Seasonal and Regional Variations in Nutrient Intakes of Korean Adolescents as Assessed as 3-Day Dietary Records

- Seasonal variations of nutrient intake ware evaluated through a 3-day dietary records in 196 Korean adolescents(86 males, 108 females) aged 13 - 15 years and living in urban and rural areas of Chungnam. The seasonal differences of nutrient intake were tested by repealed measure ANOVA. Comparing nutrient intakes among flour seasons using repealed measure ANOVA, mean values of daily intakes were higher in winter and autumn for most nutrients, and were the lowest in summer in the urban areas and in spring in rural areas. Girls recieved the largest amount of nutrients, except Ca and vitamin B/sub 12/, in winter and the lowest amount in summer, while in boys significant differences were not observed among the four seasons for meet nutrients, except fats, Mg, and vitamin E. Interestingly, the seasonal differences for many nutrients were more evident in rural areas than in urban areas. Vitamin A intake in urban areas was higher in winter and spring, while in rural oreas, in summer. Mean values of daily intakes as a percent of the RDA throughout the year in boys and girls ware 82.2% and 84.2% for energy and 88.9% and 82.7% for protein, respectively. Ca and vitamin A intakes were as low as 32.4% and 24.2% of the RDA in boys and 39.7% and 30.6% in girls. Intakes of Fe, Zn, folic acid and vitamin B/sub 12/ ranged from 40 - 60% of the RDA. The nutrients which showed the largest seasonal difference in the percent of RDA were vitamin E in boys and vitamin C, vitamin E, and Fe in girls. The index of nutritional quality(INQ) for Fe was significantly lower in autumn in both genders. The INQ for vitamin C in girls of both areas was much higher in winter. Annual mean adequacy ratio(MAR), an index of overall nutritional quality, ranged from 0.57 - 0.69, which was higher in winter than in other seasons. Conclusively, nutrient intakes of Korean adolescents showed seasonal variations, particularly in girls and in rural area. Thus, seasonal variations should be considered in the assessing nutritional status, particularly ill the rural areas of Korea.

- This study was to investigate weight-control experience disorder and nutrient intake of college student attending web class via the internet. The subject were 1200 college students(392 male, 808 female) attending web class concerned with nutrition and weight control. This cross-sectional survey was conducted by self-administered questionnaire and data were analyzed by Students t-test and chi2-test. Nutrient intake collected from 3 day-recalls were analyzed by the Computer Aided Nutritional Analysis Program. Mean height, weight and RBW(relative body weight) of the male college students were 174.7 cm, 68.0 kg and 101.2%, respectively. Mean height, weight and RBW of the female college students were 162.3% cm, 52.7% kg and 95.3% respectively. Among the male college students, low weight were 1.0%, underweight were 12.8%, overweight were 12.5%, obese were 6.9% by RBW standard. Among the female college students, low weight were 5.1%, underweight 30.2%, overweight were 5.2%, obese were 1.5% by RBW standard. Percentages of weight control experience were 21.7% and 67.0% in the male and female college students, respectively. According to RBW, 22.4% of the weight control experience group were low weight or underweight in the female college students but none of weight control experience group were low weight or underweight in the male college students. Percentage of eating disorder were 6.8%(2.8%, male, 8.7% female) in the college students. Among the female college students, most nutrient intakes were significantly lower in the weight-control experienced group compared to the weight-control nonexperienced group. Among the male college students, there was a tendency that the intake of nutrients, except carbohydrate, calcium and vitamin A was higher in the eating disorder group compared to the non-eating disorder group. However, among the female college students, there was a tendency that the intake of nutrients, except calcium and thiamin was lower in the eating disorder group compared to the non-eating disorder group. Therefore, nutrition education via the internet is required for college students to know proper weight loss methods, desirable eating habits and eating disorder problem well.

- This study examined health foods intakes and related variables among the middle aged(150 men and 159 women) in the Jeonbuk region. Health foods were classified into 4 groups including Chinese medicine(CM), toner foods(TF), vitamin or mineral supplements(VMS), and other manufactured health food supplements(MHFS). The number of people taking health foods were higher for those in their 50's than in their 40's. The consumption rate of TF in men was the highest among health foods, this result had significance. The reasons for taking health foods were recovery from fatigue, supplement of nutrients and making smooth body activity in general, but TF was used to increase of vigor. The consumption rate of health foods was a little different according to social-economic factors, namely, the consumption rate of CM was higher in people in rural than urban areas, those who graduated from middle school than university, blue color & self-employed as opposed to housewives and service workers, low level income than high level income, and Buddhism and no religion than Christian. The consumption rate had a correlation with the habits of smoking, alcohol drinking and exercise ; namely, the consumption rate of CM was higher than VMS and MHFS on smokers and alcohol drinkers. The more the frequency of exercise, the higher the consumption rate of TF, but the duration of the exercise was not correlated. This study suggests that middle aged people need nutritional education for the right recognition and selection of health foods and to consider the nature of each type of health foods.

