The relationship between smartphone usage and eating behavior for elementary school students in Gangneung, South Korea: cross-sectional study

Objectives
This study investigates the relationship between smartphone usage and eating behavior among elementary school students. Methods: This survey was conducted on 4th- to 6th-grade students at elementary schools in Gangneung from September 6th to September 15th, 2023. Of the 129 copies of the questionnaire that were distributed to 5 schools, 66 copies (51.2%) were returned. Results: Compared to the nationwide statistics, the smartphone ownership rate of elementary school students in Gangneung was lower, but the rate of smartphone overdependence was higher. Smartphone dependence was 21.12 points for study subjects and 26.00 points for the overdependence risk group (Org). Compared to national statistics, the self-control failure factor was higher, so study participants in Gangneung City are thought to have great difficulty with self-control. The Org’s weekend smartphone use time of 7.54 hours was significantly more than the general user group (Gug)’s 4.06 hours. The number of days in which the Org consumed late-night snacks per week was 2.92 days, and the Gug had 2.15 days, but the difference was not significant. Eating fast food showed a positive correlation with eating sweet food, eating fatty food, and eating heavily seasoned food. It was found that frequent consumption of fast food is closely correlated with unhealthy eating behavior. Weekend smartphone use time showed a significant positive correlation with smartphone dependence and the number of days late-night snacks consumed per week. Conclusions: Study participants in Gangneung are more dependent on smartphones than national statistics. Smartphone dependence had a negative correlation with healthy eating behavior and a correlation with average unhealthy eating behavior.

Gender differences in dessert satisfaction and purchase behaviors among university students in Gwangju: a preliminary study

Objectives
This study aimed to examine the effect of eating habits and dietary attitudes on dessert consumption among university students in Gwangju Province, South Korea.
Methods
A survey was conducted from May to June 2022. Out of 300 distributed questionnaires, 261 valid responses were included in the analysis. The survey assessed dessert selection, satisfaction, consumer attitudes and behaviors, as well as factors influencing satisfaction.
Results
Both genders reported purchasing desserts 2 to 3 times per week, primarily after lunch, due to the convenience of dessert accessibility. Males favored ice cream, bakery items, and fruits, while females preferred bakery items, ice cream, and fruits in that sequence. ‘Having fun’ was identified as the most common motivation for dessert consumption post-meal. Notable gender disparities emerged regarding perceptions of dessert consumption, including its role in stress relief, potential for nutritional imbalance, positive effects, and preferences for seasonal menus. Significant gender-based differences also manifested in intentions to purchase dessert, responsiveness to price changes, and inclination to recommend desserts to others.
Conclusions
This study offers foundational data on university students’ dessert purchasing behaviors, perceptions, and satisfaction levels, intending to inform strategies promoting healthier dietary habits.

Analysis of Factors Affecting Breakfast Eating Behavior of Children in Indonesia: An Application of the Health Belief Model

OBJECTIVES
This study investigates the current state of consuming breakfast among elementary school students residing in Malang, East Java, Indonesia, and to identify factors that influence breakfast behavior.
METHODS
The research model was set up as per the health belief model, and slightly modified by adding the subjective normative factors of the theory of planned behavior. The survey was conducted from July 17 to August 15, 2017 using a questionnaire, after receiving the permission PNU IRB (2017_60_HR).
RESULTS
The subjects were 77 boys (49.4%) and 79 girls (50.6%) suffering from malnutrition with anemia (21.2%) and stunting ratio of Height for Age Z Score (HAZ) (11.5%). Furthermore, moderate weakness (14.8%) and overweight and obesity (12.3%) by Body Mass Index for Age Z Score (BMIZ) were coexistent. According to the results obtained for breakfast, 21.8% did not eat breakfast before school, with 18.8% of the reasons for skipping breakfast being attributed to lack of food. Even for subjects partaking breakfast, only about 10% had a good balanced diet. The average score of behavioral intention on eating breakfast was 2.60 ± 0.58. The perceived sensitivity, perceived severity, perceived benefits, and self-efficacy of the health belief model correlated with breakfast behavior. Of these, self-efficacy (β=0.447, R²=0.200) and perceived sensitivity (β=0.373, R²=0.139) had the greatest effect on breakfast behavior. Mother was the largest impact person among children.
CONCLUSIONS
In order to increase the level of breakfast behavior intention among children surveyed in Indonesia, we determined the effectiveness by focus on education which helps the children recognize to be more likely to get sick when they don't have breakfast, and increase their confidence in ability to have breakfast on their own. We believe there is a necessity to seek ways to provide indirect intervention through mothers, as well as impart direct nutrition education to children.

