Dietary guidelines adherence and changes in eating habits among college students in the post-COVID-19 period: a cross-sectional study

Objectives
This study aimed to assess the adherence to dietary guidelines among college students in the post-COVID-19 era and examine the changes in their dietary habits as the learning environment transitioned from remote to in-person classes.
Methods
We conducted a survey involving 327 college students in Daejeon from March to April 2023. The survey questionnaires included various factors, including age, gender, type of residence, frequency of use of delivery food, convenience food, and eating out. In addition, we investigated the extent of adherence to the dietary guidelines for Koreans and the degree of dietary changes following the post-COVID-19 shift in class format were investigated. For comparative analysis of the level of adherence to dietary guidelines in relation to dietary habit changes, an ANOVA and a post hoc Scheffe test were employed. We also performed a multiple linear regression analysis to identify dietary factors influencing the level of adherence to dietary guidelines.
Results
The study revealed a high rate of convenience food consumption and a low rate of homemade food intake among students. There was a marked increase in the consumption of processed foods, convenience foods, dining out, sweet foods, high-fat fried foods, beverages, and alcohol following the transition from online to in-person classes. When examining adherence to Korean dietary guidelines, the highest scored practice was ‘Hydration’, and the lowest was ‘Breakfast habit’. Increased consumption of convenience foods, late-night snacks, and dining out were negatively correlated with adherence levels to dietary guidelines, specifically correlating with ‘Healthy weight’, ‘Hydration’, ‘Breakfast habit’, and the total score of adherence. The adoption of ‘regular meals’ was positively associated with increased adherence levels to dietary guidelines.
Conclusions
The transition from remote to in-person classes post-COVID-19 led to increased intake of convenience foods, dining out, sweet foods, high-fat fried foods, and alcohol. The rise in convenience food and late-night snack consumption negatively influenced several aspects of the dietary guidelines adherence, thereby suggesting the need for strategies to encourage healthy dietary habits among college students.

Analysis of Dietary Behaviors, Food Consumption Frequency and Blood Clinical Indices by Residence Types of Female College Students in Seoul

OBJECTIVES
College is an important time for students to establish their identity as an independent subjects and develop a foundation to maintain a healthy adulthood. However, after female students become college students, their eating habits are likely to become more irregular and they may experience various health problems because of excessive weight control. Therefore, this study was conducted to investigate the dietary behaviors and blood clinical indices of female college students by residence types.
METHODS
A total of 374 subjects were classified as home group, self-boarding group or boarding group according to residence type. Dietary habits, frequency of food intake, and eating attitudes were examined through questionnaires and anthropometric measurements and blood clinical indices were analyzed.
RESULTS
The meal most frequently skipped by female college students was breakfast, and the frequency of skipping breakfast was significantly lower in the home group than other groups. Most college students recognized that their eating habits had worsened since becoming college students, with the self-boarding group in particular feeling that their eating habits changed negatively. The consumption frequencies of protein foods, fruits, dairy products, seaweed, and fatty meats were significantly lower in the self-boarding group than other groups. The home group ate food cut into smaller pieces, while the self-boarding group tried new and rich foods. Residence types did not affect blood clinical indices.
CONCLUSIONS
The self-boarding group had inadequate dietary habits compared to the home group. Although residence type did not affect the blood clinical indices, the students still had poor dietary habits. Therefore, proper nutrition education is needed to improve the nutritional status of college students, especially those that self-board.

Comparison of Dietary Behaviors and Blood Clinical Indices in Underweight, Normal Weight, Normal Weight Obese and Obese Female College Students

OBJECTIVES
Normal weight obesity (NWO) is defined as excessive body fat in the context of a normal body mass index (BMI). This condition carries a greater risk of developing noncommunicable chronic disease and has been associated with early inflammation. This study was conducted to compare the anthropometric measurements, eating behaviors, and blood clinical indices among four groups: underweight, normal, normal weight obesity and obesity.
METHODS
The subjects included 215 female college students. A questionnaire was administered regarding general characteristics, dietary behaviors, food consumption frequency. Anthropometric measurements and blood clinical indices were also investigated.
RESULTS
The average BMI, body fat percentage, waist circumference, fat-free mass, and muscle mass were highest in the obesity group (p < 0.05). Most subjects had tried to lose weight and perceived that their health was worse than before they became college students. The ratio of students in the NWO group who thought their health was very poor was significantly higher than in the other three groups (p < 0.05). The obesity and NWO groups seemed to eat more and their eating speed was significantly faster than the other groups (pv0.001). The consumption frequency of caffeinated beverages was significantly higher in the NWO group than in the other three groups (p < 0.01). WBC was significantly higher in the obesity group (p < 0.05). Serum levels of TG and total cholesterol were also significantly higher in the obesity group (p < 0.05). Serum GPT was significantly higher in the obesity group (p < 0.05) while BUN level was highest in the NWO group (p < 0.05).
CONCLUSIONS
The obesity group showed the most health problems while the NWO group seemed relatively healthy. However, NWO can lead to problems such as metabolic syndrome and cardiovascular disease in later life if poor dietary habits are maintained. Therefore, education in appropriate eating habits is needed for these subjects.

Consumption Behaviors of Energy Drinks and Comparison of Associated Factors Among College Students in Gwangju

