Effects of Nutrition Education Promoting Vegetable, Fruit, and Fish Intake on the Severity of Atopic Dermatitis in Children: Results from a One-year Follow Up Study

Atopic dermatitis (AD) is believed to be associated with the intake of antioxidant nutrients and fatty acids due to its immunological dysfunction. The purpose of this study was to examine the effects of nutrition education promoting vegetable, fruit, and fish intake on the severity of AD in children. Children with AD aged 6 months to 5 years were randomly assigned into education and control groups, and followed for 1 year. Seventy-six children completed the study (38 for control, 38 for education). The education group received education promoting the intakes of antioxidant-rich foods (vegetables, fruits) and n-3 fatty acid foods (fish). A 24-hour food recall was collected for the diet information. After education, all vegetables (p < 0.001), fruits (p < 0.01), and fish (p < 0.05) intakes per 1000 kcal increased significantly in the education group, whereas only vegetable intake increased in the control group (p < 0.001). The SCORAD index, the severity of atopic dermatitis, decreased significantly in the education group (p < 0.05). Increased consumption of dietary vitamin E was significantly associated with reduction in the SCORAD index, after adjusting for age and gender (p < 0.05). A nutritional education program to increase vegetable, fruit, and fish intake may be effective in reducing the severity of AD, and vitamin E intake may be associated with the decreased severity of AD. More controlled studies on the relationship between these intakes and severity of AD, with intensive diet and/or supplement intervention programs, are needed to obtain conclusive results.

Dietary Antioxidant Vitamins Intakes and Plasma Antioxidant Levels in Korean Elderly with Diabetes Living in Ulsan

Diabetic mellitus in an older population is associated with increased basal oxidative stress and free radical accentuated by hyperglycemic challenge. Enhanced free radical in diabetic elderly can cause the oxidative damage and such damage can be protected by antioxidant defense system. It is believed that vitamin C, A and E are the most abundant and effective antioxidants in human plasma. The purpose of this study was to determine the antioxidant status in Korean diabetic elderly using the case-control study. The antioxidant status was examined by determining plasma levels of antioxidant vitamins (vitamin C, A, E, beta-carotene), total antioxidant status (TAS) and thiobarbituric acid reactive substance (TBARS) and intakes of vitamin C, A, beta-carotene and retiol. Fasting glucose and HbA1c levels and serum lipid profiles (triglyceride (TG), total cholesterol, HDL-cholesterol and LDL-cholesterol) were also determined. Diabetic subjects were 122 elderly persons over 60 years old, visiting public health center, and control subjects were 96 healthy elderly persons living in Ulsan, Korea and they were matched by age, gender, smoking and drinking status. The diabetic and control subjects were divided into sub-groups according to the status of using diet therapy and vitamin supplement. The subjects were interviewed to collect data on their general characteristics, disease history, vitamin supplement, diet therapy and health-related habits by questionnaires. Their dietary intakes were obtained by means of semi-quantitative food frequency questionnaires (SQFFQ). Fasting plasma glucose and HbA1c levels were significantly higher in diabetes than in control subjects, and plasma total cholesterol level of diabetes was not significantly different from that of control subjects. However serum HDL cholesterol level of diabetes was significantly lower and serum TG level of diabetes was significantly higher than those of control group. The average vitamin A and beta-carotene intakes of diabetes were significantly higher than those of control subjects. There was no significant difference in plasma vitamin C, beta-carotene, and TBARS levels between two groups, but plasma vitamin A, E and TAS levels were significantly higher in diabetes than those in control group. Plasma vitamin A and TAS levels of diabetic subjects using diet therapy were higher than those of control using diet therapy, and plasma vitamin E, beta-carotene and TAS levels of diabetic subjects using vitamin supplements were significantly higher than those of controls using vitamin supplements. These results suggested that diabetic mellitus could enhance antioxidant defences against reactive oxygen species and interest in healthy eating such as consumption of more antioxidant nutrients.

