Objectives This study examines the status of iodine intake and compares the characteristics (region and thyroid disease prevalence) according to the iodine-sourced food intake pattern in Chinese adults. Methods An online survey was conducted by enrolling 437 Chinese adults aged 18-65 years, living in three regions with different iodine nutritional statuses: Sichuan, Chongqing, and Guangdong. Results The prevalence of thyroid diseases in Sichuan, Chongqing, and Guangdong were 12.5%, 8.5%, and 2.8%, respectively. Conversely, the proportion of people who received thyroid disease-related examinations was a mere 37.5%. Among the subjects who underwent thyroid examination, the prevalence of thyroid disease in the three regions was 32.2%, 21.8%, and 8.0%, respectively. No differences were obtained in the total iodine intake by region, but the type of iodine source foods differed. Regardless of the region, the highest iodine content was obtained from seaweed. However, the iodine content from iodized salt and other foods differed significantly by region. Factor analysis revealed three food intake patterns according to the iodine food source. The study further determined regional differences and differences in the prevalence of thyroid disease according to food intake patterns. Conclusions High salt intake can also increase iodine intake, which is thought to have an effect on the occurrence of iodine-excess thyroid disease. Hence, efforts focused on improving salty eating habits need to be implemented.
Objective This study investigated the current use of university foodservice among Chinese international students in Korea, focusing on the relationship between the frequency of university foodservice use and their dietary life. Methods An online survey was conducted on 452 Chinese international students from February 6 to 12, 2020. The respondents were classified into “the Low-frequency group” (< one time/week; n=144), “the Mid-frequency group” (one-two times/week; n=133), and “the High-frequency group” (≥three times/week; n=175) according to their frequency of using university foodservice. The dietary life was compared among the three groups.
Binominal logistic regression models were constructed to determine the associations between the frequency of university foodservice use and the changes in dietary life. Results More than 2/3 (68.1%) of the respondents used the university foodservice at least once per week. Chinese international students who were males and Han Chinese people, lived on campus, had stayed longer in Korea, and had no cooking facilities tended to use the university foodservice more often. The level of satisfaction with the university foodservice was not high (3.52 out of 5-points). Only 20% ate meals three times per day, and only 22% ate breakfast almost every day. The frequencies of overeating and skipping meals increased after studying in Korea. The frequency of university foodservice use, along with the length of residence in Korea, was associated with these negative changes in dietary life. Overeating (OR=2.11) and skipping meals (OR=1.79) were more likely to increase after studying in Korea in the Mid-frequency group than in the High-frequency group. Conclusions The frequency of university foodservice use was associated with the dietary life of Chinese international students in Korea. A high frequency (i.e. ≥three times/week) of using university foodservice may positively affect the dietary life of Chinese international students in Korea.

OBJECTIVES This study was conducted to survey the related factors of metabolic syndrome of Chinese workers aged 20 years and above. METHODS The study was conducted at three locations in Shandong, China, currently working and took the physical examination (PE) within one year in the area as target participants. Personal characteristics, physical and biochemical results based on the PE, lifestyle habits, and food intake of the participants were used to analyze the relationship with metabolic syndrome. RESULTS Results showed that overall, thirty-one subjects (22.5%) had metabolic syndrome, twenty males (32.7%) and eleven females (14.2%). Metabolic syndrome was related to age, gender, educational level and occupational type with more risk in male (P < 0.05), people of older age (P < 0.001), low educational level (P < 0.05) and nonoffice workers (P < 0.01). According to the life style scores, lifestyle evaluation showed specifically alcohol consumption and smoking (P < 0.001) and stress management (P < 0.05) as important factors that were associated with the metabolic syndrome. High calorie (P < 0.01) and carbohydrate (P < 0.01) intakes were observed on male participants with metabolic syndrome in comparison to the non-metabolic syndrome but no significant difference on female participants. CONCLUSIONS This results of this study can be used as significant supporting data to prevent and control metabolic syndrome in Chinese workers.
OBJECTIVES This study was conducted to investigate the nutritional status and dietary behavior of Korean and Chinese elementary school children using Nutritional Quotient (NQ). METHODS The survey was conducted by distributing questionnaires to the parents of the child, after selecting four elementary schools located in Pusan city of Korea and three elementary schools located in Luoyang city, Henan Province of China, from Grade 1 to Grade 6 in each school. RESULTS The NQ scores of Korean children and Chinese children were 64.99 and 66.57, respectively, which did not show a statistically significant difference. Korean children significantly showed higher diversity score (p<0.001) than Chinese, but Chinese children significantly showed higher moderation (p < 0.001), regularity (p < 0.001) and practice score (p < 0.01) than Korean. NQ grades showed a statistically significant difference. According to food security of the household, NQ scores of the Chinese children of secure household were significantly higher than those of food insecurity household (p < 0.01). In particular, it showed a significant difference in the practice (p < 0.001), moderation (p < 0.05) and regularity score (p < 0.05). Korean children's NQ score showed a significant correlation with the score of following the Dietary Guidelines of parents, but Chinese did not show such a correlation. CONCLUSIONS There were differences in children's dietary behaviors and parents' impact to children's dietary attitude between Korean and Chinese. NQ developed for Korean could be successfully applied to Chinese.

