Representative Nutrients Contents and Nutritional Adequacy Evaluation of Single-Dish Meal for Middle School Students

OBJECTIVES
With the increasing number of single households and so-called Honbab-jok, those who eat alone, people tend to enjoy convenient and simple meals, such as single dish meals. This study was performed to provide data on the energy and nutrient content, and nutritional adequacy of single-dish meal.
METHODS
From the literature reviews, 61 types of single-dish meals were selected, and divided into 4 groups (steamed rice, noodle, porridge, and sandwich·burger), and a further 11 sub-groups (bibimbab, fried rice, topped rice, rolled rice/warm noodle, cold noodle, seasoned noodle, dukgook/porridge/, and sandwich, burger). In addition, 382 junior high school students from Gyeonggi, Sejong, Jeonbuk, and Chungnam areas were recruited for the survey. The survey questionnaires were composed of the characteristics, preference, and intake frequency of single-dish meals. The representative energy content (arithmetic mean) of single-dish meals were calculated, and compared with the energy contents of preference and intake frequency-weighted values adjusted. The representative nutrient contents, energy contribution ratio, and INQ (index of nutritional quality) of a single-dish meal were calculated for a nutritional adequacy evaluation.
RESULTS
The study subjects considered a single-dish meal as tasty, simple and fast to prepare, inexpensive, nutritious, and no low calorie food. The preference scores of all but 1 sub-group of single-dish meals were ≥ 5.00 (5.00~5.97), and 1 sub-group (porridge) was 4.67 on a 7-point scale. The intake frequency of 11 sub-groups were 0.31~1.71/week, porridge was the lowest at 0.31 and warm noodles was the highest at 1.71. Fried rice, rolled rice, and warm noodle' intake frequency were ≥ 1/week. The representative energy of steamed rice, noodle, sandwich·burger were 443, 429, and 428 kcal, respectively, and that of porridge was 264 kcal. Less than 5% differences in the representative energy of 4 groups were observed when adjusted for the preference or intake frequency-weighted values. The energy contribution ratio of macro-nutrients calculations showed that porridge was a high carbohydrate and low fat food, whereas sandwich·burger were high fat and low carbohydrate foods. The INQ of calcium and vitamin C were less than 1.0 in all 4 food groups, but the INQ of protein and thiamin were > 1.0 in all 4 single-dish food groups.
CONCLUSIONS
The representative energy in the 4 groups of single-dish meal was 264~450 kcal, which is a rather low calorie meal, and the energy contribution ratio of macro-nutrients were inadequate. The protein and thiamin levels were sufficient but the calcium and vitamin C levels were insufficient in all 4 groups of a single-dish meal judged by the INQ. The additional intake of fruits and milk·dairy products between meals with a single-dish meal, supply of calcium and vitamin C may increase, which will result in an improved nutritional balance.

The Evaluation Study on Eating Behavior and Dietary Quality of Elderly People Residing in Samcheok According to Age Group

