Awareness and Practice of Dietary Action Guide for Adolescence among Middle and High School Students in Korea

The purpose of the study was to examine the adolescents' awareness and practice of Dietary Action Guide for Adolescence, which was developed by the Ministry of Health & Welfare. Subjects were middle and high school students, selected one class each from all of the 16 provinces in Korea, which were 32 schools and 998 students all together. The subjects were asked to self-evaluate the degree of awareness and practice of Dietary Action Guide using the 5 point-Likert scale from July to September, 2010. On average, 55.1% of the students responded that they were aware of the Dietary Action Guide and 49.4% answered that they put Guidelines into practice. The average score of awareness and practice were 3.54 +/- 0.24 and 3.42 +/- 0.33, respectively. The awareness score was higher than those of practice score in all the questions in the 6 categories. Awareness score of female students was higher than those of male students but there was no difference by residence area. Awareness and practice of the nutrition education-experienced were higher than those of the inexperienced. Practice score was higher among middle school-students compared to high school students, which reflected the opportunity of taking nutrition related classes. This finding shows that nutrition education for adolescents is important to change their dietary behaviors regardless of gender, residence area and school level.

Evaluation of Dietary Zinc, Copper, Manganese and Selenium Intake in Female University Students

This study aimed to measure and evaluate the intakes of four antioxidant trace elements, namely, Zn, Cu, Mn, and Se in 19-29y-old female university students in Korea. Diet data were collected by 3-day dietary records in 644 subjects. The mean age, height, weight and body mass index of the subjects were 20.08 years, 161.77 cm, 54.26 kg and 20.82 kg/m2, respectively. The mean, median and 25th-75th percentile intakes of Zn, Cu, Mn, and Se in the subjects were 12.83 mg (12.40 mg, 9.59 to 15.34), 1.30 mg (1.27 mg, 1.00 to 1.57), 3.19 mg (3.12 mg, 2.45 to 3.86), and 50.90 microg (50.17 microg, 37.59 to 64.35), respectively. The proportion of subjects whose Mn intake was adequate or less was 62.89%, and the proportions of subjects whose Zn, Cu and Se intakes were at the estimated average requirements or less were 10.09, 4.97, and 39.60%, respectively. The major food group for dietary intakes of Zn, Cu, Mn, and Se was cereal, providing 8.55 mg (66.60%), 0.78 mg (59.93%), 2.09 mg (65.50%), and 16.83 microg (32.43%), respectively. Many female university students were deficient in Mn and Se compared with the dietary reference intakes. Therefore, except for cereal, it is required to consume a diet consisted of various food sources for increasing the intakes of antioxidant trace minerals, especially animal food groups.

Development and Evaluation of the Semi-quantitative Food Frequency Questionnaire to Assess Folate Intake in Women of Child-bearing Age

The aim of this study was to develop and evaluate the simple semi-quantitative food frequency questionnaire (FFQ) for assessing folate intake in women of reproductive age. We developed a 30-item FFQ, and tested the reliability and validity in 97 women aged between 20 and 39 yrs using the FFQs and 24-h recalls, which were carried out twice, respectively. Assessing the reliability, the correlation coefficients were 0.53 (Spearman's) and 0.49 (Pearson's) for folate. There was no significant difference of folate intake between FFQ1 and FFQ2. 36.1% subjects were classified into the same quartile and 83.5% into the same or adjacent quartile divided by folate intake. On determining the validity, the mean folate intake obtained from the FFQ (FFQ1) and 24h-recalls (2-d) were 306.6 +/- 167.2 microg/d and 326.9 +/- 103.3 microg/d, respectively. There was no significant difference between folate intakes from the two methods. The correlation coefficients for folate were 0.24 (Spearman's) and 0.26 (Pearson's). 39.2% of the subjects were categorized into the same quartile and 70.1% were into the same or adjacent quartile. In addition, sensitivity (64.3%) and specificity (62.3%) were estimated to evaluate the adequacy of folate intake. These results suggest that this FFQ would be a useful and a valuable instrument to assess the intake of folate among the Korean women of child-bearing age.

Development of Food Safety and Nutrition Education Contents for the Elderly: by Focus Group Interview and Delphi Technique

Our society is aging rapidly, and the number of elderly people who are in charge of purchasing and preparing foods at home is increasing. However, most the elderly have difficulty managing nutrition and food safety by themselves. The purpose of this study was to develop the necessary knowledge, through focus group interview and Delphi technique to establish a food safety and nutrition education program. The diet and educational needs of the elderly were surveyed through FGI. The education topics were decided by the Delphi technique. The education program consisted of a five week program, and the topics taught were 'Dietary Change for Healthy Life', 'Prevention of Food Poisoning in Everyday Life', 'Safe Food Handling for my Health', 'Healthy Dietary Life to Prevent Chronic Disease', and 'Safety! Nutrition! Healthy Dietary Life'. This education program was designed to decrease the perceived barriers, and to increase the perceived interests and the sense of self-efficacy. Education program materials, lesson plans, slides, handouts, videos, leaflets, and booklets were developed. Based on the results, the contents of the food safety guideline leaflets for the elderly were decided as the following: (1) wash your hands in the correct way; (2) select safe food; (3) cook foods safely; (4) keep foods safely; (5) keep kitchen utensils clean. In conclusion, if advanced education programs are implemented and delivered continuously in locations such as health centers and community welfare centers, those will contribute significantly to enhance the perception of food safety and to change the desirable dietary behavior of the elderly.

