- This study was performed to investigate the nutrition knowledge, attitudes, and dietary habits of physical education (PE) major and non-majors of male college students. The subjects were 253 students residing in Gyeonggi area. Nutrition knowledge scores of PE major students were lower than that of non-major students. Both PE major and nonmajor students reported TV, radio, and internet as their primary sources of nutrition information. Overall dietary attitude scores of two groups did not differ significantly, but PE major students showed more positive attitudes than non-major students for 'Enjoy eating foods that are good for health'. PE major students took more number of meals a day and took more irregularly than non-major students. Also they used more nutrient supplements than non-major students. PE major students drank more amounts of alcohol and drank more frequently than non-major students. But the smoking status of the two groups was not significantly different. PE major students scored higher than non-major students in dietary habits on balance of meals in spite of their low nutrition knowledge scores. Therefore, it is suggested that nutritional programs for PE major and non-major college students should be developed.

- Young adults are likely to start a new life style which may cause weight gain or obesity since leaving their parents for higher education or university. Whilst young people are slim in general, it is common to see them trying to manage their weight. Few studies have been carried out in Korea to support those changes in lifestyle that can result in weight gain in early adulthood. This study aims to identify prevalence of dieting as well as factors inducing weight gain among university students under unrestricted living conditions. A total of 99 university students were enrolled and asked to complete a questionnaire over a 3-day study period from June to September, 2008. T-test and chi-square-test were applied to compare each behavior between weight gainers and maintainers. Logistic regression was also used for further analysis. Half of the participants used 'eat less' and 'exercise' as a way of dieting, and weight gainers tried to control their weight significantly more than weight maintainers. Most participants were engaged in very little exercise and were more likely to watch TV and use a computer. The time of lunch was proven as the only factor to predict weight change in the participants. As a result of this study, an intervention to promote exercise with friends or as a group is required to makeup for the lack of exercise among young adults. Further studies are also necessary to investigate how each meal time a day relates to the amount of food eaten.

- This study was performed in order to compare the differences in dietary self-efficacy and eating behaviors as well as the relationship of weight control attitudes according to eating disorder perception and obesity index for high school girls majoring in dance. Almost half (45.5%) of the subjects perceived eating disorders, and the rate of underweight group was 45.7%. Forty-four percent of the group that perceived eating disorders were in modern dance, while 55.0% of the group that did not perceived eating disorders were in Korean dance (P <0.05). For the obesity index, a similar rate was shown between the different types of dance for the underweight group, but in the normal group, 54.5% were in Korean dance (P <0.05). Most (82.0%) of the group that perceived eating disorders had fears on obesity, while only 53.3% of the non-perceiving group had fears on obesity (P <0.01). Over half (58.3%) of the underweight group had fears on obesity, while 77.2% of the normal group showed fear in that (P <0.05). For necessity of weight loss to do dance performances, 25.0% of the underweight group and 57.9% of the normal group need that (P <0.05). Most of the group that perceived eating disorders (92.0%) answered that they had experience in very low calorie diets, while only 40.0% of the non-perceiving group had experience (P <0.001). For necessity of calorie education, 42.0% of the group that perceived eating disorders and only 20.0% of the non-perceiving group answered is needed (P <0.05). For eating behavior , the group that perceived eating disorders had lower total scores compared to the non-perceiving group (P <0.001), The group that perceived eating disorders showed lower scores for restraint eating (P <0.01) and emotional factors (P <0.001) except by external eating. This study showed that high school girls majoring in dance have high interest in weight control and problems with wrongful body images and eating behaviors, as well as need for calorie education were suggested. Thus, it is necessary to develop and execute a proper weight control education program for the subjects.