The purpose of this study was to evaluate the eating behaviors and dietary quality of various aged adults. This study conducted through questionnaire and dietary survey by 24-hr recall to 850 adults residing in Samcheok. Subjects were divided into four groups according to the age in male and female, which included 20~29 yrs group (male n = 94, female n = 66), 30~49 yrs group (male n = 201, female n = 216), 50~64 yrs group (male n = 88, female n = 96), and >or = 65 yrs group (n = 46, female n = 43). In male, 20~29 yrs group had a larger proportion of subjects who skipped breakfast, lunch and dinner compared to other groups (p<0.001, p<0.05, p<0.01). The daily food and energy intakes in > or = 50 yrs group were significantly lower than those of < 50 yrs. Protein and fat intakes of 20~29 yrs group were significantly higher than those of the other groups. But ND (Nutrient Density) of minerals as like calcium, iron and plant iron in 20~29 yrs group were significantly lower than those of other groups. The KDDS (Korean's Dietary Diversity Score) of 20~29 yrs group, 30~49 yrs group, 50~64 yrs group and > or = 65 yrs group in male were 4.1, 3.8, 3.7 and 3.5 respectively and there was significant difference (p < 0.001). In female, skipping breakfast and dinner were significantly higher in 20~29 yrs group than in other groups (p<0.001, p<0.001). And the use of nutrient supplementation was higher in 30~49 yrs group than that of other groups (p<0.05). The daily energy intakes was higher in 20~49 yrs group than that of >or = 65 yrs group. The ND (Nutrient Density) of animal protein, vitamins A and B1 in 20~29 yrs group were significantly lower than those of other groups. The KDDS of 20~29 yrs group, 30~49 yrs group, 50~64 yrs group and > or = 65 yrs group in female were 4.0, 3.9, 3.9 and 3.6 respectively and >or = 65 yrs group was significant lower than other groups. According to these results, >or = 65 yrs and 20~29 yrs group had more dietary habit problems and poor nutrition status than 30~64 yrs group. The results of this study revealed that nutritional management and education for adequate meals should be emphasized in adults and elderly.

The Use of Iron Supplements of Pregnant Women and Pregnancy Outcome

It is known that Korean pregnant women take iron supplements at a higher than the recommended level. This study was designed to provide data on current iron intake levels both from food sources and supplement to better guide iron supplement use during pregnancy. We also explored associations of iron supplement intake levels with varioussociocultural factors and pregnancy outcomes. Dietary intakes of 510 pregnant women were assessed by a validated 102- item food frequency questionnaire, and information on types and amounts of nutritional supplement intakes were also attained. While dietary intake levels of most nutrients exceeded the KDRIs (Korea Dietary Reference Intakes: EAR: Estimated Average Requirements), folate fell short of the KDRIs. A total of 428 women (83.9%) reported to take iron supplement. The pregnant women were divided into the three groups (group I: Fe supplement intake < or = EAR, group II: EAR< Fe supplement intake < or = 3 times of EAR, group III: 3 times of EAR< Fe supplement intake). The mean dietary intake of iron was 24% of the total iron intake for pregnant women. Iron intake from food was not significantly different among I, II, and III. In case of iron intake from supplements, the most frequent dose (34.1%) was 90-100 mg/day, and the mean iron supplement intake was 362% of the EAR. The study findings showed that those with higher levels of iron supplements had better meal quality measured by NAR (Nutrient Adequacy Ratio) and INQ (Index of Nutrient Quality). In addition iron supplement intake levels were significantly related to age (20s: 66.5 +/- 38.6 mg/day, 30s: 77.3 +/- 47.8 mg/ day, p< 0.0116) and experience of childbirth (1st pregnancy: 70.9 +/- 41.2 mg/day, 2nd pregnancy: 64.5 +/- 39.5 mg/day, > or = 3rd pregnancy: 94.4 +/- 63.8 mg/day, p< 0.005). However, no significant difference was found between iron supplement intake levels and various pregnancy outcomes including birth weight, birth height, gestational age, weight gain during pregnancy, and jaundice. It is worrisome that iron intake by supplement use greatly exceeded the EAR, suggesting the need of appropriate guidelines for iron supplement intake during pregnancy. Thus iron overdose from supplements in pregnancy should be considered as a serious condition.

A Study on Dietary Attitudes and Dietary Self-Efficacy of Juvenile Delinquents

The purpose of this study was to identify the factors associated with dietary attitudes and dietary self-efficacy of juvenile delinquents. Out of 110 questionnaires distributed to the juvenile detention home students in Daegu, and 150 questionnaires distributed to the juvenile detention home students in Anyang, 210 were analyzed (80.7% analysis rate). These data were analyzed by SPSS program. The results are summarized as follows. Almost all parents' educational levels showed 'graduation of middle school', and only 43.8% of the juvenile detention students were living with parents. In case of incoming status, average income per month was 2,000,000 won, which was lower than normal one. Diet attitude score was higher in boy students than girl students (p < 0.05). There was a higher score of diet attitude in higher educational levels of father. The average score of dietary self-efficacy was 2.51 +/- 0.86. This value was lower than the normal juvenile. There was a higher diet attitude score in the higher dietary self-efficacy score (p < 0.001). Therefore, proper nutrition education is required to improve their dietary self-efficacy. The results of this study could be useful data to plan and develop nutritional education programs of juvenile delinquents

