A Study on Infant Feeding and Weaning Practice in Taejon

- This study was conducted to investigate the weaning practice of 198 infants in Taejon city in October, 1998. Information on infant feeding and weaning practices were obtained by interviewing mothers in gynecologist and pediatric clinics located in Taejon. The results obtained were as follows : In the survey 37.4% of the infants were breast-feeding, while 31.3% of them were bottle-feeding and 29.3% of them were mixed-feeding. The reason for bottled-feeding was due either to the lack of breast-milk secretion or motner's job. The educational level of the mother and maternal job affected the feeding methods before weaning. Lower rates of breast-feeding were found among mothers witn a lover level of education. The breast-feeding rate was lower in full-time and part-time job worker groups than in housewife. There was no significant difference in the feeding methods according to family income. Among the subjects, 71.5% of infants began to be weaned within 7 months. The onset of weaning was delayed in the full-time worker group. There was no significant difference in the onset time of weaning according to feeding method, the educational level of the mother, and family income. 60.6% of infants received fruit juice and 29.6% of them received cereals for first-given-supplementary food. 'For baby's nutritional status' was the most common motivation for the onset of weaning. Commercially prepared foods were used more than home-made food for supplementary food.

A Study of Dietary Intake, Physical Status and Biochemical Status of Children in Taejon

- This study was conducted to investigate the relationship among Rohrer index, and nutritional intake and biochemical status. We examined physical status, dietary intakes, serum cholesterol, blood pressure and other biochemical of children in Taejon. Thin survey was carried out in Octobe, 1995. The subjects were 362 children, aged from 6 to 11 years old. The results were summarized as follows. By Rohrer index, 4.5% of the subjects were lean, 70.2% were normal, 17.0% were overweight and 8.6% were obese. Systolic and diastolic blood pressures of the subjects were 111.73 and 69.88mmHg, respectively. The systolic blood pressure of obese subjects(119.93mmHg) was higher than any other groups. Total cholesterol level was 160.87mg/dl, cholesterol levels in each group were not significantly different. Hemoglobin level of total subjects was 13.10mg/dl, especially hemoglobin levels of 11 year-old girls was lower than that of the same aged boys suggesting that the girls should be supplied with more protein, iron and other nutrients. Energy and protein intakes wee 86.6% and 94.5% of RDA, respectively. The nutrients above the RDA were only two, phosphorus and-vitamin C. The intakes of iron, zinc and vitamin A were lower than 50% of the RDA's. The levels of zinc and niacin were highest in obese group than any other groups. The subjects in overweight and obese groups had eaten more calories from snack and less calories from breakfast than other groups. Rohrer index was correlated with cholesterol, systolic blood pressure and creatinine levels.

- The purpose of this survey was to investigate the relationship among obese children, dietary intake and environmental factors. Therefore, this survey compared obese children with normal children on dietary intake and environmental factors. The survey were 110 obese children and 110 normal children whose age, height, and sex were same as the obese children of 21 elementary school in Inchon. The statistical analysis of data was completed using SAS program. The results were summarized as follows : 1) The student's obesity was related to parent's obesity and number of their siblings. There were significant differences between obese groups and normal group for these two factors. 2) Meal time of the obese group showed more irregularity than that of the normal group. Otherwise, the normal group were more "piclity" about special food than the obese group(p<0.05). Also obese children showed unconsious eating while reading or watching TV(p<0.01). The normal group attended physical education class more eagerily the obese group(p<0.001). There was no significant difference between obese children and normal children for learning habits. 3) Obese children shoed higher intake of nutrients compared to normal children. Among all the nutrients, minerals and vitamins showed significant differences. Therefore, further study on obese children and their intake of minerals and vitamin is needed. Also, in order to prevent factors which influence obesity, nutrition education at home as well as school was needed.