Effects of Daily Stress on Dietary Pattern among Elementary School Children in Seongnam City

OBJECTIVES
The study was conducted to investigate the relationship between several stress measures in everyday life, emotional eating behavior, and dietary pattern (snacks, fatty foods, sweet beverages, fruits and vegetables) in school-aged children.
METHODS
One hundred and ninety-four students of an elementary school located in Seongnam City participated in the study. The students responded to the survey questionnaire by self-report, which consisted of items regarding general characteristics, height, weight, dietary habits, frequency of consuming healthy (fruits and vegetables) and unhealthy foods (snacks, fatty foods, and sweet beverages), emotional eating behavior, and daily stress. Correlational analysis was performed to examine the relationship between stress, emotional eating behavior, and dietary pattern, and Poisson and logistic regression analyses were conducted to investigate the effects of stress on dietary pattern.
RESULTS
Positive correlations were found between all stress factors and emotional eating behavior and between the friend and personal factor (one of the stress factors) and the consumption of sweet beverages. The frequency of consuming sweet beverages was 2.6 times higher in the high stress group than in the low stress group (95% CI).
CONCLUSIONS
Children's daily stress was associated with emotional eating behavior and undesirable dietary pattern such as consumption of sweet beverages.

Comparison of Nutritional Status and Eating Behavior of Korean and Chinese Children using the Nutrition Quotient (NQ)

OBJECTIVES
This study was conducted to investigate the nutritional status and dietary behavior of Korean and Chinese elementary school children using Nutritional Quotient (NQ).
METHODS
The survey was conducted by distributing questionnaires to the parents of the child, after selecting four elementary schools located in Pusan city of Korea and three elementary schools located in Luoyang city, Henan Province of China, from Grade 1 to Grade 6 in each school.
RESULTS
The NQ scores of Korean children and Chinese children were 64.99 and 66.57, respectively, which did not show a statistically significant difference. Korean children significantly showed higher diversity score (p<0.001) than Chinese, but Chinese children significantly showed higher moderation (p < 0.001), regularity (p < 0.001) and practice score (p < 0.01) than Korean. NQ grades showed a statistically significant difference. According to food security of the household, NQ scores of the Chinese children of secure household were significantly higher than those of food insecurity household (p < 0.01). In particular, it showed a significant difference in the practice (p < 0.001), moderation (p < 0.05) and regularity score (p < 0.05). Korean children's NQ score showed a significant correlation with the score of following the Dietary Guidelines of parents, but Chinese did not show such a correlation.
CONCLUSIONS
There were differences in children's dietary behaviors and parents' impact to children's dietary attitude between Korean and Chinese. NQ developed for Korean could be successfully applied to Chinese.

Associations between Eating Behavior and the Eating Patterns of Female College Students Across the Menstrual Cycle