A Study on Nutritional Intakes in Elderly People in Wando Area

The purpose of this study was to investigate nutrients intakes and nutritional quality of Adults and Elderly People in an island area (Wando). A three-day dietary intakes survey, using a 24 hour recall method was obtained from 187 subjects aged 46 to 84 (mean age 65.3) living in an island area (Wando). Nutient intakes were analyzed using CAN-pro soft program and compared to Korean RDA. The quality of nutrients was assessed by analyzing nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ). The average daily mean energy intakes were 1869.0 kcal for males and 1943.9 kcal for females, respectively. Daily intakes of protein for males and females were 28.0 and 30.4 g and those of fat were 31.5 and 28.51 g, respectively. Nutrient consumed below 75% of Korean RDA was protein, vitamin A, Ca and Zn in both males and females. Average CPF ratio of males and females were 78.8 : 6.0 : 15.1 and 80.0 : 6.4 : 13.4, respectively. Energy intake ratio from protein was significantly higher in over 60 years males. Carbohydrate dependency decreased with age. Protein dependency increased with age. Nutrient adequacy ratio (NAR) of energy, protein, vitamin A and vitamin E were increased with age in males. The mean adequacy ratio (MAR), an index of overall dietary quality, were not significantly different by age group. Average MAR for males and females was 0.77 and 0.78, respectively. The index of nutritional quality (INQ) showed the tendency to decrease with age. Especially, there were significantly decreases in INQ of all nutrients, except protein, with age. Based on these results, it is evident that people in the island area did not consume enough nutrients. Specially, dietary intake of protein, vitamin A, vitamin E, and Ca were not adequate.

A Study on the Food Habit and Seasonal Difference of Nutrient Intake of Adult Working Women

To assess the food habits and the seasonal differnces of nutrient intakes and diet qualities of adult working women aged 30 - 49y in Busan, dietary survey was conducted in summer and in winter by a questionnaire and two-day food record. Anthropometric assessment was also investigated in two seasons. 91.8% of those skipped breakfast in the main. 44.3% had irregular meals. The mean daily energy intake was 1725.8 kcal with 63.3% of energy intake being supplied by carbohydrates, 14.7% by protein, 22.3% by fat in summer and 1598.4 kcal with 62.1% of energy intake being supplied by carbohydrates, 15.6% by protein, 22.1% by fat in winter. Over 70% of iron intake came from plant origin in two seasons. The mean intakes of energy, calcium, iron and vitamin A in summer and energy, calcium, iron, vitamin A and vitamin B2 in winter were below Recommended Dietary Allowance (RDA) for Koreans. As well as insufficiency in iron, the bioavailability of iron is considered to have been low because most of iron intake came from plant origin in two seasons. For calcium and iron in summer and calcium, iron, vitamin A and vitamin B2 in winter, proportions of subjects with intake levels less than 75% of RDA were over 40% in summer and over 50% in winter, respectively. The nutrient adequacy ratios (NAR) were below 0.75 for calcium and iron in summer and calcium, iron, vitamin A and vitamin B2 in winter. NARs of iron (p < 0.05), vitamin A (p < 0.01) and vitamin B2 (p < 0.001) in winter were significantly lower than those in summer. The mean adequacy ratios (MAR), an index of overall dietary quality were 0.85 in summer and 0.80 in winter. The MAR in winter was significantly lower than that in summer (p < 0.05). The indexes of nutritional quality (INQ) were below 1 for calcium and iron in summer and calcium, iron, vitamin A and vitamin B2 in winter. The intake (p < 0.05) and NAR (p < 0.05) of vitamin B2 showed positive significant correlations with height in winter. In conclusion, nutrient intake and diet quality of adult working women were different between the summer and the winter. So nutritional education programs for summer and winter are needed for adult working women.