Blood Folate Level Determined by a Microplate Reader and Folate Intake Measured by a Weighted Food Record

- Microbiological method using a 96-well microplate reader for folate assay was established, and folate intake and blood folate concentrations of 23 female college students were assessed. To evaluate folate intake, dietary data were collected by a 3-day weight food record, and serum and RBC folate concentrations were measured by the new method. The coefficient of variation for the new method was less than 10%. Mean daily folate intake of the subjects was 126.7ug which is only 50.7% of the RDA. The mean concentrations of serum and RBC folate were 7.46ng/ml and 294.4ng/ml, respectively, which were within the normal range. These results indicate that folate intake seems to be underestimated due to incomplete food composition database. Therefore, folate database should be appropriately in order to asses folate intake accurately.

- Cardiovascular disease is very prevalent in Korea, and many risk factors, if properly identified are possibly corrected. However, the study results on prevalence and distribution of risk factors may not be reliable while the risk factors of disease are always issued on health promotion projects conducted recently in a community. The subjects of this study were 854 adults who participated in the health and nutrition survey in a community. They were aged between 20 and 69 and sampled representatively. This study intended to estimate the prevalence and the distribution of risk factors of cardiovascular disease such as hypertention, diabetes mellitus, hypercholesterolemia, and obesity. Systolic blood pressure and diastolic blood pressure levels were estimated at 123.9+/-2.2mgHg(men), 117.9+/-1.7mgHg(women), and 80.4+/-1.5mg(men), 74.9+/-1.1mgHg(women), respectively. Glucose level was estimated at 99.1+/-2.3mg/dl in men, and 95.7+/-1.7mg/dl in women. The estimated level of total cholesterol and HDL-cholesterol were 183.4+/-3.8mg/dl(men), 181.7+/-3.1mg/dl(men), and 122.0+/-4.5mg/dl (women), and body mass index was estimated at 24.0+/-0.4kg/m2 in men and 23.9+/-0.4kg/m2 in men and 23.9+/-0.3kg/m2 in women. The prevalence of hypertension was 20.5% for men, and 14.4% for women. The prevalence of diabetes mellitus was estimated to 6.9% for men, and 6.1% for women. The estimated prevalence of hypercholesterolemia was 3.8%(men), 3.9%(women). The rate of obesity was estimated to 28.5%(men), 28.4% (women), respectively. The levels of blood pressure, glucose, and cholesterol were higher in men than in women in almost all the almost ate groups. The prevalence of hypertension for men is about 20%. It was found that the prevalence of diabetes mellitus for males aged between 40 and 59 was rapidly increased. The risk factor with highest prevalence was obesity, and hypertension and diabetes mellitus were the second and third most prevalent.

- It is very important to collect information on the nutritional status of the Korean population for the development of health promotion programs including nutrition. The purpose of this study was to assess the nutritional status of various population living in selected areas for model nutritional work. Seven hundred eighty households(30 households per each area)from 26 areas participated in this study from November 1 to November 20, 1996. Dietary intake data for two consecutive days were collected at household level by a weighting method. The mean energy intake of the subjects(1,934 kcal) was higher than that resulted from the '95 Korean National Nutrition Survey(1,839 kcal). The proportion of energy derived from cereals was 60.1%. The proportion of total protein intake from animal sources was 49.4%. These results were similar to those found in the '95 Korean National Nutrition Survey. Most nutrients(except iron, thiamin, riboflavin, vitamin C, and crude fiber) were higher than the result of the '95 Korean National Nutrition Survey. However, the average iron intake was about 68% of the result of '95 Korean National Nutrition Survey. This may be due to the adjustment of iron content in rice(3.7mg/100g-->0.5mg/100g) included in nutrient database for calculating nutrient intakes. The mean energy contribution from carbohydrate, protein, and fat were 64.2%, 16.4% and 19.4%, respectively. Significant differences of nutrient intakes were noted among some areas, which may be due to different food intake patterns according to the needs of the particular area. Therefore, the result of this study indicates that there are significant differences in food and nutrient intakes among the areas, suggesting that nutritional improvement programs may need to be developed differently by areas.