OBJECTIVES This study was conducted to investigate Chinese female marriage immigrants' dietary life after immigration to Korea, focusing on comparison between Han-Chinese (traditional Chinese) and Korean-Chinese (Chinese of Korean descent). METHODS An in-person survey was conducted with women married to Korean men, having one child or more aged 1-6 years old, and having resided in Korea for at least one year before the survey. The data were collected from the 309 respondents comprising 151 Han-Chinese and 158 Korean-Chinese in the summer of 2013. RESULTS Overall, there was no significant difference in dietary practice, dietary acculturation, dietary behavior, dietary habits, and food intake between the Han-Chinese and the Korean-Chinese respondents. Over 50% of the respondents ate Korean food every day. The overall level of dietary acculturation was about 3.5 out of 5 points. The average score of healthy dietary behavior was a little bit higher than 3 out of 5 points. Approximately 3/4 of the respondents showed increasing frequency of eating out. The respondents reporting increase food diversity were over 70%. Decreased frequency of skipping meal was about 60% of the respondents. Over 50% of the respondents showed increasing consumption of Kimchi, vegetables, fruit, and meat. CONCLUSIONS Dietary life of Korean-Chinese female marriage immigrants was similar to that of Han-Chinese female marriage immigrants after immigration to Korea. The results from this study suggest that not only Han-Chinese but also Korean-Chinese should be targeted in various diet-related acculturation support programs as important multicultural populations in Korea.

The purpose of this study was to investigate the effects of nutrition education on nutrition knowledge, dietary attitude and dietary intake of Chinese college students in Korea. The subjects were 64 Chinese college students in Korea (educated group, 32 students vs. non-educated group, 32 students). Educated group was lessoned as group and/or individual. Nutrition education program consisted of four lessons (40min / lesson), '6 major nutrients & function (group lesson)', '6 food group and sources (group lesson)', 'personalized daily needed energy and food exchange units using Food Exchange System (individual lesson)', and 'smart choice of snacks and eating-out foods (group lesson)'. We examined the differences between educated group and non-educated group in nutrition knowledge, dietary attitudes and nutrients intake. After education, there were positive improvements on nutrition knowledge: 'function and foods of 6 nutrients', on dietary attitudes: 'type of breakfast' in educated group. In the evaluation of nutrient intakes according to Dietary Reference Intakes for Korean (KDRI), there were positive improvements on intake levels of riboflavin, fiber, vitamin B6, vitamin C, folate, Ca and K in the educated group. In the index of nutrition quality (INQ), nutrition adequacy ratio (NAR) and mean nutrition adequacy ratio (MAR) were significantly increased in the educated group. In conclusion, it is possible to improve nutrition knowledge, dietary attitude and dietary intake of Chinese college students in Korea through the nutrition education focused on personalized daily needed energy and food exchange units.

This study aimed to analyze about the perception in obesity and body somatotype of university students in Korea and in China. This study provides the basic data of nutrition education for university student healthy weight program in China. The subjects were selected 240 university students of Korea and China. Two types of qualitative and quantitative questionnaires were used to analyze the attitude and body somatotype of subjects. The results of this study were as follows: The average BMI of Korean and Chinese male students was 22.3 and 22.5, respectively while the average BMI of Korean and Chinese female students was 19.8 and 19.7, respectively. In the past three years, the weight gain of Chinese students was higher than that of Korean students. Chinese students preferred the overweight body somatotype more compared to the Korean students. The overweight and obese students had more obvious insufficiency in body somatotype perception. The overweight and obese students had higher tendency to 'eat more meat', 'drink carbonated beverages', 'eat convenience food', 'take fast food' and 'drink alcohol' than the normal and low weight group. The major reasons for Korean students to control weight were 'appearance' and 'self confidence', while the major reasons for Chinese students were 'health' and 'employment'. From the results of associative group analysis (AGA), Chinese students had different semantic value of 'obese' than Korean students. Considering of the food transition status in China, it may be necessary to develop more suitable education programs for weight control for Chinese university students.

The purposes of this study was to investigate importance and performance for coffee quality attributes in Korean and Chinese university students by 3 types of coffee; coffee in coffee houses, coffee in vending machines and canned/bottled coffee. Survey was done for 360 students in Daejeon with developed questionnaires including general information, favorite type of coffee and 15 quality attributes of coffee. Finally, data from 168 Korean and 126 Chinese university students was used for statistical analysis by SPSS 18.0 package program. Results of this study were as follows: for favorite type of coffee, the rates of coffee in coffee houses, coffee in vending machines and canned/bottled coffee were 43.0% 34.8% and 22.2% in Korean students and 8.7%, 78.0%, and 12.2% in Chinese students, respectively. Comparing Chinese students and Korean students showed higher importance for several quality attributes of coffee in coffee house (p < 0.05), but lower importance for most quality-attributes of coffee in vending machine (p < 0.05) and canned/bottled coffee (p < 0.05). According to importance and performance analysis, strategies for increasing satisfaction were to improve 'price' of canned/bottled coffee in Korean students, and 'taste', 'volume', 'concentration' and 'variety' of canned/bottled coffee and 'freshness' of coffee in vending machine in Chinese students. These results suggested that differentiated marketing plans between Korean and Chinese university students should be needed in coffee industry.