Nutritional Status of the Nonagenarian Population in Longevity Belt in Korea

The nutrients intake and health-related habits of nonagenarian subjects in Korean representative longevity belts of Damyang, Gokseong, Kurye, Sunchang were evaluated for the purpose of providing the information on the desirable food selection and dietary pattern of elderly population. A survey was conducted with 91 subjects (26 males and 65 females) and their food intakes were measured by the combination of one meal weighing and 24-hr recall, and their general background information was collected by visit. The mean age of the subjects was 93.6 +/- 2.2 (male) and 97.6+/- 4.6 (female). The average smoking rate was 20.9%; the rate of regular drinking was 26.4%. The average energy intake was 1,284.9 kcal comprising 77.1% of RDA for elder people over 75. The energy ratio of carbohydrate, protein and fat were 66.5 :18.2 :15.3. The average intake of protein, calcium, iron and zinc were 107.4%, 59.9%, 106.3% and 60% of RDA respectively. The lower intake of vitamins as low as 70% was found except vitamin B6 and niacin. The majority of the subjects consumed rice as staple diet and mostly consumed white plain rice rather than mixed grain rice. The animal and plant food intakes were 88.4 :11.6 in males and those of females were 83.0 :17.0 showing a tendency of plant-based meals. Nutrients that showed NAR over 0.7 were protein, iron, vitamin B6, niacin and phosphate, but those with INQ over 1. Nutrient with INQ below 0.7 was only vitamin E. Even though their nutritional quantity did not appear to be enough, but their nutritional quality was relatively high. The adding dairy products, nuts and fruits for the purpose of proving sufficient vitamin and minerals can achieve the optimal nutritional intake patterns. Further research on RDA of this age population should be followed.

Evaluation of Nutrient Intake Quality Over 40 Year-Old People Living in Rural and Suburban Areas

ABSTRACT To assess the quality of nutrient intake by area of Korean adults, a dietary survey with the 3-day record method was obtained from 324 subjects aged 40 years and older but younger than 70 (52.4 +/- 8.7) living in a rural area (Ansung) and suburban area of a middle-sized city (Ansan). The quality of nutrient intake was assessed by analyzing Nutrient Adequacy Ratio (NAR), Mean Adequacy Ratio (MAR) and Index of Nutritional Quality (INQ). The average daily mean energy intakes were 1,832 kcal for Ansung and 1,842 kcal for Ansan, respectively. Daily intakes of fat for Ansung and Ansan subjects were 40.9 and 40.3 g, and those for protein were 75.1 and 73.1 g, respectively. The overall calorie: protein: fat ratio (CPF) of energy intake was 63 : 17 : 20. Daily mean intakes of protein, fat, calcium, phosphorus, iron, potassium, carotene, sodium, thiamin, and niacin were significantly higher in Ansung residents than in Ansan subjects (p< .05). The average intakes of energy, calcium, vitamin A were lower than Recommend Dietary Allowance (RDA) in both areas. Note, over 30% of the study subjects had less than 75% of RDA of calcium, vitamin A and riboflavin. The MAR was higher in Ansung than Ansan residents (0.86 and 0.85, respectively; p< .05). INQs were over 1 for most nutrients except calcium (0.87), and that of calcium and phosphorus was each significantly higher in Ansung than Ansan subjects. Based on these results, nutrient intake quality of subjects aged 40 to 69 years living in the surveyed rural area is comparable to that of semi-industrialized suburban area in Korea. Dietary deficiency in all of calcium, vitamin A, and riboflavin, however, was a common problem for both rural and suburban residents.