- This study was conducted to investigate the relationship of serum calcium and magnesium level to depression and anxiety symptoms in 66 perimenopausal women. Daily nutrient intakes and dietary sources of calcium were analyzed by convenient method. General status was conducted by a questionnaire whereas the questionnaire of CED-S(the Center for Epidemiological studies-Depression Scale) was used for depression and Spielburger's STAI-S(state-Trait Anxiety Inventory-State) was used for anxiety. Fasting blood samples were collected, and serum calcium and magnesium concentrations were measured before and after calcium supplementation. The age distribution of the subjects was 49-55 years. Results indicated that serum calcium concentrations were significantly(P<0.05) increased to normal ranges after calcium supplementation. Depression and anxiety scores of the subjects with calcium supplementation were significantly(p<0.05) lower than those before calcium supplementation. There were significantly(P<0.05) decreased between serum magnesium concentration and depression and anxiety scores, but calcium concentration was not significantly decreased. These results suggest that psychological conditions of perimenopausal women are possibly effected by serum calcium and magnesium levels. More studies are needed to measure the long-term effects of calcium supplementation on psychological conditions in perimenopausal women.

- This study was carried out to investigate the intake patterns of health food according to the kind of disease of the elderly aged over 60 years living in the Chuncheon area. This study was conducted by using a questionnaire from December 1999 to the March 2000. The data was analyzed using a SPSS program. The results were summarized as follows : The poorer the self-perceived health condition, the lower the level of activity of daily living(ADL) and instrumental activities of daily living(IADL) were the higher. the frequency score of health food intake. The incidence of disease, such as arthritis(44.7%), hypertension(18.8%), digestive diseases(17.1%), diabetes(10.5%) were found to be higher. than other chronic diseases among the elderly. The frequency score of health food intake was not significantly different according to self-perceived health status, disease status, or the level of ADL and IADl.. The must important source of information for health food intake was the recommendation of friends and relatives(68.7%). Twenty eight point two percent of the elderly considered health foods to be effective, however 8.3% of the elderly considered them to be ineffective. The elderly with chronic diseases had taken health floods in the descending order of neuralgia-arthritis, hypertension, digestive disease, diabetes. The elderly with digestive diseases, diabetes, renal disease, neuralgia-arthritis and respiratory disease were inclined to habitually take health floods once or twice per year. Intake of Korean traditional folk food was as high as intake of registered health food and Chinese tonic medicine. The most frequently taken health food was tonic medicine, which is fo11owed by pumpkin, ginseng products, herbal tea formula with black goat, deer antler and Kye-so-ju. Intakes of health food such as tonic medicine, blood of the deer, royal jelly, aloe were found to be higher among the elderly with chronic diseases such as diabetes, hypertension, and digestive disease. However, intakes of ginseng products, deer antler, pumpkin, herbal tea formula with black goat and Kye-so-ju were found to be higher among the healthy elderly. The elderly with neuralgia-arthritis had taken sixteen kinds of health foods. From these results, a wide consumer education program should be developed to convince people of the importance of well-balanced diet and to choose proper health foods according to the elderly's health conditions. Also, comprehensive and scientific research into Korean traditional folk foods are needed for the correct use.

- The relationship between socio-economic status and food and nutrient consumption patterns was studied in 7,370 Koreans aged 20 years and older in the 1995 Korean Health and Nutrition Survey. The aim of this study was to investigate the effect of rapid economic growth on food and nutrient consumption for Korean adults in the last 30 years. Monthly household income, and individual's educational level and occupation were chosen as variables of socio-economic status for individuals. A one day 24 hour recall method was used for the dietary survey. One way analysis of varience was adopted to test tole association between socio-economic variables and food and nutrient consumption patterns. Individuals who had a high socio-economic status had significantly higher daily intake of most of the nutrients including calcium, vitamin A, vitamin B2 which reached above the recommended dietary allowances(RDA) and a higher percentage energy consumption from fat. In addition, individual who belonged to a low socio-economic status consumed less animal foods, including meat, egg, milk and consumed low proportion of energy from fat. The results suggest that in spite of rapid economic growth during the last 30 years in Korea, individuals who belonged to low socio-economic status categories are still nutritionally vulnerable. Among the socio-economic variables, income and education except occupation were the influential factors on the food and nutrient consumption of Koreans. Therefore, nutrition policy should focus on influencing the dietary patterns of lower social class individuals to improve the health status of the population as a whole.