- This study was intended to develop food and nutrition cyberclass contents for nonmajor students at university. We investigated universities which offered food and nutrition related courses in 1998 by a telephone survey in order to select the most appropriate lecture contents for the nonmajor university students. We investigated to select the most needed lecture contents for the students, 15 questions on evaluation of cyberclasses which they took. The number of subjects were 140 students of 'C' university who registered for nonmajor food and nutrition course in 1998. Among 140 students, 80 were cyberclass students and 60 were non cyberclass students. The results of the survey were as following : Fifty-five universities out of 62 had curriculums on food and nutrition in 1998 and 36,802 students attended the non major food and nutrition lectures. 84.9% of the respondents had their own computes and the main application mostly used was word processing. Additionally, 33.3% of them used on-line communications and 81.4% of them used internet. The most interesting subject of the respondents was 'disease and nutrition management'. The male respondents were concerned more about 'alcohol and health', whereas the females were concerned about 'obesity and weight control'.

Development and Evaluation of Nutrition Education Program through Internet

- This study was undertaken to develop and evaluate a nutrition education program with internet for students. A survey was conducted to find out needs for nutrition education program with 430 college or high school student in October, 1997. Eighty four point eight percent of female and 36.0% of male students had a plan to reduce their weight in a near future. Forty four point four percent of subjects obtained information about weight control from mass media, 28.6% of subjects obtained from their neighbor's recommendation. The information wanted to know were high-calorie foods, answered by 42.1% of females, and calorie expenditure of exercise, answered by 31.9% of males. The obese group showed higher preferrence to sweet foods, salty foods, hot foods, convenience foods, processed foods, animal foods, fried and oily foods, and eating-out than normal group(p<0.05). The obese group also showed a tendency of bad food habits, low intake of seaweeds, high intakes of animal fat, cholesterol-rich foods and salty foods. Amount of food intakes was inappropriate in obese group. An internet program for nutrition education was developed using the results of the survey and juvenile nutrition programs. The program consisted of 6 steps ; step 1 was to check one's physical status, step 2 was explanation about good food habits, step 3 was about food management, step 4 was methods of exercise for health, step 5 included how to maintain ideal weight, and step 6 was related-internet site. Pre-education test and post-education test was conducted to evaluate the nutrition education through internet. The score of nutrition knowledge increased from 74.2+/-7.4 to 77.2+/-9.6. The score of food attuitude did not change. The subjects wanted more information about nutrition from internet. Therefore, internet program of nutrition education with specific and interesting topics should be developed more.

A Study of Perception about Body Image in Adolescent Females: In Daegu City

- This study was conducted to find adolescent females perception of body image. The survey was carried out by self-questionnaires with 463 female school and college students in Daegu. Analysis of data was done using t-test, and ANOVA with the SAS computer program. The average height, weight and BMI of the subjects were 161.2cm, 53.4kg and 20.51kg/m2. It appeared that 33.3% of the subjects were off the normal range of body weight ; in particular 25.1% of the subjects were under weight. While the subjects' perception of their own current body image was not distorted, they were dissatisfied with their body image because they wanted a very thin figure. Subjects were divided into 3 groups -underweight, normal weight, overweight-according to their current body size. Their perceptions of ideal and desired figures differed significantly between the groups, but they thought a thinner figure than normal body image as ideal and desired body image even in overweight group. As a result, dissatisfaction of body image in the overweight group was significantly larger than the normal-weight group, and that of the normal-weight group was larger than the underweight group. Percentages of weight control attempt were 51.7% and 64.7% in the normal weight and underweight subjects, respectively. Subjects were divided into 2 groups according to their weight control experience : those who have attempted, and who have not attempted. Weight control attemptees had a higher level of dissatisfaction with their body image than non-attemptees, both because weight control attemptees were fatter, and they perceived a thinner figure as an ideal and as a desired body image thin non-attemptees. From the results of this study, we confirmed that one of reasons of excessive weight control behavior among adolescent females was distorted perception about ideal body image.

- This study was conducted to provide information about weight control behavior in adolescent females. To explain the behavior intention of dieting, conceptual framework based on "Social Support, Control and the Stress Process Model" and "Theory of Reasoned Action" was used. The survey was carried out by self-questionnaires with 463 female high school and college students in Daegu. Analysis of data was done using mean, correlation and multiple regression analysis with the SAS computer program. A society preoccupied with thinness gives a burden to women, and this burden may stress dissatisfaction with body image. Social perception of ideal body image except parents' perception, and salient others' perception, and salient others' expectation of subjects' body image except parents' expectation, were much thinner than normal figures in this study. The influencing factors for behavior intention of dieting of the subjects were perceived stress and attitude toward diet behavior, especially beliefs of behavioral outcome. Influencing factors related to perceived stress-that is dissatisfaction of body image-were current figure, social perception of body image, effect of mass communication and others' estimation of subjects' body image with self-comparison with others, in order.