A Study on Dietary Practices of Juvenile Delinquents in Korea

The relationship between dietary practices and juvenile delinquency was studied using a dietary survey. Subjects were selected from juvenile delinquents who were under the supervision of the Seoul Probation Office of the Ministry of Justice. The study group consisted of 52 male and 52 female delinquents. As a control group, 104 exemplary high school students were selected in Seoul. A questionnaire was designed to find out the subjects' general characteristics, dietary habits, lifestyle, eating behavior, food frequency, and nutrient intake using the 24-hour recall method. Compared to the exemplary students, the juvenile delinquents were significantly different in education level, family status, monthly allowance, residence status, breast fed, parents' education level, parents' concern. In dietary habits, fifty-eight percent of the juvenile delinquents ate 2 or fewer meals per day, preferred to eat with friends, and liked hot tasting foods. The juvenile delinquents consumed more ion drinks (OR=9.26 CI: 3.83-22.37), rameon (OR=7.67 CI: 3.21-18.33), cola (OR=6.75 CI: 2.91-15.69), soft drinks (OR=6.12 CI: 2.53-14.81), steamed korean sausage (OR=5.34 CI:2.31-12.32), hamburger (OR=5.15 CI: 1.91-13.87), kimbab (OR=3.63 CI: 1.76-7.46), ddokbokgi (OR=3.17 CI: 1.58-6.38), candy (OR=3.08 CI: 1.41-6.73), white rice (OR=2.59 CI: 1.19-5.64), hotdog (OR=2.52 CI: 1.31-4.86), and less rice mixed with grains (OR=0.02 CI: 0.01-0.05), tangerine (OR=0.06 CI: 0.02-0.20), milk (OR=0.29 CI: 0.14-0.60), roasted fish (OR=0.32 CI: 0.28-0.99, anchovy (OR=0.35 CI: 0.17-0.72), seaweed (OR=0.37 CI: 0.16-0.83), and tofu (OR=0.48 CI: 0.23-0.99) than the exemplary students. With respect to the juvenile delinquents, the nutrient intakes lower than 75% of the Korean RDA were for riboflavin (75.0%) and calcium (47.9%) among the boys, and calcium (46.9%) and iron (60.4%) among the girls. To prevent juvenile delinquency, nutritional education and well-balanced school food service meals should be emphasized so as to improve the management of dietary practices.

A Study of Dietary Behavior and Serum Leptin Levels of Obese Children

The purpose of this study was to investigate the relationship among serum leptin, nutritional status, and the obesity indices of 55 obese children in Daegu and Kyungpook area. Obesity was defined as fat percentage that exceed 25% of body fat mass. Energy and nutritional status were tended to be low, and dietary intake of calcium and iron were less than any other nutrients in all the subjects. Especially, beverage intake of obese group was more than non-obese group. The leptin level were significantly correlated with %RDA of energy (0.41, p < 0.001), protein (0.44, p < 0.001), phosphate (0.40, p < 0.001), iron (0.37, p < 0.001), vitamin A (0.31, p < 0.01), thiamin (0.40, p < 0.001), riboflavin (0.26, p < 0.05), niacin (0.51, p < 0.001), and vitamin C (0.24, p < 0.05). The leptin level were significantly correlated with MAR (mean adequacy ratio, r = 0.43, p < 0.001) and INQ (index of nutrient quality) of thiamin (r = 0.22, p < 0.05). Multiple regression analysis showed that %RDA of niacin in obese group (R2 = 0.208, p = 0.001) and total subjects (R2 = 0.257, p = 0.000), MAR (p = 0.003) and INQ (p = 0.048) of niacin in obese group (R2 = 0.255) and MAR (p = 0.000) and INQ of Ca (p = 0.024) in total subjects (R2 = 0.231) may be important independent predictors to leptin level. MAR showed a significantly positive correlation with %fat (r = 0.42, p < 0.01), BMI (r = 0.46, p < 0.01), RW (r = 0.44, p < 0.01), WHR (r = 0.39, p < 0.01) and, %RDA (p < 0.05, p < 0.01). These data indicated relationships among leptin level, nutrient intake, %RDA, MAR, and INQ in children.