OBJECTIVES
The aim of this study was to examine the current status of consumption of energy drinks among college students and investigate the effects of general environmental factors, health behavior factors, caffeine knowledge levels, and perceived stress levels on consumption of energy drinks.
METHODS
A survey was conducted among a total of 479 college students in Gwangju, using self-administered questionnaires. The questionnaire consisted of items about general environmental factors, health behavior, caffeine knowledge, perceived stress, and energy drink consumption behaviors.
RESULTS
69.1% of participants experienced consumption of energy drinks, and specifically 82.8% of male students and 54.1% of female students experienced consumption of energy drinks (p < 0.001). The reasons for drinking energy drinks were found to be recovery from fatigue, curiosity, taste, habit, thirst relief, and stress relief. In addition, 40.7% of participants experienced drinking energy drinks mixed with alcohol, and specifically 48.6% of male students and 27.4% of female students reported drinking energy drinks with alcohol (p < 0.001). Moreover, 51.5% of participants responded that they experienced the effects of energy drinks, 31.9% reported experiencing adverse effects, and 41.1% were found to perceive the health risks. As a result of the assessment of caffeine knowledge, the participants showed a high level of knowledge of the arousal effect (77.7%) and the concentration increasing effect (70.8%) of caffeine, whereas they exhibited a low level of understanding of the health problems due to caffeine (32.6%) and adequate caffeine intake levels (24.4%). The higher levels of consumption experience of energy drinks was associated with higher body mass indexes (BMI) (p < 0.01), higher academic years (p < 0.01), lower levels of interest in health (p < 0.05), smoking (p < 0.001), alcohol consumption (p < 0.05), and higher levels of perceived stress (p < 0.05).
CONCLUSIONS
The risk groups related to consumption of energy drinks among college students were identified as male students rather than female students, students in the third or fourth year of study associated with increased stress levels, and students with negative health behaviors. Therefore, support for diverse health and nutrition education for college students is required along with the improvement of internal and external environments of schools in order for college students to manage increased stress levels due to the schoolwork and preparation for employment and maintain positive health behaviors.

Preference and the Frequency of Processed Food Intake according to the Type of Residence of College Students in Korea

OBJECTIVES
The purpose of this study was to investigate the eating behavior toward processed foods among college students who live in different types of residence.
METHODS
This is a cross-sectional study targeting a total of 476 college students living at home with their family, living in a rental house with self-boarding, living in a lodging house, and living in a dormitory. Eating behaviors, including preference and the frequency of processed food intake were surveyed and compared according to the type of residence.
RESULTS
The rate of skipping a meal was significantly higher among students who reported self-boarding than those living in other types of residences. The main reason for skipping meals was that they got up late. In the entire study population, the main reason for consuming processed food was easy-to-cook (33.8%) and the primary consideration for choosing processed food was the price (54.0%). The processed food the most favored by college students was the processed noodles; those living at home with their family or living in a dormitory preferred milk products; those living in a rental house with self-boarding or in a lodging house preferred confectionery, retort pouch, convenience food, and canned/bottled food. The frequency of processed food intake was significantly higher in the students who reported self-boarding than those living in other types of residences (p < 0.001).
CONCLUSIONS
Students' preference toward processed foods differed according to their type of residence. The frequency of processed food intake was significantly higher in students who reported self-boarding indicating that the type of residence of student is associated with their choices and consumption of processed foods.

Effects of Nutrition Education for Chinese College Students in Korea: Focused on Personalized Daily Energy Requirement and Food Exchange Units

The purpose of this study was to investigate the effects of nutrition education on nutrition knowledge, dietary attitude and dietary intake of Chinese college students in Korea. The subjects were 64 Chinese college students in Korea (educated group, 32 students vs. non-educated group, 32 students). Educated group was lessoned as group and/or individual. Nutrition education program consisted of four lessons (40min / lesson), '6 major nutrients & function (group lesson)', '6 food group and sources (group lesson)', 'personalized daily needed energy and food exchange units using Food Exchange System (individual lesson)', and 'smart choice of snacks and eating-out foods (group lesson)'. We examined the differences between educated group and non-educated group in nutrition knowledge, dietary attitudes and nutrients intake. After education, there were positive improvements on nutrition knowledge: 'function and foods of 6 nutrients', on dietary attitudes: 'type of breakfast' in educated group. In the evaluation of nutrient intakes according to Dietary Reference Intakes for Korean (KDRI), there were positive improvements on intake levels of riboflavin, fiber, vitamin B6, vitamin C, folate, Ca and K in the educated group. In the index of nutrition quality (INQ), nutrition adequacy ratio (NAR) and mean nutrition adequacy ratio (MAR) were significantly increased in the educated group. In conclusion, it is possible to improve nutrition knowledge, dietary attitude and dietary intake of Chinese college students in Korea through the nutrition education focused on personalized daily needed energy and food exchange units.

Food Habits and Dietary Behavior Related to Using Processed Food among Male College Students Residing in Dormitory and Self-boarding in Gangwon

The purpose of this study was to examine food habits and dietary behavior related to using processed food among male college students residing in dormitory and self-boarding in Gangwon. A total of 344 students (dormitory group: 227, self-boarding group: 117) were surveyed from May to June of 2012. The results are summarized as follows: self-boarding group had a significantly higher frequency of skipping breakfast and lunch and frequency of out meal compared with the dormitory group (p < 0.05, p < 0.05, p < 0.05 respectively). The self-boarding group had a significantly lower the score of 'eat vegetables and Kimchi at every meal' (p < 0.001) and 'eat a variety of food everyday' (p < 0.001) compared with the dormitory group. The self-boarding group had a significantly higher the preference for meat products (p < 0.05) and canned food (p < 0.01) for selecting processed food compared with the dormitory group. The consideration for selecting processed food was ranked by 'taste', 'price', 'expiration', 'appearance' and 'nutrition' in both dormitory and the self-boarding group. In the dormitory group, nutrition labels were identified certainly 2.6%, sometimes 12.8%, and rarely 17.2%. In the self-boarding group, nutrition labels were identified certainly 1.7%, sometimes 18.0%, and rarely 24.8%. The necessity of nutrition education was high in both dormitory group (51.6%) and the self-boarding group (62.4%). Therefore, development of an educational program and application of the information from nutrition labels for male college students, especially self-boarding students will be effective in improving dietary life in order to maintain healthy dietary habits.