A Study of Premenstrual Syndrome(PMS) and the Nutritional Intake of College Women Residing in Busan Metropolitan City

This study was designed to identify premenstrual syndrome (PMS) and to investigate the correlation between premenstrual syndrome and nutritional intakes. The subjects of this study were 138 college women residing in Busan Metropolitan City. The subjects were asked to complete Menstrual Discomfort Questionnaire (MDQ) regarding PMS, food intake frequencies and nutritional intake. We studied the correlation between PMS symptoms and nutritional intake. The average height and weight of anemic subjects were 161.42 +/- 3.50 cm and 51.87 +/-5.42 kg. The average BMI (body mass index, kg/m2) was 19.92 +/-2.14 and PIBW (percent ideal body weight) were 93.02 +/-9.75%. Except for phosphorous, vitamin A and vitamin C intakes, the intake levels of all other nutrients were below the Korean RDA. The average calorie intake of the subjects was 1645.65 +/-352.63 kcal (82.2% of the Korean RDA) and iron intake of the subject was 11.06 +/-4.03 mg (69.1% of the Korean RDA). The calcium and vitamin B6 intakes were 512.26 +/-183.12 mg (73.1% of the Korean RDA) and 1.12 +/-0.14 mg (80.0% of the Korean RDA), respectively. With regard to their menstrual state, 45.9% subjects responded that their menstrual cycles were 'irregular'. The frequency of PMS of the subjects was 30.2% (over 3 points) on 5 point scale (1 : no. 5 : severe). The common symptoms of PMS of the subjects were pain (2.32 +/-1.01), negative effects (2.27 +/-0.87), behavioral changes (2.26 +/-0.85), water retention (2.07 +/-0.78), arousal (1.79 +/-0.84), autonomic reactions (1.77 +/-0.87), lack of control (1.69 +/-0.75) and decreased concentration (1.68 +/-0.75). There was significant correlation between all the PMS symptoms and calcium (p < 0.01), vitamin E (p < 0.05), carbohydrate (p < 0.05). This suggests that PMS represents the clinical manifestation of nutrient deficiency states especially calcium. Therefore we concluded that calcium supplementation is likely to be of benefit in relieving PMS symptoms.

A Study on Dietary Patterns and Nutrient Intake in Women with Hypercholesterolemia

The purpose of this study was to investigate the difference of general characteristics, menopause status, dietary patterns and nutrient intakes between women aged from 30 to 65 years old with a hypercholesterolemia group and normocholesterolemia group. The subjects were classified as belonging to the hypercholesterolemia group or normocholesterolemia group barred on The Guidelines for Korean Hyperlipidemia. Dietary intakes of fatty acids were measured by means of a 24-hr recall method with food models and measuring tools. We analyzed both data sets together using analysis of variance chi-square test and student's t-test(SPSS for WINDOWS, version 7.5). Significance was defied as a p value< 0.05. The results obtained are summarized as follows. Mean age and BMI of the hypercholesteroemia group were significantly higher than those of the normocholesterolemia group. Intakes of cereal, vegetables, mushrooms and sea food in the normocholesterolemia group were significantly higher than those in the hypercholesterolemia group. Most of the nutrient intakes were not significantly different between the normocholesterolemia group and the hypercholesterolemia group. However, vitamin E intake of the normocholesterolemia group was significantly higher than that of the hypercholesterolemia group. There was a significant negative correlation between vitamin E intake and serum TC(r = -.363, p<0.001) and LDL-C(r = -.359, p<0.001). In addition, Serum TG had significantly correlation with carbohydrate(r = 0.137, p<0.001) and vitamin E intake(r = -0.134, p<0.001). Therefore, women who suffered from hypercholesterolemia were recommended to control body weight, and to consume foods containing high vitamin E and foods containing high dietary fiber such as vegetables, mushrooms, and sea food.