- This study was conducted to investigate food and meal preference of workers (435 male and 212 female) in the Chonnam Yeosu industrial area. The results of the survey were analyzed by principal components analysis. The results were obtained as follows: 19.3% of the subjects were twenties, 28.3% were thirties, 28.8% were forties and 23.7% were fifties. Females liked rice rolled in dried laver, rice cakes, janchi-noodle and breads, on the other hand males liked thick beef soup, loach soup, an eel stew and soju. The young liked instant noodles, fried chicken, sweet and sour pork, pork cutlet, pizza, hamburger, ham, sausage and fruit beverage, on the other hand the old liked a fish pot stew, loach soup, eel stew, fish boiled in soy with spices, panfried fish, sea slug, ascidian, bunder, green laver and boiled burdock-lotus root in soy. Females who are young liked hamburger and sweet and sour pork whereas males who are young liked instant noodles, pork cutlet, ham, sausage and fruit beverage. Aged females liked fish boiled in soy with spices, panfried fish, bunder, green laver, boiled burdock-lotus root in soy whereas aged males liked a fish pot stew, loach soup, eel stew, sea mussel and oysters. Boiled rice was located within the middle irrespective of age and sex, but noodles, wheat flour meal, fast foods and fruits were situated at the young female side. Aged males liked soup and pot stew. Young males liked meats and eggs whereas fish and shellfish and kimch were located at the aged people side. Aged females liked sea weeds and most people disliked vegetables but females liked some vegetables irrespective of age. Processed foods, salted foods, and alcohol were generally disliked foods by subjects but males liked those foods. Soybean curd was liked more males than females, and teas, except coffee, was liked by males.

How Mothers Recognize Intake Status on Street Food of Elementary School Students in the Jeon Buk Region

- This research has been surveyed on street food and snack intake status of elementary school students in the Jeon Buk region and the recognition of mothers has been observed for the objective of providing base materials for appropriate eating habits and nutritional education. As for status on intake of street food, most students (97.3%) have shown to have eaten from the street vendors while mothers assume low frequency in their child's intake of street food. Favorite street food choices had an agreement between mother and student as ddukbokki and dakkochi. Students were more tolerant in sanitation and necessity of street food than the mothers. This research shows that there is a difference in the recognition of street food between the students and their mothers. There a need required for improvement in the system as to provide quality food and to prevent poor quality food being exposed to the students. Furthermore, practical and appropriate education must be conducted at home and at school for better choices of food and a better lifestyle.

- The purposes of this study were to investigate the perception of nutrition labeling on restaurant menus, and to analyze the differences among subject's characteristics, eating-out behaviors, and dietary attitudes. Information concerning general characteristics, health status, eating-out behaviors and dietary attitudes of subjects was collected by a structured questionnaire. From January 5th to February 27th in 2009, 406 questionnaires were completed by 157 males and 249 females. Statistical analyses were performed using by SPSS 14.0 package program. The perception of the importance of nutrition labeling was 3.89, while knowledge of whether restaurants provided sufficient nutrition information scored 2.26 indicating that being highly conscious of nutrition labeling, respondents did not view the supplied information as sufficient. Nutritional perception was greater in females and varied in both genders with age and health status. Significant differences concerning the perceptions of nutrition labeling were evident, based on eating-out behaviors and dietary attitudes. The results imply that nutrition labeling on restaurant menus should be based on consumer characteristics. Relevant nutrition labeling might help improve health by encouraging proper dietary habits and providing valuable nutritional information. Recognition of the importance of nutrition labeling and strategic implementation of labeling in menus would be prudent strategies for restaurant managers.

- This study was carried out to investigate the perception on nutrition labeling of the processed foods among elementary school teachers in Busan. The survey was conducted from November 1 to November 30, 2008 by questionnaires and data which were analyzed by SPSS program. The results are summarized as follows. Ninety five point seven percent of the male teachers and 98.2% of the female teachers recognized the nutrition labeling (NL). The necessity of a NL system and comprehension of NL were higher in the female group than the male group. NL was trusted by 22.9% of male teachers and 19.7% of female teachers. The main reason for checking NL of the teachers was for food safety. For the most important NL items at purchasing the food, the teachers replied 'trans fatty acid' and 'cholesterol'. Five point seven percent of male teachers and 17.0% of female teachers were educated for NL. Seventy two point nine percent of males and 91.0% of females recognized the necessity of NL teaching. It is necessary to prepare education programs for both teachers and students about accurate recognition of NL.

