Food Intake and Clinical Blood Indices of Female College Students by Body Mass Index

This study was conducted to investigate the relationships among body composition, dietary intake, and clinical blood indices in college students by body mass index (BMI). Their body compositions were determined by means of BIA (Bioelectrical Impedance Analysis) method. Their dietary intake was determined using a 3-day record method and their hematological indices were determined by semi-automated microcell counter (Sysmex F-520). Their serum lipid levels were measured using biochemical analyzer (Spotchem). Subjects were classified as underweight, normal or overweight groups according to their BMI. The subjects were 69 healthy college students aged 20 to 26 years. The average age, height, weight, and BMI was 21.3 years, 162.6 cm, 54.4 kg, and 20.6 cm/m2, respectively. Their average consumption of energy was 1693 kcal, 84.7% of RDA and their mean ratio of carbohydrate: protein: fat were 54.5 : 16.4 : 29.0. There was no significant difference in nutrient intake among the groups except beta-carotene and vitamin C. The beta-carotene intake was significantly higher in the underweight group. Vitamin C intake was significantly higher in the overweight group. The mean intakes of Ca, Fe, Zn and folate of subjects were 74.8% to 83.2% of RDA. Especially, intakes of Ca, Fe, Zn and folate were lower in the abnormal weight groups. The overall mean values of the hematological indices in female college students were within the normal range and there was no significant difference among the groups. However, anemic subjects with hemoglobin (<12 g/dl) and hematocrit (<36 g/dl) accounted for about 11% of the subjects. The overall mean values of the serum lipid levels were within the normal range and there was no significant difference among the groups. But serum HDL-cholesterol level of the overweight group was lower than that of the other groups. LDL-/HDL-cholesterol ratio and AI index were significantly higher in the overweight group compared to the other groups. Based upon this study, it is necessary for college women to be educated regarding consuming more Ca, Fe, Zn, folate and less fat and cholesterol in order to have better health promotion.

Dietary Intake Pattern of the Korean Adult Population by Weight Status: 2001 National Health and Nutrition Survey

To explore the relationship between weight status and food intake pattern, the Nutrition Survey results of the 2001 National Health and Nutrition Survey were analyzed. Dietary intake data of Korean adults aged 20 to 64, years who participated in the 2001 National Health and Nutrition Survey, was used along with their demographic data. Subjects were classified into 4 groups based on the BMI value of subjects: underweight, normal, overweight and obese. For male adults, obese subjects had significantly higher mean intake of energy, protein, carbohydrates, and fat than normal subjects. In addition, obese male adults consumed more animal foods, especially more meats, than normal subjects. However, females obese subjects did not show higher intake of energy or fat. Although obese male adults showed higher energy intake, calcium and iron intake per 1000 kcal was lower than normal adults. Average calcium intake in females was low; about 70% of RDA regardless of obesity level. In addition, riboflavin and Vitamin A intake was lower in overweight and obese female than in normal females. Percentage of subjects with low fruit and vegetable intake (<400 g per day) was also high in female subjects. These results showed that food and nutrient intake patterns of obese population were different between male and female adults. These dietary intake patterns need to be considered in developing and implementing nutrition policy and intervention programs to prevent and control obesity. Moreover, the National Survey and monitoring system should be developed for continuous and effective investigation on the relationship between obesity and dietary intake.

Perception and Service Needs about Nutrition Education of Pregnant and Lactating: To Compare with Pregnant and Lactating Women, Health Specialist and College Women

The major purpose of this study was to develop the nutrition education contents and material through the basic data from the service provider and the consumer. And also, to find out the differences of attitude and needs between the service provider (SP, breastfeeding specialist), present consumer (PC, pregnant or lactating women) and future consumer (FC, college women). There were types of questionnaires, which consisted of needs and attitudes toward child and maternal nutrition, as well as the personal characteristics of the study subjects. The subjects consisted of 113 breastfeeding specialists who served at medical related institutions, 197 pregnant or lactating women and 309 college women. The self-administered questionnaires from subjects were collected from October to November 2005 in Seoul and Kyunggi Province. The data was analysed by SPSS Win 12.0, ANOVA and Kruskal-Wallis test. The results of this study were as following: 1) The most important determining factors on breastfeeding was 'medical specialist's support' (3.51) and the next one was 'knowledge of maternity care practice' (3.39). And the importance score of determinating factors on breastfeeding was significantly different between each group (p<0.001). The groups of consumer (3.50 at PC and 3.59 at FC) considered the service provider (3.32) more important. The service providers considered a more effective determining factor to be "husband and family support" and "peer support" than the others (p<0.001). 2) To compare the effective factors of breastfeeding practices between the three groups, the service providers were more significantly considered than the others such as "attendance of intervention program" (p<0.001). But the PC group considered the most effective factors was "mother's job after delivery". 3) The self-evaluated score of the breastfeeding knowledge was the most high in SP; the score was significantly different between groups. The knowledge score of nutritional aspects in human milk was most highly evaluated. But maternity care practice and public acceptance marked the lower evaluation score than other issues. 4) The desirable types of educational material was mass media, and the next was printed matter such as booklets. Two kinds of consumers preferred DVD or VCR tapes than and the service provider group (p<0.001). 5) The priority contents of nutrition service PC group wanted the information about infant care more than maternal care (p<0.05), but FC group's priority was significantly different compared with PC group (p<0.001). The priority of SP group pointed out the information of practical child care methods. The results showed the needs of nutrition service, education channels, and perception toward effective factors on consumer behavior changes were significantly different between each group. Thus the result of this study may suggest that consumer oriented nutrition service programs must be developed.

