24-hour recall) and related variables. Male and female subjects were grouped into high, middle, and low according to the mean nutrient adequancy ratio(MAR) tertiles. An analysisof the percentage of RDA(Recommended Daily Allowances of Korea) for each of the 10 nutrients showed that the male low-MAR group consumed below the RDA in all kinds of nutrients, and the female low-MAR group consumed nutrients below the RDA except vitamin C. An evaluation of nutrient density by Index of Nutritonal Quality(INQ) also showed a similar tendency. Thus, the INQ level of the male low-MAR group was significantly lower than the middle-or high-MAR group, especially in protein, vitamin A, thiamin, riboflavin, and phosphorus(p<0.05). Moreover, INQ level of female low-MAR group was significantly lower than that of the high group(p<0.05) in all nutrients. The female low-MAR group's daily food intake were also lower than those of the high-MARgroup in gains, fish, fruits, oil and beverages. The energy distribution from carbohydrates, fats and proteins showed that the male low-MAR group had significantly higher carbohydrate and lower fat proportions compared to each gender high-MAR group, respectively. The male and female low-MAR group had low scores about eating all side dishes. These findings indicate that a moderate increase of the meat/egg/fishes intake was needed by the male low-MAR group for improving nutrition adequacy, and an overall increase of the food quantity and quality was desired for the female low-MAR group. These data could be used for planning a community elderly nutrition program and establishing strategies for tailored guidelines for the individuals.

A Study on Blood Pressure and Serum Biochemical Indices of Cerebrovascular Accident Patients in Korean Urban Adults

This study was done to investigate the blood pressure, BMI and serum lipids of cerebrovascular accident patients in Seoul. The subjects were 195 Korean urban cerebrovascular accident patients who were hospitalized at Dong Seo Oriental Hospital in Seoul from June, 1997 to December, 1997. There were more cerebral infarction patients(164) than cerebral hemorrhage patients(31). Cerebral infraction patients were prevalent for subjects in their sixties, but cerebral hemorrhage patients were most commonly in their fifties. The BMI of cerebral infarction accidents was significantly higher than that of cerebral hemorrhage patients(p<0.05). Mean diastolic blood pressure of cerebral hemorrhage patients was significantly higher than that of the cerebral infarction patients(p<0.05). The mean systolic blood pressure of the cerebral hemorrhage patients was higher than that of the cerebral infarction patients, not statistically significant. The serum total cholesterol and glucose levels of the cerebral infarction patients was significantly higher than those of the cerebral hemorrhage patients(p<0.05). Serum total cholesterol(p<0.01), triglyceride(p<0.05) and LDH(p<0.01) levels of female subjects were significantly higher than those of male subjects. Serum total cholesterol has a negative correlation with serum GOT and GPT, but has a positive correlation with triglyceride. Serum triglyceride has a negative correlation with diastolic blood pressure but has a positive compellation with serum glucose.

Dietary Living in North Korea according to the Defectors

We performed a study to understand the dietary situation in North Korea and to compare the difference between the North and the South. Two hundred North Korean defectors from the North since 1990 participated in this survey. Information was collected from December, 1997 to February, 1998 by mailing pre-tested questionnaires, which had been confirmed by 10 previous interviewers. The final data from 157 defectors(107 male and 33 female with 17 unidentified gender) were analyzed. We found that (1) North Koreans are lowr in height, weight and BMI than South Koreans, (2) The North Korean diet is very simple and monotonous. It is limite to their local and unprocessed foodsand dishes, which is far from the trend of globalization and readiness. (3) On the other hand, in the North, the government control on foods diminished because food shortage leads to free market activity where housewives manage their own foodservices, and to accelate their eating-out behaviors. (4) Profound differences between the South and the North in dietary life are noticed by the defectors as English words and Korean words. Efforts to understand and learn about each other is necessay before not too late.

A Study on the School Lunch Program Served by the Elementary Schools in Muan: An Analysis of Nutrients and Diversity of Menu

This study evaluated the quality of meals served by the elementary schools in Muan based on nutrient contents and food diversity. The contents, nutrient densities and nutrient adequacy ratios(NAR) of most nutrients were higher than those calculated from the Korean RDA. However, the content, nutrient density, and NAR of iron were lower than those calculated from the RDA for 10 to 12 year old girls. The content of sodium was somewhat high. The average number of different kinds of food and dishes per meal were 19.2 and 6.0, respectively. The more the number of dishes, the higher the NARs of calcium, calories, niacin, phosphorus and protein. However, the NAR of iron showed no correlation with the number of dishes. The meals belonging to the food group intake pattern containing fruits had more vitamin C and fiber, and less protein, lipid, and phosphorus than those belonging to the food group intake pattern not containing fruits. In conclusion, the quality of nutrition of meals served by school lunch program(SLP) was considered fairly good. However, the nutritionists should consider the iron for 10 to 12 year old girls and cut down the amount of sodium. In addition, unless the children prefer the foods served by SLP or adjust to the general aspects of SLP, SLP can't accomplish its purposes. Therefore, we suggest that nutritionists should survey children's food preference and satisfaction with the general aspects of SLP.