- The prevalence of obesity in children has steadily risen during recent years in developed countries. Child obesity has become a major concern to health providers since it has grown to epidemic proportions over the past few decades. This study was conducted to investigate the biochemical status, dietary habits and life styles according to the obesity degree among obese children residing in the Gyungbuk area. The subjects were 148 elementary school students (boy 103, girl 45) and classified as mildly obese (n = 56), moderately obese (n = 61) and severely obese (n = 31) by the obesity index. The average body weight and height increased significantly according to the obesity degree (P <0.05, P <0.001). Serum cholesterol concentration came under the normal level in all groups. Serum AST activity increased according to the obesity degree but it was not significant. Serum ALT activity increased according to the obesity degree (P <0.05). Dietary habit score was lower significantly according to the obesity degree (P <0.01). Life style of the subjects was significantly different for the level of 'healthy state (P <0.05)', 'body perception (P <0.01)', 'watching TV and video (P <0.05)', 'normal sleeping hour (P <0.05)' and 'degree of stress (P <0.05)' according to the obesity degree. A positive relationship between obesity index and blood pressure, ALT has been shown in the subjects. Obesity index and dietary habit scores were negatively associated. Therefore, these results suggest that a practical nutrition-exercise education program for the prevention of child obesity should be provided to elementary school children.

Age-related Circulating Inflammatory Markers and Cardiovascular Disease Risk Factors in Korean Women

- The purpose of this study was to investigate the age-related changes of cardiovascular disease risk factors and inflammatory markers in non-obese Korean women. Subjects were 112 women over 20 years old with body mass index (BMI) less than 30 kg/m2 and were divided into 3 groups (< 40 years, 40~59 years, > or = 60 years). Mean weight and BMI in the oldest group were significantly higher than those in the other 2 younger groups (P <0.05). Mean total cholesterol, triglyceride, LDL-cholesterol and apolipoprotein B/apolipoprotein A1 ratio (BAR) in the oldest group were significantly higher than those in the youngest group (P <0.05), and mean HDL-cholesterol of the oldest group was significantly lower than that of the youngest group (P <0.05). The older-aged group showed significantly higher mean values of atherogenic index (AI) and LDL/HDL ratio (P <0.05) than the respective younger-aged group, and AI was significantly correlated with age, nitric oxide and thiobarbituric acid reactive substances (P <0.01). In addition, mean vascular cell adhesion molecule-l (VCAM-1) tended to be higher in the older-aged group than the younger group. Tumor necrosis factor-alpha, a proinflammatory maker, was significantly positively correlated with serum homocysteine, a cardiovascular disease risk factor (P <0.01). In addition, a significantly positive correlation was observed between C-reactive protein and BAR (P <0.01). Overall results suggested that the aging might affect the increase of cardiovascular disease risk factors including the serum lipid profiles, weight and BMI, and age-related increases of weight and BMI might play a role in changes in certain biomarkers of inflammation.

- The purpose of this study is to analyze the accuracy of predictive equations for resting metabolic rate (RMR) in Korean college students. Subjects were 60 healthy Korean college students (30 males, 30 females) aged 18-25 years. RMR was measured by indirect calorimetry. Predicted RMRs were calculated using the Harris-Benedict, Schofield (W)/(WH), FAO/ WHO/UNU(W)/(WH), Owen, Mifflin, Cunningham, Liu, IMNA and Henry (W)/(WH) equations. The accuracy of the equations was evaluated on basis of accurate prediction (the percentage of subjects whose RMR was predicted within90% to 110% of the RMR measured), mean difference, RMSPE, mean % difference, limits of agreement of Bland- Altman method between predicted and measured RMR. Measured RMR of male and female students were 1833.4 +/- 307.4 kcal/day and 1454.3 +/- 208.0 kcal/day, respectively. All predictive equations underestimated measured RMR. Of the predictive equations tested, the Harris-Benedict equation (mean difference: -80.4 kcal/day, RMSPE: 236 kcal/day, mean % difference: -3.1%) was the most accurate and precise, but accurate prediction of the equation was only 42%. Thus, this study suggests that the ethnicity-specific predictive equation from Korean people should be developed to improve the accuracy of predicted RMR for Koreans.