Survey on Dietary Behaviors and Intakes of Instant Noodle (Ramyeon) Soup among College Students

High intakes of sodium may increase the risk of hypertension or cardiovascular diseases. According to the 2010 Korea National Health and Nutrition Survey, the average intake of sodium was 4,878 mg/day with salt, kimchi, soy sauce, fermented soybean paste and Ramyeon being the five main sources of sodium. In order to identify solutions to reduce the intake of sodium, we investigated the intake patterns and eating behaviors of Ramyeon among 347 college students (male 146, female 201) using survey questionnaires. The average age of study subjects was 23.7 years for males and 20.5 years for females. The average Body Mass Index (kg/m2) was 21.9 for males and 20.1 for females. The average frequency of Ramyeon intake was 2.0 times/week. The main reason for eating Ramyeon was convenience (56%), followed by good taste (27%), low price (11%) and other reasons (9%). The criteria for choosing Ramyeon were taste (72%), convenience (14%), price (7%), nutrition (1%), and the other factors (2%). Males' average intake of Ramyeon soup (61%) was higher than that of the females (36%). The estimated intake of Ramyeon soup by survey showed a positive correlation with the measured intake of Ramyeon soup. Sodium contents of Ramyeon were measured separately for the noodles and the soup, which were 1,185 mg/serving and 1,148 mg/serving each. Therefore, the amount of sodium intake can be reduced if students eat less Ramyeon soup. Also, we observed that dietary behaviors and soup intakes of Ramyeon between the sexes were different. Appropriate nutritional education for proper eating habits may help decrease the intake of sodium.

A Study of Glycemic Index, Glycemic Load and Food Sources according to Body Mass Index in Female College Students

The purpose of this study was to evaluate nutrients intakes, glycemic index (GI), glycemic load (GL) according to body mass index (BMI) in female college students (n = 320). The study subjects were divided into 3 groups based on their body mass index, an underweight group (BMI < 18.5 kg/m2, n = 55), a normal group (18.5 kg/m2 < or = BMI < 23 kg/m2, n = 231), and an overweight group (23 kg/m2 < or = BMI < 25 kg/m2, n = 34). The food and nutrition intake data obtained by administering a 3-day food record and were analyzed by using Can pro 3.0 software. Anthropometric measurements were collected from each subject. Body weights and BMI of the underweight group were 45.9 kg, 17.6 kg/m2, those of the normal group were 53.8 kg, 20.5 kg/m2, and those of overweight group were 62.6 kg, 23.8 kg/m2, respectively. The mean daily dietary GI of underweight, normal and overweight groups was 66.2, 65.8 and 66.5, respectively. These differences were statistically non-significant. The mean daily dietary GL of underweight, normal and overweight groups were 159.2, 149.4, and 148.9, respectively. The major food source of dietary GI and GL was rice in the three groups. Dietary GI and GL were not significantly correlated with obesity when adjusted for energy, carbohydrate and dietary fiber intake.

Beliefs Regarding Vegetable Consumption, Self-Efficacy and Eating Behaviors according to the Stages of Change in Vegetable Consumption among College Students

The purpose of this study was to examine beliefs, self-efficacy and eating behaviors by the stages of change in vegetable consumption among college students (n = 297). A survey was conducted to examine study variables, and subjects were categorized into three groups based on the stages of change: precontemplation/contemplation stage (PC/C), preparation stage (P), action/maintenance stage (A/M). Subjects had 3.7 servings of vegetables a day, and vegetable consumption was significantly different by stages of change (p < 0.001). The A/M group showed higher score on beliefs regarding vegetable consumption (p < 0.001) than the other groups, and perceived benefits of vegetable consumption (e.g. cancer prevention) more strongly (p < 0.05). The PC/C group felt more barriers than the A/M group, such as disliking cooking methods, texture of vegetables (p < 0.001), bad taste and bad experience of eating vegetables (p < 0.05). Self-efficacy score was 27.2, with decreasing self-efficacy from A/M to P, PC/C (p < 0.001). The A/M group showed more confidence in nine behaviors such as "eating vegetables during meals" and "replacing menu at home with more vegetable dishes" (p < 0.001) than the other groups. The A/M group had more desirable eating behaviors (e.g, having a variety of foods, eating regularly, consumption of food groups). This study suggests that target population for education and educational strategies be different based on the stages of change. For those in the PC/C stage, education might focus on reducing barriers and increasing self-efficacy. For those in the A/M stage, it is necessary to use strategies to maintain and reinforce behaviors for enough vegetable consumption.

Changes in Food and Nutrient Intakes of College Students between 1999 and 2009

The purpose of the study was to examine the changes of food and nutrient intakes of college students between 1999 and 2009. Dietary survey of 169 college students was conducted by a 24-hour recall method for three days in 2009. Food and nutrient intakes in 2009 were compared with the data from 106 students collected by the same methods in 1999. The intakes of cereals & grain products and vegetables in 2009 were lower than those of 1999, but the intakes of meats, eggs, milk & milk products, and manufactured food were higher. The intake of rice per person decreased greatly from 452.2 g in 1999 to 351.4 g in 2009 in males, and from 306.9 g to 237.2 g in females. While the intakes of protein, fat, thiamin, niacin, vitamin B6, phosphorus, potassium, zinc, and cholesterol were significantly higher, the intakes of dietary fiber were significantly lower in 2009 compared to 1999 both in males and females. The nutrients consumed less than the Recommended Intakes were vitamin A, riboflavin, vitamin C, and calcium in males and additionally folate, iron, and zinc in females in both 1999 and 2009. The ratio of carbohydrate, protein and fat as energy was 61 : 15 : 24 and 60 : 14 : 26 in 1999, and 54 : 16 : 30 and 56 : 15 : 29 in 2009 in males and females respectively, showing that carbohydrate intake decreased and fat intake increased greatly. Our data suggest that nutrition education is necessary for college students to help them consume more vegetables and fruits and less fat and cholesterol.

Comparison of the Dietary Factors between Normal and Constipation Groups by Self-reported Constipation in Female College Students

The purpose of this study was to obtain baseline data on dietary management of women's constipation. We estimated the prevalence of self reported constipation, bowel habits and foods & nutrients intake. The subjects were 169 female college students (normal = 92, constipation group = 77) aged 19 to 23 years. We conducted anthropometric measurements, an evacuation habits survey, and a dietary intake assessment for three days by a 24 hour recall method. The prevalence of self reported constipation was 46% (n = 77). Results showed that bowel habits (the difficulty of evacuation, the duration of evacuation and the feeling after evacuation) were significantly different between the two groups. Over 65% of constipation group used laxatives for constipation relief. Frequency of stress and deep sleeping were related with constipation. In daily food consumption and nutrients intake, there was not a significant difference between the groups. However in relation to bowel habits which factors influence constipation, the study showed that the intake of water, potatoes, kimchi, and fruits correlated with evacuation facility. Further, there were no findings in the difference of foods consumption and nutrients intake between the two groups. But some life style changes and food intakes (potato and kimchi) may be useful to improve constipation symptoms in young women.