The Current Status of Foodservice Management in the Restaurants Participating in the Government-funded Children's Model Program in Korea during Summer Vacation

The purpose of this study was to investigate the current status of food service management in the restaurants participating in the government-funded children's meal program during summer vacation. A mail survey was conducted with individuals who worked in the restaurants participating in the government-funded children's meal program in Seoul during the summer vacation in 2010. A total of 600 questionnaires were distributed to 274 Chinese, 235 Bunsik and 91 Korean restaurants, which were selected using proportionate stratified sampling by regions and types of operations. A total of 138 usable questionnaires (23.0%) were returned and analyzed. The results showed that over half (57.2%) of the restaurants did not employ any certified cooks. Most of the restaurants (97.8%) provided side dishes; among them, only 42% planned menus for side dishes in advance and only a half changed side dish menus periodically. The suggested reasonable reimbursement rate per meal for children using restaurants differed by types of restaurants; the percentage of restaurants having responded 5,000 won or higher was the highest in Chinese restaurants. This study revealed that food service in the restaurants participating in the government-funded children's meal program was not properly managed during summer vacation, especially in terms of menu and food production. This study also showed that the suggested reasonable reimbursement rate of meals for children using restaurants differed by types of restaurants, implying that adjusting the reimbursement rate according to types of restaurants should be considered in the government-funded children's meal program.

School Dietitians' Satisfaction with and Needs for School Meal Service Support Centers

The purpose of this study was to investigate school dietitians' satisfaction with and needs for School Meal Service Support Centers. A web-based on-line survey was conducted with 1,102 nutrition teachers or school dietitians using four School Meal Service Support Centers during the summer of 2011. The data from 578 respondents (52.5%), consisting of 165 (44.4%), 334 (53.4%), 41 (67.2%), and 38 (86.4%) dietitians using Seoul, Gyeonggi, Suncheon and Gyeongju centers, respectively, were analyzed. The main reason for using the centers was subsidies from local governments. The dietitians using the metropolitan centers, which were Seoul and Gyeonggi centers, tended to buy agricultural products through the centers only, and those using local centers, which were Suncehon and Gyeongju centers, bought those products from the private suppliers as well as from the centers. The dietitians' overall level of satisfaction with the centers was not high showing 3.3 out of 5 points; it was significantly associated with the operating system and services of the centers such as system efficiency, delivery accuracy, communication, and information provision rather than the agricultural products provided by the centers. The dietitians preferred joint operation of the centers by local governments and producers' groups. They wanted School Meal Service Support Centers to be evaluated every year. It was suggested that efforts should be made to improve the operation system and service of School Meal Service Support Centers for improving dietitians' satisfaction with the centers. In addition, an evaluation system for School Meal Service Support Centers should be implemented soon based on school dietitians' needs.

Intakes of Antioxidant Nutrients and Carotenoids according to Lens Turbidity Level among Adults Visiting Cataract Clinic

This study examined intakes of nutrients, carotenoids and polyphenols according to lens turbidity levels among adults visiting a cataract clinic. A total of 102 males and females aged 40 years or higher agreed to participate in the study, and a face-to-face survey interview was conducted to obtain information on general characteristics, health behaviors, and dietary intakes of each participant. The dietary data were collected by a food frequency questionnaire which was previously validated in a Korean population. In addition to essential nutrients, intakes of a total of 10 carotenoids and polyphenols were calculated based on the tables of food functional composition developed by National Academy of Agricultural Science. The subjects were divided into 3 groups according to turbidity levels (< 16, > or = 16 and < 25, < or = 25), and health behaviors and dietary intakes were compared among the turbidity groups. Data showed seemingly higher energy intake and lower dietary antioxidant (i.e., vitamin A, beta-carotene, lutein, zeazanthin, lycopene, cryptozanthin) intakes in the highest turbidity group. However, no statistically significant findings were found in all the comparative analysis on characteristics of health behavior and intakes of nutrients, carotenoids and polyphenols. The current study findings should be cautiously interpreted in consideration of several limitations including a cross-sectional study design, a small sample size, uneven sample size distribution across turbidity groups, and limited generalizability due to using a convenience sample. Therefore we cannot conclude that the risk of cataract is unrelated with dietary antioxidant intakes based solely on the results of this study.