The Development of Multimedia Nutrition Education Program for Preschoolers

The purpose of this study was to design an interactive multimedia nutrition education program for preschoolers. Computer technology provides the opportunity to explore new and creative methods of delivering nutrition education to preschoolers. If this method is effective, more preschoolers can be reached with accurate and consistent nutrition education with less time and teaching staff. This program is a computer-based multimedia nutrition education program for preschoolers based on the Dick and Carey (Dick and Carey 2001) model of instructional design which includes analysis, design, development, and evaluation. The overall instructional goal was based on the needs of the target population. The needs assessment was a self-administered survey distributed to 1,426 parents of preschoolers, focusing on the need for preschoolers' nutrition education. The results of the survey indicated that parents wanted their children to learn reasons for eating nutritious food. Therefore, a program titled "Nutrition Exploration" was developed with the instructional goal of teaching preschoolers the 5 Food Groups. To achieve this goal, the preschoolers were engaged in a game. They could earn colored jewels by completing the game in five sessions. The story line was that people living in a peaceful kingdom become sick after they lose the jewels. The learner takes an adventurous journey through five different countries to retrieve the jewels. These countries are "Giwoon nahrah" (foods containing carbohydrates, such as rice and potatoes), "Sangsang nahrah" (foods that are rich in vitamins and minerals, such as vegetables and fruits), "Sooksook nahrah" (calciumcontaining products such as milk), "Teunteun nahrah" (protein-containing foods such as meat and fish), and "Gakeum nahrah" (products with high sugar and fat content, such as instant foods and soda). The learner who obtains five jewels in five different countries can save the kingdom. For the program to be effective and efficient, the multimedia had to be easy for the preschooler to enter, use, and exit. The verbal instructions enhanced child autonomy, and the program was developmentally appropriate so that the young child could easily manipulate the software. This research provides the basis for the continued development of computer-based nutrition education materials.

Effect of Home-visit Nutrition Education for the Elderly with High Fasting Blood Glucose Levels

This study was conducted to evaluate the effects of home-visiting nutrition education for the elderly with high fasting glucose level in an urban community. The study subjects were 40 elderly people, whose information on general characteristics, anthropometric measurement, biochemical indices, nutrition knowledge, nutrition attitude, dietary habit, food intake and nutrient intake were obtained at baseline. The education group received 6 weekly visits of home-visiting nutrition education from 15 March to 25 April 2004. In the baseline-survey, the education group and non-education group showed no differences in their general characteristics, health-related characteristics, anthropometric measurements, biochemical indices, nutrition knowledge, nutrition attitudes, dietary habits, and food and nutrient intake levels. The difference of mean change of nutrition knowledge, nutrition attitude and dietary habit after home-visiting nutrition education had been studied. The nutrition knowledge score increased by 1.4 in the education group; however, those in the non-education group which increased by 0.4, thus, the differences of mean change were statistically significant (p<0.05). The nutrition attitude score increased by 1.2 in the education group; however, those in the non-education group decreased by 0.4, thus, the differences of mean change were statistically significant (p<0.01). The dietary habit score increased by 1.7 in the education group; however, those in the non-education group decreased by 2.8, thus, the differences of mean change were statistically significant (p<0.01). The difference of mean change of anthropometric indices and biochemical indices in education group and the non-education group was not significant. Looking over the zcereals and their products, vegetables, seaweeds, meats and their products, and fish than the non-education group. The MAR increased by 0.06 in the education group; however, that in the non-education group increased by 0.01, thus, the differences of mean change were statistically significant (p<0.05). The differences of mean change of fasting blood glucose and biochemical indices after home-visiting nutrition education were studied. Fasting blood glucose decreased by 7.6 mg/dL in the education group; however, in the non-education group which increased by 0.4 mg/dL, the difference of mean change was not significant (p=0.051). The above findings suggest that home visiting nutrition education increases the nutrition knowledge and nutrition attitude, as well as, it is effective to change dietary habits. If the education period is extended, not fasting blood glucose improvement was insignificant, but fasting blood glucose improvement ability could be found by changing dietary habits.