Evaluation of Food and Nutrient Intake by Food Frequency Questionnaire between Normal and Risk Groups according to the Bone Mineral Density of Female College Students Residing in Gangwon Area

The purpose of this study was to examine the relationship between bone density and dietary intake for college women in their twenties. This study was performed on 160 female college students residing in Gangwon-do. It was conducted using ultrasound measurement of calcaneus bone density, anthropometric checkup and food-frequency questionnaires (FFQ) comprising 94 kinds of commonly consumed foods. Subjects were divided into two groups according to the T-score of bone density: a normal group (n = 113 persons, T-score > or = 1) and a risk group (n = 47, T-score < 1.0). The average age of the subjects was 20.17 years and there was no significant difference between the two groups. Body weight and body fat percentage of the normal group were significantly higher than those of the risk group. The mean daily energy intake of the normal group was significantly higher than that of the risk group. Also, protein, fat, vitamin A, niacin, vitamin B6, folate, calcium, phosphorus, sodium, potassium, iron and zinc intake for the normal group were significantly higher than for the risk group. For the intake of the commonly consumed foods (or dishes) listed in FFQ, the mean daily intake amount of loaf bread, rice cake, potatoes, spicy beef soup, cucumber, seasoned spinach perilla leaves, crown daisy, stir-fried mushroom, sea mustard, beef rib, ham, chicken, mackerel, common squid, drink type curd yogurt, oriental melon and chocolate in the normal group was significantly higher than in the risk group. While, the mean daily intake of ramyun (instant noodle) and carbonated beverage by the normal group was significantly lower than that of the risk group. In conclusion, 20 something female college students showed a higher rate (26.9%) of the bone mineral density risk group (osteopenia or osteoporosis). For the risk group, the levels of nutrient and food intake were lower than in the normal group. Therefore, the bone density risk group needs to increase their nutrient intake and diet quality by increasing the intake of various foods. In addition, they should decrease the intake of foods, which are negative for skeletal health such as instant noodles and carbonated beverages.

Accuracy of Predictive Equations for Resting Metabolic Rate in Korean College Students

The purpose of this study is to analyze the accuracy of predictive equations for resting metabolic rate (RMR) in Korean college students. Subjects were 60 healthy Korean college students (30 males, 30 females) aged 18-25 years. RMR was measured by indirect calorimetry. Predicted RMRs were calculated using the Harris-Benedict, Schofield (W)/(WH), FAO/ WHO/UNU(W)/(WH), Owen, Mifflin, Cunningham, Liu, IMNA and Henry (W)/(WH) equations. The accuracy of the equations was evaluated on basis of accurate prediction (the percentage of subjects whose RMR was predicted within90% to 110% of the RMR measured), mean difference, RMSPE, mean % difference, limits of agreement of Bland- Altman method between predicted and measured RMR. Measured RMR of male and female students were 1833.4 +/- 307.4 kcal/day and 1454.3 +/- 208.0 kcal/day, respectively. All predictive equations underestimated measured RMR. Of the predictive equations tested, the Harris-Benedict equation (mean difference: -80.4 kcal/day, RMSPE: 236 kcal/day, mean % difference: -3.1%) was the most accurate and precise, but accurate prediction of the equation was only 42%. Thus, this study suggests that the ethnicity-specific predictive equation from Korean people should be developed to improve the accuracy of predicted RMR for Koreans.

A Survey of Female College Students' Knowledge and Attitudes Toward Breastfeeding

Breastfeeding is an ideal approach for physical and emotional development of babies, as well as recovery of mothers. A breastfeeding education for female students seems to be an effective intervention to increase the Korean women breastfeeding rate. The purpose of this study was to evaluate their knowledge, attitudes, and other related breastfeeding variables for developing a design for a pre-parental breastfeeding educational information for Korean female students of childbearing age. The sample consisted of 205 Korean female college students, ranging in age from 20 to 25 years old. In this study, a self-administered questionnaire included 6 pages with close-ended multiple-choice questions, and included a cover page with 15 questions on demographic characteristics and personal experiences related to breastfeeding. Data analysis was done utilizing inferential statistics using SPSS 12.0 computer program. The findings indicated that breastfeeding education programs should focus on the practical aspect of attitudes toward breastfeeding, and that educational information design should focus on the practical aspects of breastfeeding for all levels of students' education by nurses. Therefore, education for female college students seems to be an effective intervention to increase breastfeeding rate. This study is useful for descriptions of educational activities to help female students develop positive attitudes to breastfeed, to help these students have confidence toward breast-feeding in future by providing correct information and practical techniques on breastfeeding.

Dietary and Non-dietary Factors Related to Bone Mineral Density in Female College Students