The Job Satisfaction and Self-assessment of Public Health Nutritionists

This study was carried out to investigate the general characteristics of public health nutritionists, the current status of nutrition services operation, the recognition about nutrition services of public health center related man power, the job satisfaction and self-assessment and the need for a retraining course of public health nutritionists. The subjects were 58 public health nutritionists who responded to the questionnaire distributed at the annual retraining program in 1998. The results of this study are summarized as follows. 1) 46.5% of the nutritonists were 26-30 years old, 62.1% were 4 year university graduates 74.1% were food and nutriton majors and 51.7% were daily workers. 2) Among the public health center-related manpower, the recognition about nutrition services was the highest for the manager of family health section, followed by the head of public health centers, and then the general nurse in public health centers. 3) The ranking of the reasons for job satisfaction of the public health nutritionists was, relationship with colleagues(3.84), inhabitants response after nutrition counselling(3.53), specialized value realization/conviction about duty(3.35), contents of the work(3.10), value achievement(3.08), self achievement/development(3.00), self discretion(2.92), participation in policy decisions(2.90), work load(2.75), chance of retraining and acquistion of new information(2.73), working environment(2.69), supervision/support by superiors(2.67), salary(2.38), supply of necessary education material, technique(2.37), and budget security(2.22). 4) The satisfaction of the inhibitant's responses after nutrition counseling was the highest among the 4 year university graduates(p<0.05), the satisfaction of the specialized value realization/conviction about duty was the highest among the nutritionists 26-30 years old(p<0.05). Food and nutrition majors(p<0.05) and those having worked less than 3-5years at public health centers also showed much satisfaction(p<0.05). Satisfaction with the salary was the lowest among the food and nutrition majors(p<0.01) and daily workers(p<0.001). The satisfaction with the participation in policy decisions was the lowest among the daily workers(p<0.01). 5) The ranking for the level of self-assessment were, nutrition and dietetic practice(2.92), communication(2.80), management(2.77), public health science and practice(2.66)(p<0.01). The general characteristics such as the level of education, major, employment condition, current public health center's tenure, and charge experience of the nutrition guidance work were not significantly related to self-assessment except the management part(p<0.05). The higher the satisfaction of specialized value realization/conviction about the duty, the better the total score on the self-assessment(p<0.05).

Recognition Level of Imported Food and Its Correlation with Discrimination Ability

This study used questionnaires to investigate the safety awareness for imported foods by 365 male and female adults in Taejon. The results of the study were as follow : By factor analysis, the subjects' behaviors and awareness of the imported food was grouped into 3 factors such as 'health and quality factor', 'purchasing factor' and 'contamination factor'. 'Health and quality factor' and 'purchasing factor' were not recognized negatively by the subjects, moreover' contamination factor' was recognized very highly. The subjects' concern and worry about the imported food was also very high. The marital status, education level, nutriton knowledge adn recognition level of contamination by pesticides and heavy metals of foods partially affected the recognitio level of imported foods. The major selection criteria of imported food were distribution period(36.3%), price(28.8%) and purchasing experience(17.3%). The imported food mean discrimination score was 8.4+/-3.1 out of 13. The worst discriminatio score was red pepper. The subjects' experiences with imported foods selection affected the most instead of education level or nutrition knowledge. The higher discrimination score group more negatively recognized imported food and contamination recognition level was higher whereas the lowerdiscrimination score group more positively recognized the purchasing frequency and with to buy more easily. But both groups desired to reinforce contamination control. The better discrimination score of imported food pooring recognized sanitation concerns(p<0.05), quality(p<0.05), cooking convenience(p<0.01), desire for more variety(p<0.05), and the higher contamination recognition level(p<0.05) and desire to reinforce contamination control(p<0.01).

The Effects of Taurine and ??-alanine on Blood Glucose and Blood Lipid Concentrations in Insulin-treated Diabetic Rats

The purpose of this study was to determine the effects oftaurine supplementation and taurine depletion on blood glucose and blood lipid concentrations in insulin-treated diabetic rats. Four groups of Sprague-Dawley male rats were fed the purified diet for 3 weeks ; nontaurine-supplemented diabetic rats(E0), nontaurine-supplemented diabetic rats with insulin treatment(E0+I), 1% taurine-supplemented diabetic rats with insulin treatment(E1+I) and taurine-depleted diabetic rats with insulin treatment(EA+I). Diabetes was induced by streptozotocin injection(50mg/kg B.W.). Isophane insulin was given subcutaneously into the abdominal wall of the diabetic rats(4 unit/rat/day). E1+I were supplemented with 1% taurine in drinking water. To induce taurine depletion, EA+I were treated with 5% beta-alanine in drinking water. E1+I had significantly higher body weight compared to that fo E0. The food intakes of E1+I and E0+I were significantly decreased compared to that of E0. There was no sigfniciant difference in food intake between E1+I and E0+I. The water intake of rats was significantly different among the groups ; E0>E0+I>E1+I>EA+I. The urine volume of E0 was significantly increased compared to those of insulin-treated goups. The blood glucose concentration of E0 was significantly increased compared to those of insulin-treated groups. In the oral glucose tolerance test(OGTT), E0+I and E1+I had significantly lower blood blucose concentrations compared to E0 after 30 min. Also EA+I had significantly lower bloodglucose concentrtion compared to E0 and E0+I. The plasma total cholesterol and LDL-cholesterol concentratons of EA+I were significantly incrased compared to those of other groups. Therefore, it may be suggested that tuarine supplementation is useful for insulin-dependent diabetes in order to prevent diabetic complications suchas cardiac vascular diseases.