Nutrient Intake According to Dietary Attitudes of School Foodservice Dietitians

This study investigated the correlations between nutrient intake and dietary attitudes in Korean school dietitians. A total of 493 school dietitians working in the Kangwon and Kyungnam areas participated in this study. The subjects were classified as the good group(33.5%), fair group(36.9%) and bad group(29.6%) based on dietary attitude score. The results were as follows. The average intake of energy, calcium, and iron were lower than the Korean RDA and average CPF ratio of energy intake was 64 : 17 : 19. The percent RDAs of nutrient intake of energy, calcium, iron and vitamin B1 were lower in the bad group than those in the fair group and good groups(p<0.001). The mean adequacy ratio(MAR), an index of overall dietary quality, were different among the three groups(p<0.001), the highest was 0.96 in the good group, the lowest was 0.88 in the bad group. The index of nutritional quality(INQ) was significantly higher in the good group than the other groups. The nutrient intakes were positively correlated with dietary attitudes(p<0.01). The nutrient intakes, INQ, NAR and MAR were significantly increased as the dietary attitude score increased.

Health and Nutritional Status of Industrial Workers

The study was curried out to collect information to establish a framework for nutrition education for the prevention of chronic degenerative disease. We analyzed differences in diet quality, food habits and health status of workers by work condition. Anthrometric parameters of height, weight and body fat were measured and biochemical parameters including glucose, total cholesterol, GOT, GPT and hemoglobin were determinded for 194 subjects. To assess the nutrient intake and diet quality of workers, dietary intake was measured by the day 24-hour recall method, Average daily nutrient intake, except for phos-phorous and vitamin C was lower than Korean RDA. The obesity related behavior score was significantly better in laborers than in office workers, while chronic degenerative diseases related to food habit score was significantly better in laborers than in office workers, while chronic degenerative diseases related to the food habit score was beet in offices workers than in laborers. Blood pressure, blood glucose levels were significantly higher in laborer than in office workers. Dietary variety score (DVS) food composition group score(FCGS), mean adequacy ratio(MAR) of office worker were better than those of labor workers. When diet quality was evaluated by FCGS(food composition group score) 16.0% of the subjects acquired 5 points and 14.4% of the subjects acquired 2 points. MAR and INQ showed a significantly positive correlation with DVS and FCGS . This results indicated that the onset possibility of hypertension and diabetes mellitus among chronic degenerative disease was higher in laborers than in office workers, while the onset possibility of obesity was higher in office workers than in laborers. In conclusion the overall diet quality of office workers is betters than that of laborers, therefore, nutrition education for prevention of chronic degenerative disease of industrial workers needs to be more focused on the improvement of the health status of laborers.

Analysis of Dietary Factors of Chronic Disease Using a Neural Network

A neural network system was applied in order to analyze the nutritional and other factors influencing chronic diseases. Five different nutrition evaluation methods including SD Score, %RDA, NAR INQ and %RDA-SD Score were utilized to facilitate nutrient data for the system. Observing top three chronic disease prediction ratio, WHR using SD Score was the most frequently quoted factor revealing the highest predication rate as 62.0%. Other high prediction rates using other data processing methods are as follows. Prediction rate with %RDA, NAR, INQ and %RDA-SD Score were 58.5%(diabetes), 53.5%(hyperlipidemia), 51.6%(diabetes), and 58.0%(diabetes)respectively. Higher prediction rate was observed using either NAR or INQ for obesity as 51.7% and 50.9% compared to the previous result using SD Score. After reviewing appearance rate for all chronic disease and for various data processing method used, it was found that iron and vitamin C were the most frequently cited factors resulting in high prediction rate.