The purpose of this study was to investigate correlations between bone mineral density (BMD) and dietary and nondietary factors in female college students. The BMD of the subjects (n = 38) was measured using DEXA (Dual Energy X-ray Absorptiometry) at lumbar spine and three femoral sites including femoral neck, ward's triangle, and femoral trochanter. Three-day 24-hour dietary recall data were collected from each subject to assess consumption levels of nutrients and food groups. The mean (+/- SD) values of age, age of menarche, height, weight, body mass index (BMI), waist-to-hip ratio (WHR), fat mass, and % body fat of the subjects were 21.34 (+/- 1.73) years, 13.1 (+/- 1.2) years, 161.3 (+/- 5.0) cm, 53.7 (+/- 7.2) kg, 20.6 (+/- 2.6) kg/m2, 0.80 (+/- 0.04), 15.4 (+/- 4.4) kg, and 28.2 (+/- 4.7), respectively. The BMD values of lumbar spine, femoral neck, ward's triangle, and femoral trochanter as T-value were 1.150 +/- 0.13 g/cm2, 0.932 +/- 0.11 g/cm2, 0.850 +/- 0.13 g/cm2, and 0.721 +/- 0.10 g/cm2, respectively. The daily mean energy intake of the subjects was 1660.6 kcal. The intake levels of carbohydrate, calcium, iron, vitamin C, and folic acid were lower than the KDRIs, while those of fat, phosphorus, sodium, vitamin A, and vitamin B6 were higher than the KDRIs. Significantly negative correlation were detected between consumption of fat and oils and the BMD of all sites measured (p < 0.05). Potato and starch intake was negatively correlated to the BMD of femoral neck and word's triangle (p < 0.05). The intake of cereals was found to be negatively correlated to the BMD of ward's triangle (p < 0.05). There was also negative correlation of intake of soybeans and products with the BMD of lumbar spine (p < 0.05). Weight and muscle mass were positively correlated to the BMD of both lumbar spine and femurs (p < 0.01). Significantly positive correlations between BMI, and fat mass and the BMD of lumbar spine were observed (p < 0.001). Additionally fat mass was positively correlated to the BMD of femoral neck. WHR and % body fat were positively correlated to the BMD of lumbar spine (p < 0.05). Negative correlation was found between a serum calcium level and the BMD of femoral neck (p < 0.05). In summary non-dietary factors generally showed significant correlations with the BMD of lumbar spine, while several dietary factors showed significant correlations with the BMD of femurs.

Weight Control and Associated Factors among Health-related Major Female College Students in Seoul

This study was conducted to investigate weight control status and associated factors among health-related major female college students. The subjects consisted of 41 nutrition and 78 physical exercise major female college students. Nutrient intakes, biochemical index, nutrition knowledge (recognition and accuracy), interest of weight control, body satisfaction, self-recognition of health condition, self-evaluated body weight were studied. About 73% of nutrition and 79% of physical exercise major female students were in the normal range of BMI (18.5~23) and 2% of nutrition and 1% of physical exercise major female students were underweight, 10% of nutrition and 6% of physical exercise major female students were obese. There were no significant differences in height and weight by major but %body fat and WHR in physical exercise majors were significantly lower than nutrition major students (respectively p < 0.01, p < 0.05). Overall, nutrition intakes of subjects were not shown to be appropriate, especially Ca/P of subjects was shown 0.54~0.64, fat% out of energy of subjects was shown 24.7~29.0 and Na intake was shown above 2000mg. Recognition and accuracy of nutrition were higher than those of physical exercise majors (p < 0.001). There were no significant differences in self-recognition of health condition, self-evaluated body weight, satisfaction of body shape by major and weight control attempt. But interest of weight control of attempter was higher than that of no-attempter in nutrition (p < 0.05) and physical exercise major students (p < 0.01). Significantly negative correlation was found in satisfaction of body and BMI, body fat mass, %bodyfat, WHR. And significantly positive correlation was found in interest of weight control and BMI, %bodyfat, WHR. It was noticeable to see that interest of weight control was positively correlated to accuracy and accuracy was negatively correlated to blood cholesterol level. Therefore, proper nutrition education for female college students is needed in order to improve their weight control-related health.

Dietary Macronutrients and VO2 by BMI among Female College Students in Seoul

This study was conducted to investigate dietary macronutrient and VO2 by BMI. The subjects consisted of 50 female college students. They were divided into three groups: Below BMI 18.5 kg/m2 (n = 9), BMI 18.5 - 23 kg/m2 (n = 28), above BMI 23 g/m2 (n = 13). Health-related questionnaires, dietary macronutrients, macronutrient compositions, food frequency questionnaires, body compositions and VO2 were studied. Macronutrient compositions that macronutrient intakes were expressed by the percentage of daily energy intakes. There were significant differences in body fat, percent of body fat, and fat distribution by BMI. Also, significantly increasing of basal metabolic rate (BMR) was shown by BMI, but BMR per body weight was decreased by BMI. Overall, there were no significant differences in health-related questionnaires, food frequency questionnaires (FFQ), dietary macronutrients and VO2 by BMI but salty taste preferences and carbohydrate intakes, FFQ of beans, white vegetables rand, yellow-green vegetables in the above BMI 23 g/m2 group were significantly higher than other groups. There were no significant differences in macronutrient composition but the lipid composition of subjects was shown above 20%. Also, energy intakes of subjects were shown to be low; especially the below BMI 18.5 kg/m2 group was very low (55% of RDA). Significantly positive correlation was found in BMR and body composition such as skeletal muscle & lean body mass, but significant correlation was not found in BMR and dietary macronutrients. Overall, researched energy metabolism factor was not different by BMI. Only in the BMI 18.5 - 23 kg/m2 (normal) group, significantly positive correlation was found in VO2peak and body fat oxidation. Therefore, proper nutritional education for female college students is needed in order to improve their obesity-related health. Moreover, a nutritional survey method of finding diverse factors that affect their health should be developed to meet various needs.

Regional Differences in Taste and Food Preferences of College Students Attending Nutritional Education via Internet I. Main and Side Dishes

The purpose of this study was to investigate the regional differences in food preference among college students participating in a nutrition education program via internet. The subjects were 1672 college students (male: 762, female: 910) and divided into 4 regional groups. A survey using a self-administered questionnaire was conducted using a self-administered questionnaire on taste and food preferences. Data was collected via internet or by mail. Prevalence of the food preferences among regional groups was examined using SPSS statistical package. Food preferences were significantly associated with sex and region. Female students in Chungcheong and Kyungsang areas showed significantly higher preference of the hot taste compared to Seoul and Kyunggi areas. Female students in Seoul, Kyunggi and Chungcheong areas showed significantly higher preference of the boiled bean rice compared to the Kyungsang area. The preference for Kimchi stew of female students in Seoul and Kyunggi was significantly higher than those in Chungcheong and Kyungsang areas. Male students in the Chungcheong area showed significantly higher preferences of the Young radish kimchi, while female students in this area showed significantly higher preference of the Radish kimchi compared to other areas. The preference for roasted laver of female students in Seoul, Kyunggi and Kyungsang areas was significantly higher compared to the Chungcheong area. The preference for fried chicken of male students in Seoul was significantly higher than that in other areas. The preference for bean sprouts and season bonnet bellflower of male students in Seoul, Chungcheong and Kyungsang areas were significantly higher compared to the Kyunggi area. Therefore, these results provide nation-wide information on food preferences among Korean college students.