The purpose of this study was to measure and investigate the acute effects of two fatty meals (high-SFA & high-PUFA) on post-prandial thermic effect, substrate oxidation, and satiety. Eight healthy adults (four males and four females) aged 19-22 years were assigned to consume two isocaloric meals: high in saturated fatty acids from butter and high in polyunsaturated fatty acids from sesame oil. Indirect calorimetry was used to measure resting energy expenditure (REE), post-prandial energy expenditure for five hours, and substrate oxidation. Satiety of the subjects after meals was estimated by using visual analogue scales (VAS). Five hours thermic effect of food (TEF) was not significantly different between butter meal (6.5% of energy intake) and sesame oil meal (7.3% of energy intake), but, the TEF of butter meal reached the peak point at 150 min and decreased more rapidly arriving to REE in 270 min. On the other hand, TEF of sesame oil meal reached the peak at 90 min and decreased slower than butter meal (still higher than REE at 300 min). No significant differences in substrate oxidation rates were found between the two meals. Post-prandial fat oxidation rates increased significantly after the consumption of both butter and sesame oil meal than that of the pre-prandial state. Satiety values (hunger, fullness, and appetite) were similar among the meals, but recovery of hunger and fullness to the pre-prandial state was faster in butter meal than that of the sesame oil meal.

The Relationship between High Energy/Low Nutrient Food Consumption and Obesity among Korean Children and Adolescents

Consumption of foods with high energy and low nutrient values has been linked to various health issues including obesity and chronic diseases. This study investigated the high-energy/low-nutrient food consumption status and its relationship with obesity status and intake of energy and nutrients, using the Korea National Health and Nutrition Examination Survey (KNHANES) and the Korea Youth Risk Behavior Web-based Survey (KYRBWS). The prevalence of overweight and obesity among 2-18 year-olds was 8.4% and 10.8% in 2008 and 8.5% and 9.0% in 2009, respectively, in KNHANES. The prevalence of obesity among 12-18 year-olds was 13.9% in 2008 and 11.4% in 2009 in KNHANES, while it was 8.1% in 2008 and 8.2% in 2009 in KYRBWS. Consumption patterns of high-energy/low-nutrient foods were diverse depending on the particular food type. High-energy/low-nutrient foods such as cookies were most often consumed more frequently (2~3 times per week), but fast food type foods were generally consumed less frequently (once per week or less). No significant relationships between high-energy/low-nutrient food consumption and level of energy and nutrient intakes were found in either datasets. Adolescents who were not obese more frequently consumed ramen (p < 0.001), cookies (p < 0.001) and fast food (p < 0.001) than those who were obese in KYRBWS, however, such relationships were not found in KNHANES. This direction of the relationship could be probably attributed to the cross-sectional nature of the datasets. This study was limited by the cross-sectional nature of the data, therefore, further longitudinal research using various study techniques would be necessary to understand the effects of high-energy/low-nutrient foods on child obesity.

The Relationship between beta-cell Function and Nutrient Intakes in Korean Adult: Using 4th Korea National Health and Nutrition Examination Survey 2009

The purpose of this study was to evaluate pancreatic beta-cell function of Korean adult and to examine the associations between beta-cell function and nutrient intakes. Data were analyzed for 1,917 male and 2,885 female subjects older than 30 years using 'The Forth Korean National Health and Nutrition Survey in 2009'. We calculated HOMA beta-cell (The homeostasis model assessment of beta-cell function) using fasting glucose and fasting insulin for assessing beta-cell function. Subjects were divided into HHG (High HOMA beta-cell Group) or LHG (Low HOMA beta-cell Group) according to median of HOMA beta-cell, and then nutrient intakes were compared between two groups. In the entire study population, HHG showed lower percent of carbohydrate intakes (p < 0.05), and higher fat (p < 0.01), percent of fat (p < 0.05), vitamin A (p < 0.05), carotene (p < 0.05) and riboflavin (p < 0.05) intakes than LHG. In addition, levels of HOMA beta-cell were negatively correlated with percent of carbohydrate (beta = -0.040, p < 0.05), and positively correlated with percent of fat (beta = 0.046, p < 0.01). The subjects were then divided into two subgroups according to body mass index values, either < 23 kg/m2 (under- and normal-weight) or > or = 23 kg/m2 (over-weight and obese). Significant differences of some nutrients intakes and correlations with HOMA beta-cell were observed only in under- and normal weight subjects, but not in over-weight and obese subjects. In conclusion, high carbohydrate, lower fat and lower vitamin intakes may be related with pancreatic beta-cell dysfunction in under- and normal-weight Korean.