Strategies to Improve Elderly Nutrition : Comparisons of Dietary Behavior according to the Mean Nutrient Adequacy Ratio

A deep understanding of the dietary patterns and nutrient intake is important for assessment of possilbe nutritional risk and for establishing nutrition improvement strategies. This study was conducted toexamine the dietary characteristics of a nutritionally poor elderly group compared to the middle-and highly-nourished group. Elderly participant was recruited from local elderly centers in Suwon city in 1998. Trained dietitians interviewed 119 elderly(35 males, 84 females) aged 60 years and over for collecting dietary data(24-hour recall) and related variables. Male and female subjects were grouped into high, middle, and low according to the mean nutrient adequancy ratio(MAR) tertiles. An analysisof the percentage of RDA(Recommended Daily Allowances of Korea) for each of the 10 nutrients showed that the male low-MAR group consumed below the RDA in all kinds of nutrients, and the female low-MAR group consumed nutrients below the RDA except vitamin C. An evaluation of nutrient density by Index of Nutritonal Quality(INQ) also showed a similar tendency. Thus, the INQ level of the male low-MAR group was significantly lower than the middle-or high-MAR group, especially in protein, vitamin A, thiamin, riboflavin, and phosphorus(p<0.05). Moreover, INQ level of female low-MAR group was significantly lower than that of the high group(p<0.05) in all nutrients. The female low-MAR group's daily food intake were also lower than those of the high-MARgroup in gains, fish, fruits, oil and beverages. The energy distribution from carbohydrates, fats and proteins showed that the male low-MAR group had significantly higher carbohydrate and lower fat proportions compared to each gender high-MAR group, respectively. The male and female low-MAR group had low scores about eating all side dishes. These findings indicate that a moderate increase of the meat/egg/fishes intake was needed by the male low-MAR group for improving nutrition adequacy, and an overall increase of the food quantity and quality was desired for the female low-MAR group. These data could be used for planning a community elderly nutrition program and establishing strategies for tailored guidelines for the individuals.

Nutritional Intake Status of the Elderly Taking Free Congregate Lunch Meals Compared to the Middle-Income Class Elderly

Comparative studies regarding the nutritional status of 93 home-living elderly people taking free congregate lunch meals(FL) and 87 middle income class elderly people(MI) were performed in Taejon city. Data was obtained from questionaires, anthropometry and interviews for the 24-hour dietary recall of 2 nonconsecutive days during August, 1996. The average age for FL was 75.8 years. The monthly familly income for FL belonged to the low-income class. FL females had lower heights and weights than MI females. The average daily nutritional intake of both FL and MI were low, particularly in FL whose %RDA of energy was 68.5%, protein 65%, Ca 29.6%, Fe 50.8%, vitamin A 34.5%, vitamin E 30.5%, riboflavin 40.6%, vitamin C 76.9%. MI's %RDA of energy was 76.4%, protein 80.a2%, Ca 48.1%, Fe 78.6%, vitamin A 67.3%, vitamin E 117.4%, riboflavin 45.6%, vitamin C 136.5%. Comsumption of Zn, vitamin B6 and folic daily average. There was no nutrient having average INQ(Index of nutritional quality) over 1 for either group. The INQs for protein, Ca, Fe and vitamin A were 0.802, 0.377, 0.625 and 0.296 in FL, and 0.900, 0.601, 0.784 and 0.602 in MI, respectively. The MAR(Mean adequacy ratio) was low with the value of 0.500-0.518 in FL and 0.630-0.723 in MI. The percentage of main nutrients from lunch was the highest among the three meals for FL males, while that from breakfast was the highest for MI. Free lunches taken by FL supported higher percentages of main nutrients than home-lunches taken by MI. Eating-out was done more frequently by MI than by FL and that eating-out brought them more nutritional intake. The above data indicated that the dietary nutritional intake status of the FL elderly was very poor in both quantity and quality and that free congregate lunch significantly contributed to the daily nutrient-intake for the FL elderly.