Comparison of Nutrient Intakes Regarding Stages of Change in Dietary Fiber Increasing for College Students in Kyunggi-Do

This study was conducted to compare nutrient intakes regarding stages of change in dietary fiber increasing behavior. Subjects were consisted of healthy 383 college students (250 females and 133 males) in Kyunggi-Do. Stages of change classified by an algorithim based on 6 items were designed each subjects into one of the 5 stages: precontemplation (PC), contemplation (CO), preparation (PR), action (AC), maintenance (MA). Nutrient intakes were assessed by 24-hr recall method. Regarding the 5 stages of changes, PR stage comprised the largest group (39.4%), followed by AC (33.7%), MA (14.6%), PC (7.6%), CO (4.7%). Female were more belong to either AC or MA. The higher stage of change in dietary fiber increasing behavior, the higher self-efficacy. In all male and female, there were no differences in energy, protein, monounsaturated fatty acids, polyunsaturated fatty acids and cholesterol intakes across the 5 stages. But, fiber, potassuim (K), vitamin A and vitamin C intakes of AC or MA were higer than those of PC, CO and PR. Energy% from fat of PR (25.4 - 26.5%) was higher than 20%, and those of AC and MA was lower than the other groups. Dietary P/S and omega6/omega3 ratios of AC and MA were similar to the recommended ratio. Female of PR had the most total saturated fat and palmitic acid and those of MA had the least. Male of PR had the least alpha-LNA (omega3) and total omega3 fatty acids and those of MA had the most. In male and female in AC or MA, fiber and K intakes from breakfast, dinner and snack and vitamin C intakes from all meals were higher than those of the other stages. These results of our study confirm differences in stages of change in fiber intake in terms of nutritional status. To have lower energy% from fat, higher intakes of K, fiber and vitamins, desirable ratio of dietary fatty acids, it needs consistent nutritional education leading to the AC or MA of fiber increasing behavior.

A Study of the Nutritional Intake and Health Condition of Female College Students as Related to Their Frequency of Eating Breakfast

The present study investigated the nutritional intake and health condition of 389 female college students living in Iksan, Jeonbuk, dependent on their frequency of breakfast. The subjects were evenly distributed in terms of their age, 61.7% were living at home with their parents, and most responded that they were from a middle income level. Of the subjects, 43.2% always had breakfast (more than 5 times a week); 26.5% sometimes (3 to 4 times a week); 30.3% seldom had breakfast (less than twice a week). The most frequent reason why they skipped breakfast was they were late risers (53%); 38.7% started to skip breakfast during their high school days. The nutritional intake based on whether or not they had breakfast showed that the intake of all nutrients including energy was higher in the students who always or sometimes had breakfast than in those who seldom did (p < 0.05 - 0.001). The presence of clinical symptoms was dependent upon their intake of breakfast. It showed that the students who seldom ate breakfast, had more symptoms of convulsions, nervousness, neck or shoulder pain and indigestion, than those who always, or sometimes ate it (p < 0.05 - 0.01). In all three groups, the largest number of students exercised once or twice a week. Their major reason for exercising was to lose weight. The degree of obesity based on the Body Mass Index (BMI) was in the normal range for 69.7% of the subjects. Female college students ate breakfast irregularly seemed to have a lower intake of nutrients and poorer health. In this regard, we should recognize the importance of eating breakfast, and should make a habit of doing so.

Body Composition, Food Intake and Clinical Blood Indices of Female College Students

This study was done to evaluate the health and nutritional status of female college students in Seoul. The subjects were 63 healthy college students aged 20 to 29 years. Their body composition, dietary intakes, clinical blood indices were investigated. Their body composition was determined by means of a multifreqency bioelectrical impedance analysis. Their dietary intake was determined using 3-day record method and their nutrient intake was analyzed by Computer Aided Nutritional analysis program for professional (CAN-pro). Their hemoglobin, hematocrit, red blood cell (RBC), white blood cell (WBC) and mean corpuscular volume (MCV) were determined by semi-automated microcell counter (F-520). Their plasma total cholesterol, TG, and HDL-cholesterol levels were measured using test kits. All data were statistically analyzed by SAS PC package program. Their average consumption of calcium, iron vitamin A, vitamin B2 and niacin were 63.3%, 65.0%, 85.2%, 89.2% and 95.2% of RDA, respectively. The overall mean values of the hematological indices in the female college students were within the normal range. However anemic subjects with hemoglobin (< 12 g/dl) and hematocrit (< 36%) accounted for about 20% of the subjects. The mean levels of total cholesterol, HDL-cholesterol and TG were 188.4 mg/dl, 69.9 mg/dl and 67.4 mg/dl, respectively. The percentages of the subjects with plasma total cholesterol level (> 200 mg/dl) and LDL-cholesterol (> 130 mg/dl) were about 41% and 30.4%, respectively. The data showed a significantly positive correlation between either body fat (%) or BMI and TG. However, there was a significantly negative correlation between either body fat (%) or BMI and HDL-cholesterol. These overall results suggest that it is necessary for college women to be educated regarding consuming more iron and vitamin C and less fat, in order to prevent iron deficiency anemia and/or cardiovascular diseases in later life.

The Relationship between the Diversity of Food Intake and Nutrient Intake among Korean College Students Participating in a Nutrition Education Class via the Internet

The purpose of this study was to evaluate the relationship between the diversity of food intake and nutrient intake among Korean college students participating in a nutrition education class via the internet. The subjects were 796 college students throughout South Korea (278 males, 518 females). A 3 days dietary recall survey was conducted and results were analyzed using the Computer-aided Nutritional Analysis Program. Dietary variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). Dietary quality was assessed by NAR (nutrient adequacy ratio), and MAR (mean adequacy ratio). As the DDS, MBS and DVS increased, the NAR and MAR improved. The subjects with a DDS of above 4 or a MBS of above 10 or a DVS of above 11 met two-thirds of the Korean recommended dietary allowance for most nutrients. The DDS, MBS and DVS correlated positively and significantly with the NAR and MAR. Associations between the NAR and high levels of DVS were more positive than those between the NAR and the DDS. Based on these results, the food intake of these subjects was not adequate. Specially, the dietary intake of calcium and iron were not adequate. Therefore, dietary guidelines should be made considering nutritional characteristics so as to improve the intake from all of the major food groups and provide a variety of foods in their diets.