OBJECTIVES
The associations between the eating behavior and energy and macronutrient intake from meals and snacks consumed during different times of the day across the menstrual cycle were investigated in 74 healthy female college students.
METHODS
A 9-day food record was collected during the last 3 days before menstrual onset (phase 1) and the first 3 days after menstrual onset (phase 2) and from the 4th to the 6th day after menstrual onset (phase 3), respectively. Anthropometry was assessed and eating behaviors were measured using the Dutch Eating Behavior Questionnaire (DEBQ).
RESULTS
External eating was the most prevalent type of eating behavior, followed by restrained eating and emotional eating. Restrained eating was positively associated with energy, carbohydrate and lipid intake at the breakfast and midmorning snack during phase 3. However, emotional eating was also positively related to energy and macronutrient intake at the dinner and after-dinner snack during phase 1 and phase 3, with higher level detected in the phase 1. The association of emotional eating with the snack consumption was highest in phase 1. External eating was positively associated with energy and macronutrient intakes at the dinner and after-dinner snack across the three phases, the highest level being phase 1. In addition, restrained eating was positively associated with the weight, body mass index(BMI), fat mass, waist and hip girth of the subjects.
CONCLUSIONS
Eating behaviors varied with regard to meals and snacks consumed during different times of the day across the three menstrual phases. Dinner and afterdinner snack consumption in premenstrual phase could be considered as a time when women are more prone to overconsumption and uncontrolled eating.

Relationship between Eating Style and Food Intake of Healthy Female College Students during Chuseok Holidays

OBJECTIVES
The present study was conducted to investigate associations between eating style and food intake of 45 female college students during Chuseok holidays.
METHODS
A ten-day food record was obtained and divided into two parts. The first five days (September 20-24, 2015) were considered as a 'Normal Day (ND 1-5)' and the subsequent five days (September 25-29) as 'Holiday (HD6-10)'. The middle three days (September 26-28) of the holidays were considered as the 'Peak Holiday (PD7-9)'. Eating behaviors were measured using the Dutch Eating Behavior Questionnaire (DEBQ) and anthropometry was assessed in all study participants. Participants were grouped by cluster analysis according to the mean energy intake of the first three days of the Holiday.
RESULTS
Participants had a low-normal range of BMI and they were carefully restricting their food intake at Normal Day. Even the food intake did not exceed 2000 kcal per day during the Peak Holiday. External eating was the most prevalent type of eating behavior, followed by restrained eating and emotional eating. Normal energy and fat intake were correlated with the external eating subscale of the DEBQ. Restrained eating was associated with the weight, BMI, fat mass, waist, and hip girth of the subjects. Compared to the Normal Day, they overate during the Holiday with different eating styles including 'restraint', 'disinhibition', and 'fluctuation'. Therefore, neither eating behaviors nor anthropometry was associated with food intake during the Holiday. Although eating behaviors and anthropometric measures were not different among eating style clusters, the food intakes of disinhibition cluster were higher than those of restraint cluster during all the study periods.
CONCLUSIONS
Subjects can be classified with the restraint, disinhibition, and fluctuation clusters. However, eating behaviors and anthropometry were not different among three clusters.

Study on the Improvement of Dietary Life of Cancer Patients during Treatment by Nutrition Counseling

OBJECTIVES
This study investigated the improvement of food habits and eating behavior of cancer patients during treatment through the continuous nutrition counseling and monitoring.
METHODS
Thirty cancer patients during treatment were participated in this study, and the first nutrition counseling and the first and second monitoring were conducted after 2-3 week intervals.
RESULTS
As a result of the nutrition counseling and monitoring, all patients improved to a great extent to consume 3 meals a day. The frequency of having breakfast was significantly increased with the nutrition counseling and continuous monitoring as well. The meal fixed quantity was stabilized and the eating speed slowed down as more nutrition counseling were done. The snack intakes of patients did not show any significant difference after the nutrition counseling but showed a slight decline after the monitoring. The frequencies of eating out and a late-night meal significantly decreased after the monitoring. The intakes of fish, meat, vegetables, milk and fruits needed for a well-balanced diet significantly increased as more nutrition counseling were done. The intakes of processed food were significantly decreased after the nutrition counseling and the intakes of fast food were significantly decreased as more nutrition counseling were done. The water intake of patients also significantly increased. In the eating behavior related to health, the frequency of drinking alcohol significantly decreased after nutrition counseling consultation and no patients had dietary supplements after the first monitoring.
CONCLUSIONS
These results suggested that continuous nutrition counseling is effective in improving eating habits of cancer patients.

