- The purpose of this study was to investigate school food service satisfaction and menu preferences of high school students in Iksan, Cheonbuk area. Self-administered questionnaires were completed by 692 high school students. Data was analyzed by SPSS 11.5 statistical software. Significant differences between genders were tested by the chi-square-test or t-test. The mean satisfaction score with school food service were 2.8 points out of 5 points. The satisfaction scores for menu (2.8 points) and food temperature (3.1 points) were low, but satisfaction with hygiene and facilities (2.7 points) and service (2.6 points) were lowest. The reason that high school students left food was 'the food taste is not good' (65.3%). The school food service areas needing improvement according to the subjects were food taste (39.3%), hygiene (24.3%). The mean score for menu preference was 3.7 points. The highest menu preference menu for the rice category was stir-fried rice (bokeumbap), for the soup was meat soup, for the kimchi was Korean cabbage kimchi. Based on the results we made the following suggestions: To increase the satisfaction with school food service, changes in the school food service policies are needed at the government and school levels. Efforts should be made to improve the taste of school food. The school food service menu should be improved by taking into account the preferences of the users. There is also a need for the development of nutrition programs like nutrition consulting linking students and family, and nutrition camps that will encourage correct dietary habits.

- This study is a part of a software program which was developed for efficient foodservice management of elementary school foodservice. The foodservice management system consists of general information, manu planning, inventory management, and printing of results. Advantages of software programs developed in this study, compared with previous elementary school foodservice programs are as follows. 1) This program can be used to foodservice and nutrition management at the same time. 2) The screen is designed as a homepage for convenience. 3) This program is useful in cycle menu planning. 4) Seasonal menu could be reflected in menu. 5) This program has the results printing function. 6) Data can be revisable. 7) This program can be used to middle and high school.

- We examined the obesity levels and dietary habits of 323 college students taking the course 'Health and Diet' as a part of theirnutritional education. The average percentages of body fat, BMI and RBW for subjects in this study were 16.7%, 21.5kg/m2 and -1.2% in male students and 27.3%, 21.2kg/m2 and 1.0% in female students, respectively. BMI and RBW indicated fewer cases of obesity among female students than BIA did. The average intake of energy by subjects was lower than the RDA of energy. In particular, the average intakes of calcium, iron, and vitamin A by female students were much lower than the RDA of energy. In particular, the average intakes of calcium, iron, and vitamin A by female students were much lower than the RDAs of each of those nutrients. The percent RDAs of nutrient intakes of energy, protein, thiamin, and riboflavin were lower in underweight students than in students of normal and over-weight. Female students were found to skip mealsand consume sweet foods more frequently than male students. The obesity levels of students related to the number of meals eaten per day as well as the frequency of consuming sweet foods. Although, it was not possible to determine statistically, the levels obesity also seemed to correspond to the speed at which meals were eate as well as the frequency of eating salty foods. These results suggest that in order to assess obesity propertly, more research that focuses on subjects' gender should be conducted. In addition, nutritional education should emphasize the importance of intakes of energy and phosphorus for male students, and the danger of iron and calcium deficiencies for female students. We should also educate students about dietary habits which contribute to obesity such as overeating and the intake of sweet foods.

- In this study, the food intake, feces and urine of 14 primary school age boys and girls were collected and intake and excretion of iron and zinc were measured. The boys and girls were 8-12 years old and measurement continued for four weeks during which they maintained their normal living pattern. Each boy's and girl's daily intake and excretion of iron and zinc were measured and apparent digestibility and balance were also calculated. The results are as follows. Mean daily intake of iron was 14.9+/-0.6 mg for the boys and 12.4+/-0.5 mg for the girls. Mean daily intake of zinc was 11.8+/-1.2 mg for the boys and 11.5+/-0.4 mg for the girls. Mean daily fecal loss and apparent digestibility of iron was 6.1+/-0.3 mg and 58.8+/-2.0% for the boys and 6.8+/-0.1 mg and 44.1+/-2.0% for the girls. Mean daily fecal loss and apparent digestibility of zinc was 9.3+/-0.2 mg and 14.4+/-5.1% for the boys and 9.7+/-0.4 mg and 14.3+/-4.3% for the girls. Mean daily urinary loss of iron was 1.1+/-0.1 mg and showed the positive balance of 7.86+/-0.6 mg for the boys and 0.5+/-0.1 mg and showed the positive balance of 5.14+/-0.4 mg for the girls. Mean daily urinary loss of zinc was 0.5+/-0.1 mg and showed the positive balance of 1.03+/-0.6 mg for the girls.