- This study was designed to develop a website for providing nutrition information and education for college women and young women. The website focuses on two topics ; general nutrition and desirable weight control. This program is located at http : // www.ezydiet.co.kr. This program is composed of 5 major sections. The first two sections were designed to provide information ; one for general nutrition, and the other for providing information regarding weight control. The first section includes information regarding young adult women's diet, nutrition standards, such as the RDA or Korean Food Pyramid, drinking and smoking. The second section coveres information regarding desirable control, foods with high or low calories, eating disorders and popularly used dieting methods. The third section is for simple nutrition assessment, consisting of assessment of ideal body weight and obesity, energy requirements, and eating habits. The fourth section was designed to introduce and help users to apply behavioral modification techniques, such as monitoring, goal setting, stimulus control and reinforcement. The final section was designed for meal planning, by introducing a food exchange list and menu examples for one week. The characteristics of this web-based program are as follows ; 1) provide nutrition information systematically, 2) involve sections for the participation of the user, 3) include food pictures to help understanding of nutrition information, 4) include management modules for some sections to revise or update the information. One-hundred and ten female university students participated in the evaluation of this website. The evaluation results were favorable. About 90% of subjects rated that this program covers major topics 'well ' or 'very well', and that it was 'easy'to 'very easy'to understand the contents on website. Two-thirds of subjects rated quite positively on questions regarding attractiveness, overall quality and technical quality of website. In addition, about three-fourths of subjects answered that this website was helpful in increasing nutrition knowledge and in applying nutrition information into daily life. These results suggested the possibility of using a website as a means of providing nutrition information and education for young adult women.

- This study conducted to assess the effectiveness of nutrition education program for elderly females with various diseases. Forty subjects(hypertension ; 20, diabetes ; 12, hyperlipidemia ; 8) out of 56 completed the 7 weeks nutrition education program. The nutrition education program was based for healthy food habits and dietary guidelines for each specific disease. It also included practicing individualized menu planning and exercising program. Energy, calcium, iron, vitamin A and ash intakes significantly increased in the hypertension group. total sodium intake did not decrease, however sodium intake per kcal decreased significantly(p<0.05). Elderly with diabetes did not show any changes in dietary intakes. Dietary protein, plant fat, ash, and sodium intakes were significantly elevated(p<0.05), but cholesterol intakes significantly decreased(p<0.05) in the hyperlipidemic group. Elderly with hypertension agreed strongly with changes of food habits such as increasing milk intake, and decreasing Kimchi, soup, pickles and salty food, and table salt intakes after nutrition education. Diabetic elderly showed significantly improved food habit scores in decreasing white rice intake, sugar intake and increasing sea-weed consumption, vegetable consumption and exercise. Hyperlipidemic elderly did not show much improvement in food habit scores except in biochemical indices. However, mean serum glucose and atherogenic index decreased in the diabetic and hyperlipidemic groups after education, respectively.

Prenatal Breastfeeding Education and Infant Feeding Practices in Public Health Centers and Baby-Friendly Hospitals

- Although breastfeeding is recognized to be vital to the health and well-being of children and women, the rate of breastsfeeding among Korean women has continuously decreased. One barrier to breastfeeding has been identified to be associated with health care providers. Health care professionals do not give sufficient advice and encouragement, next do hospitals provide supportive environments for breastfeeding by separating infants from mothers or providing formula. The purpose of this study was to investigate prenatal breastfeeding education and infant feeding practices in public health centers and baby-friendly hospitals. A telephone survey was carried out on 57 public health centers located in the Seoul and Chungcheong areas and 13 baby-freindly hospitals from February to April in 2000. Among the public health centers, 43.8% offered periodic prenatal education for pregnant women who visited the centers. Most of them used leaflets or pamphlets developed by the Ministry of Health and Welfare or UNICEF. Twenty six percent of the public health centers developed their own educational materials. All of the 13 baby-friendly hospitals gave additional fluids to infants, did not allow mothers and infants to stay together 24 hours a day, and did not foster the establishment of breatfeeding support groups among the mothers. Most of the baby-friendly hospitals gave artificial teats, did not help mothers initiate breastfeeding within a half-hour of birth. Findings indicate that current practices even in the baby-friendly hospitals are not consistent with the '10 steps to success breastfeeding'. Therefore, deliberate efforts should be made to incorporate adequate breastfeeding education into prenatal program in both public health centers and hospitals, and create environments to support breastfeeding in hospitals, even in baby-friendly hospitals.

- The purpose of this study is to suggest the menu patters of people in Kangbukgu for the basic data of the nutrition education program in its health center. The dietary intake was investigated by the 24-hour recall method for 488 subjects. To analyze patterns, dishes were classified into major staple food, kimchi, soup and side dishes and also classified into 24 categories by cooking method. Patterns by the kind of dishes for the subjects were cooked rice + soup + kimchi cooked rice + kimchi in the order of frequency of use. Patterns for breakfast were, cooked rice + soup + kimchi > coated rice + soup + two dishes of kimchi. For lunch, patterns were, noodle + kimchi > footed rice + kimchi = cooked rice + soup + kimchi. For dinner, patterns were, cooked rice + soup + kimchi = cooked rice + kimchi > noodle + kimchi. Results of analyzing by the number of dishes, were cooked rice + soup + kimchi + one side dish bread in that order. It was significantly different by meal(p<0.01). The results of analyzing patterns, with those considered basic food, cooked rice, soup and stew, were cooked rice + soup > cooked rice > cooked rice + stew. It was significantly different by meal(p<0.01). With these results, the menu patterns of people in Kangbukgu were different by meal. The main dish was mostly cooked rice and the menu has the traditional menu patters, composed of cooked rice, soup and kimchi.