A Study on the Anthropometry and Healh-Related Lifestyle Habits of Women College Students in Kunsan

The purpose of this study was to compare the anthropometry and nutrition knowledge, food behaviour and lifestyle of women college students with different obesity indexes. The subjects were 251 women college students who were randomly selected from Kunsan National University. The height, body weight, soft/lean mass, fat mass, percentage of body fat, and fat distribution were measured, and health-related lifestyle habits were evaluated based on questionnaires. The subjects were assigned to one of the following groups based on their Body Mass Index (BMI): underweight, normal weight and overweight. The results were as follows. Their body weight, soft/lean mass, fat mass, percentage of body fat, and fat distribution were significantly higher in the overweight subjects when compared to the underweight or normal weight subjects. Standard of living, self-recognition of health status and duration of exercise were significantly correlated with their BMIs. Self-satisfaction with body weight decreased as the BMI increased. Most subjects had poor habits such as skipping meals and lack of exercises. The overweight and the underweight groups skipped meals more frequently than the normal weight group. There were no significant differences in the scores on the nutritional knowledge and the dietary behaviour of the subjects with different BMIs. Therefore, proper nutritional education on regular meals and intervention are required if women college students are to have normal weights and healthy lifestyles.

Regional Differences in Food Intake and Diversity among Korean College Students of a Nutrition Education Course through the Internet

The purpose of this study was to evaluate the diversity of food intake among Korean college students of a nutrition education course through the internet. Subjects were 796 nation-wide college students (male 278, female 518). A dietary survey collected from 3 day-recalls were analyzed by the Computer Aided Nutritional Analysis Program. Diet variety was assessed by DDS (dietary diversity score), MBS (meal balance score), and DVS (dietary variety score). The foods consumed in largest amounts were rice (54.42 g), citrus fruit (36.41 g) and milk (30.91 g). The foods consumed most frequently were rice (65.28%), garlic (63.65%) and salt (63.64%). The average food intake was 1325.3 g (male 1420.6 g, female 1274.1 g), with vegetable and animal food comprising 78.5% and 21.5% of total food intake, respectively. The consumption of the major five food groups comprised DDS, and 66.0% (male 56.1%, female 71.3%) of subjects had a DDS of 5 and 27.4% (male 33.5%, female 24.1%) of subjects had a DDS of 4. The groups most frequently missed were dairy products (56.5%) and fruits (41.6%). The average of MBS were 10.88 (11.61 in Seoul, 11.03 in Kyungsang, 10.88 in Chungcheong, 10.85 in Incheon, 10.57 in Kyunggi) in male and 11.08 (11.47 in Kyungsang, 11.20 in Seoul, 11.18 in Kyunggi, 10.82 in Chungcheong, 10.64 in Incheon) in female. Male students in Seoul (18.2) and female students in Kyungsang (18.6) had the greater number of consumed food items. Subjects who had higher DDS had significantly higher DVS (p < 0.001). Based on these results, the food intake of the subjects regarded as not adequate, especially with regards to the dairy and fruit groups. Considering their nutritional characteristics, dietary guidelines as well as education should be made to improve the food intake and include various foods in their diet.

The Dietary Behavior, Dietary Intakes and Internet Searches Reagarding by Disease in College Students Participating in a Nutrition Education Web Class

The purpose of this study was to investigate the dietary behavior, dietary intakes and internet searches regarding diseas by college students participating in a nutrition education web class. The study subject were 1184 college students and crosssectional survey was conducted by a self-administered questionnaire. The questionnaire deal with anthropometric data, diseas, dietary behaviors, dietary intakes, and the use of nutrition information via the internet. The data was analyzed using a SPSS PC program. Disease group was 19.6% (male: 17.1%, female: 21.9%) and non-disease group was 80.4% (male: 82.9%, female: 78.1%) of subjects. As for the kinds of diseas, the male disease group had stomach diseas (15.7%), ozena (15.7%), hepatitis (10.8%) and allergic disease (7.8%), etc, and the female disease group had stomach diseas (32.8%), allergic diseas (12.0%), bronchitis and bronchial asthma (10.4%), anemia (7.2%), and constipation (1.6%), etc. Non-disease group showed significantly higher irregularity of meal time compared to disease group. Also, Disease group showed significantly higher concern about nutrition and health, worse recognition of theirown nutrition and health satus, and made greater efforts to prevention diseas compared to the non-diseas group. In the male subjects, the average intake of Calories, Vitamin B2 and calcium was lower than the Korean RDA and in the female subjects, those of Calories, calcium and Fe were lower than the Korean RDA. Most of the diseas (97%) and the non-disease (98.2%) groups had positive attituds toward the usefulness of internet nutrition information. The disease group showed a higher confidence in the internet nutrition information and recognition of internet information on poisons compared to the non-diseas group. However, this difference was not significant. Therefore. it is necessary to provide sientifically proven nutrition of information via the internet for college students in order to promote healthful lifestyles and to prevent diseas.