- This paper was carried out to investigate the change of food consumption behavior of 733 undergraduate students due to the Korean Economic Crisis in 1997. After the economic crisis, undergraduate students in Ulsan statistically and significantly reduced the intake frequency of almost all foods except rice, kimchi, the Korean tea and the frequency of fast food restaurants used compared with before the economic crisis. The results show that the Korean economic crisis significantly effected the food consumption and restaurant use behavior of the undergraduates in Ulsan.

A Study of Teachers' Breakfast and Ideal Breakfast Types

- We studied teachers' breakfast habits and their preferences on various breakfast types so that we will furnish data to nutrition education including ideal breakfast habit and development of various menus. The meal considered as most importantly were dinner (66.2%), fellowed by lunch(21.6%), all three meals(6.4%) and breakfast(5.8%). Men considered breakfast more importantly than women. On the contrary, women considered dinner more significantly compared to men. The group aged 45 and over emphasized breakfast and all three meal. 78.1% of subjects answered that breakfast is necessary and 61.5% of subjects ate breakfast regularly. Those who have breakfast regularly was lower in women(50.0%) than in men(71.3%). Instead, those who eat breakfast irregularly or skipping it was higher among women(50.0%) than among men(29.7%). The percentages of having breakfast regularly was higher in older groups. For breakfast, 82.1% of subjects had conventional meal which included rice, soup and Kimch. On the other hand, 13.9% of subjects had Western style breakfast such as bread, cornflakes and milk. The major reason for eating breakfast regularly was answered as 'maintain health(71.8%)'. The major reason for eating breakfast irregularly or skipping was 'don't have enough time to eat(48.0%)', 'poor appetite(28.6%)'. The major physical discomfort after skipping breakfast was 'experience brash(35.6%)', 'lack of physical strength(35.1%)'. Subjects answered that breakfast served as 'source of physical strength(64.9%)', 'provides nutritional balance for a day(21.1%)' and 15.0% of subjects ate out breakfast. Therefore, it is suggested that teachers as well as school children be provided breakfast and snack in school. The preference and opinion regarding breakfast types wer conventional food including rice, soup and Kimch(67.0%). There was a little preference in Western style food such as bread, milk and coffee(14.3%), cereals mixture and porridge(10.7%). It was noticeable that 49.1% of females and those who reside in Seoul(42.2%) selected various breakfast types excluding conventional food. Therefore it will be accepted to working women as breakfast if it is nutritionally balanced and cook well in short time.

Price Elasticity Analysis of University Students in Foodservice Operations for Pricing Policy

- The purpose of this study were to : (a) analyzed price elasticity of university students in foodservice operations and (b)provide insight for price decision-making. Questionnaires were composed of price elasticity, the utilization and opinions of students on university foodservice operations, and demographic information regarding respondents. The questionnaires were distributed to 600 university students of 6 universities located in Seoul. Statistical data analysis was completed using the SAS package for descriptive analysis, t-test, ANOVA, and Pearson's correlation. The results of this study can be summarized as follows: The average price for lunch was 1,663 won for campus food, and 2,965 won for off-campus restaurants. The frequency of utilizing the university cafeteria was fairly high. Students felt that the proper price for lunch was 1,446 won, presenting a lower price than the actual average price for lunch. The price elasticity was investigated in relation to the change in utilization rate when these was a price increase. The price elasticity was 2.03, with significant differences between sex, age, and major. The groups utilizing the university cafeteria frequently, taking longer time to go to off-campus or that were satisfied with the university cafeteria, had a lower price elasticity than those that did not. The results of this study suggest that predicting the price elasticity of the target market would assist the pricing policy, and the fact that the same students have different price elasticity by place and atmosphere can be used in marketing strategies.