Comparison Analysis of School Foodservice Dietitians' Job Satisfaction, Work Value, and Turnover Intention Based on the Expectation to be a Nutrition Teacher

The purpose of this study was to identify the difference of school food service dietitians' work value, job satisfaction, and turnover intention based on their expectation to be a nutrition teacher. Also, this study explored the differences in expectation to be a nutrition teacher, work value, job satisfaction, turnover intention depending on demographics and school foodservice operational characteristics. This study surveyed dietitians who worked at school foodservice in Kyunggii and Daegu, Gyeoungbuk Province. A total of 509 responses were collected using on-site survey and online survey (59.3%). Dietitians expressed favorable work value (3.88+/-0.34) and mid level of a job satisfaction (2.99+/-0.64). The percentage of dietitians who had an intention to leave after the promulgation of a nutrition teacher system (13.2%) was lower than that of dietitians who had an intention to leave prior to it (23.2%). Most dietitians expected a salary rise (84.7%), more chance to teach nutrition education (76.0%), and the improvement of power not only as a teacher but as a dietitian (72.7%). Dietitians who had higher expectation levels to be a nutrition teacher (>3 on the 5 point Likert scale) showed a higher tendency of significant turnover intention (F=4.40, p<0.01) and more confident work value (F=15.292, p<0.001) when comparing those who had lower expectations. There were significant differences in work value, job satisfaction, turnover intention, and expectation to be a nutrition teacher depending on career length and employment status of dietitians. This study revealed that school food service dietitians have favorable expectations to be nutrition teachers with high work value.

Analysis for Internal Audit and External Audit of the Sanitation/Safety Management Performance for the School Foodservice in Gyeongbuk Area

The purpose of the study was to investigate the effects of the characteristics of dietitians, the characteristics of school food services, equipment ratio of HACCP facility/equipment and perception of barriers to HACCP implementation on external and internal audit of food safety/sanitation management performance in school food service. An e-mail survey was conducted with 144 dietitians in Gyeongbuk Province. A response rate was 57.6% (N=83) and data was analyzed using SPSS windows (ver. 12.0). Dietitian perceived facilities/equipment-related and stakeholder-related as the big barriers in implementing a HACCP system. Total scores of sanitation/safety management performance for external and internal audit were similar at 92 and 91 out of 100, respectively. "Facilities/equipment" and "HACCP system" categories in both external and internal audit were rated the lowest. As dietitian perceived facilities/equipment-related (p<0.001) and stakeholder-related (p<0.05) barriers to HACCP implementation were greater, the scores of the external and internal audits were significantly lower. As dietitian perceived barriers for all categories were greater, the scores of internal audits were significantly lower (p<0.05). As a result of multiple regression analyses, the scores of the external audit was positively associated with career as a school food service dietitian, but was negatively associated with barriers related to facility/equipment, while the scores of the internal audit was negatively associated with barriers related to facility/equipment and employees. This study suggests that supporting programs on securing the facilities/equipment and employee training are needed for successful HACCP implementation in school food service.

The Impacts of Customer Characteristics and Service Quality on Attitudes and Behaviors of Bakery Cafe Customers

The purposes of this study were to examine the impacts of characteristics of bakery cafe customers and service quality on customer perceived value, customer satisfaction, intention to revisit, and intention to recommend, and to provide comprehensive understanding on attitudes and behaviors of bakery cafe customers. The questionnaire was developed through literature review and focus group interviews and was modified after pilot test. The questionnaires for the main survey were distributed to 320 males and females aged 20 and over in Seoul. A total of 275 questionnaires were used for analyses (85.9%) and the statistical analyses were completed using SPSS Win (12.0) for descriptive analyses, regression analyses, and correlation analysis. The main results were as follows. There were significant differences of intention to revisit between groups of different gender, age, and personal expenses. The service quality of product dimension affected all tested variables, and the service quality of services and price dimension had effects on customer perceived value and intention to recommend. Customer satisfaction was a unique variable that is affected by service quality of the interior environments dimension. Overall, researchers and managers of bakery cafes should understand customer attitudes and behaviors, and the results of this study would help to establish marketing strategies that meet target customers' needs.