Regional Differences in Dietary Supplement Use and Related Factors among College Students Participating in Nutritional Education Programs via the Internet

The purpose of this study was to investigate the regional differences in dietary supplement use and related factors among college students participating in nutritional education programs via the internet. The subjects in this study were 797 college students (male: 518, female: 279). A cross-sectional survey was conducted using a self-administered questionnaire about dietary supplement use, demographic characteristics, health-related lifestyles, nutrient intake, and data were collected via the internet and by mail. Dietary supplements were taken by 82.2% of subjects (males: 76.3%, females: 85.3%). There was a significant regional difference in supplement use (p < 0.01). The supplements, used most frequent by male students in the Seoul and Incheon areas were lactic acid beverages and gagogi, in that order. Male students in the Kyunggi area used gagogi and lactic acid beverages in that order. Lactic acid beverages and Chinese medicine were used most frequently by male students in the Chungcheong area. Male students in the Kyungsang area used lactic acid beverages and water-soluble vitamins, in that order. Male students in Seoul and Kyungsang areas showed significantly higher percentage of keep on taking supplements compared to other areas (p < 0.05). Both male and female students in the Seoul area had more frequent medical examinations, in comparison to students in other areas (p < 0.05). Male students in the Kyungsang and Seoul areas took significantly more calcium (p < 0.05) and iron (p < 0.05), in comparison to students in other areas. Female students in the Kyunsang area took significantly more Vitamin A, phosphorous and iron (p < 0.05), while those in the Seoul area took significantly more Vitamin C (p < 0.01) and calcium (p < 0.05). Male students in the Chungcheong area took significantly less seaweed, in comparison to students in other areas (p < 0.05). Male students in the Seoul area had the highest amount of animal fat and oil, while those in the Incheon area ate the lowest amount of animal oil and fat (p < 0.05). Female students in the Kyunggi area ate the highest amount of fruit, while those in the Incheon area ate the lowest amount of fruit (p < 0.05). Female students in the Incheon area ate the highest amount of seaweed, while those in the Kyunggi area ate the lowest amount of seaweed (p < 0.01). Therefore, it can be concluded that it is necessary to develop dietary supplements to optimize the nutritional status of college students in different areas of Korea.

A Study on Weight-Control Experience, Eating Disorder and Nutrient Intake of College Students Attending Web Class via the Internet

This study was to investigate weight-control experience disorder and nutrient intake of college student attending web class via the internet. The subject were 1200 college students(392 male, 808 female) attending web class concerned with nutrition and weight control. This cross-sectional survey was conducted by self-administered questionnaire and data were analyzed by Students t-test and chi2-test. Nutrient intake collected from 3 day-recalls were analyzed by the Computer Aided Nutritional Analysis Program. Mean height, weight and RBW(relative body weight) of the male college students were 174.7 cm, 68.0 kg and 101.2%, respectively. Mean height, weight and RBW of the female college students were 162.3% cm, 52.7% kg and 95.3% respectively. Among the male college students, low weight were 1.0%, underweight were 12.8%, overweight were 12.5%, obese were 6.9% by RBW standard. Among the female college students, low weight were 5.1%, underweight 30.2%, overweight were 5.2%, obese were 1.5% by RBW standard. Percentages of weight control experience were 21.7% and 67.0% in the male and female college students, respectively. According to RBW, 22.4% of the weight control experience group were low weight or underweight in the female college students but none of weight control experience group were low weight or underweight in the male college students. Percentage of eating disorder were 6.8%(2.8%, male, 8.7% female) in the college students. Among the female college students, most nutrient intakes were significantly lower in the weight-control experienced group compared to the weight-control nonexperienced group. Among the male college students, there was a tendency that the intake of nutrients, except carbohydrate, calcium and vitamin A was higher in the eating disorder group compared to the non-eating disorder group. However, among the female college students, there was a tendency that the intake of nutrients, except calcium and thiamin was lower in the eating disorder group compared to the non-eating disorder group. Therefore, nutrition education via the internet is required for college students to know proper weight loss methods, desirable eating habits and eating disorder problem well.

Survey of Alcoholic and Non-alcoholic Beverage Preference in College Students of the Chonnam Area

This study investigated the intake of alcoholic and non-alcoholic beverages in college students. Five hundred and eighty seven students age 19-30 (432 male and 155 female) responded to the beverage consumption survey. Of the students 19.9% were freshman, 42.2% sophomore, 23% junior, and 15% seniors. Results are summarized as follows : 1) Beer and soju were the most commonly consumed alcoholic beverages by the college students. The amount of beverage normally consumed was 3 cans of beer or 1 bottle of soju. 2) There was no age related change in amount of alcoholic beverage consumed, but preference for liquor rather than beer increased with age. 3) Foods most commonly consumed prior to drinking were cooked rice and milk. 4) Following the drinking of alcoholic beverages the most commonly consumed food or beverage was cold water for both males and females. The next most commonly foods were cooked rice, instant noodles, and cola for males ; and cooked rice, milk, and fruit for females. 5) Cola and pear juice were the preferred non-alcoholic beverages for college students. Also popular among students were date juice for males and orange juice for females. Milk and non-cola carbonated beverages were not commonly consumed. This study provides information for the identification of possible alcoholic beverage related public health risks among college students.

A Study on Iron Nutritional Status of Girls at Puberty in Kangnung Area

This study was designed to assess the iron nutritional status of girls at puberty in Kangnung area. The subjects consisted of 161 adolescents in sixth-grade in primary school and first-grade in middle school girls. Anthropometric measurements were taken for body weight, height, percentage of body fat, and circumferences of waist and hip. Nutrient intakes were assessed by modified 24-hour recall method. Food models and other measuring tools were also used. Fasting blood samples were obtained and analyzed for hemoglobin(Hb) concentration, hematocrit(Hct), serum iron(FE) and total iron binding capacity(TIBC). Mean values for Hb, Hct, Fe, TIBC, TS and serum ferritin were 13.6+/-0.9g/dl, 39.6+/-3.9%, 91.3+/-36.3 microgram/dl, 327.9+/-45.2 microgram/dl, 28.3+/-11.8% and 37.4+/-24.2ng/ml, respectively. Prevalence of iron deficiency greatly varied by indices from 4.8% when judged by Hb to 18.4% by serum Fe concentration. The Hb concentration was positively correlated with Hct(r=0.641), serum iron(r=0.266) and transferrin saturation(r=0.237)(p<0.05). On the other hand, serum ferritin concentration showed significantly negative correlation with TIBC(r=-0.572). Mean daily intake of iron was 14.94mg and heme iron intake was 1.13mg and which was 7.6% of total iron intake. Total absorbable iron calculated by the method of Mosen was 1.38mg and bioavailability of diectary iron was 9.3%. These results suggest that the prevalence of iron deficiency of pubertal girls is very high, therefore the guidelines for diet and social supports, such as, school food service system should be provided to improve their iron status in middle school students.