Evaluation of Nutrition Quotient and Related Factors in Preschool Children

OBJECTIVES
This study was conducted to evaluate the nutrition quotient (NQ) by gender and understand which factors influence NQ in preschool children.
METHODS
Subjects were 245 children (110 boys, 135 girls) aged 4-6 years and their parents. The questionnaire composed of demographic characteristics, eating behavior factors and the NQ questions. The NQ consisted of 19 food behavior checklist items and all items were grouped into 5 factors: balance, diversity, moderation, regularity, and practice. Inbody J05, a measurement device that measures individual's body composition was used to measure children's anthropometric data. All data were statistically analyzed by SPSS program (Ver. 20) and the statistical differences in variables were evaluated by Student t-test, chi2-test, One-way ANOVA and Duncan's multiple range test.
RESULTS
The total NQ score of the subjects was 65.3. The NQ score of girls (67.0) was significantly higher than that of the boys (63.2) (p<0.01). The girls' average scores of NQ factors including diversity (p<0.01) and practice (p<0.05) were higher than those of the boys. The analysis of related-factors influencing NQ scores showed that there was a significant difference among the groups according to feeding methods during infancy (p<0.05), breast feeding group being the highest. Furthermore, the NQ score showed a significant difference depending on how to correct children's unbalanced diet as well as parents' nutrition knowledge. The NQ score of obesity group tended to be lower than that of underweight group although there was no significant difference.
CONCLUSIONS
Overall results indicated that the girls had better quality of diet and eating habits than the boys. Children and their parents need proper nutrition education and counseling to correct children's eating habits and to improve diet quality in kindergartens and in children care centers.

Preference and the Frequency of Processed Food Intake according to the Type of Residence of College Students in Korea

OBJECTIVES
The purpose of this study was to investigate the eating behavior toward processed foods among college students who live in different types of residence.
METHODS
This is a cross-sectional study targeting a total of 476 college students living at home with their family, living in a rental house with self-boarding, living in a lodging house, and living in a dormitory. Eating behaviors, including preference and the frequency of processed food intake were surveyed and compared according to the type of residence.
RESULTS
The rate of skipping a meal was significantly higher among students who reported self-boarding than those living in other types of residences. The main reason for skipping meals was that they got up late. In the entire study population, the main reason for consuming processed food was easy-to-cook (33.8%) and the primary consideration for choosing processed food was the price (54.0%). The processed food the most favored by college students was the processed noodles; those living at home with their family or living in a dormitory preferred milk products; those living in a rental house with self-boarding or in a lodging house preferred confectionery, retort pouch, convenience food, and canned/bottled food. The frequency of processed food intake was significantly higher in the students who reported self-boarding than those living in other types of residences (p < 0.001).
CONCLUSIONS
Students' preference toward processed foods differed according to their type of residence. The frequency of processed food intake was significantly higher in students who reported self-boarding indicating that the type of residence of student is associated with their choices and consumption of processed foods.

Sodium-related Eating Behaviors of Parents and Its Relationship to Eating Behaviors of Their Preschool Children

OBJECTIVES
The purpose of this study was to examine mothers' eating behavior and salty taste and its relationship to their preschool children's eating behaviors.
METHODS
This survey was conducted by self-report after getting permission from sixty one mothers who had preschool children. The questionnaire was focused on mothers' salty test and salt-related eating behavior of both mothers and their preschool children.
RESULTS
Comparison of eating behavior score between mother and their preschoolers showed that mothers' score was lower than their preschoolers' one. Salty foods with high preference and intake frequency by mothers and preschoolers were 'salted dry fish, stock fish' and 'soup, stew, noodle soup'. In addition, there were strong positive correlations between preference and intake frequency on most of the salty food items. Intake of Ramen soup was significantly different (p < 0.001) between the two groups. Preschoolers ate less ramen soup compared to their mothers.
CONCLUSIONS
Overall results showed that preschoolers' dietary behavior was better than the mothers' one. However, preschoolers' dietary behavior was significantly influenced by their mothers. Therefore, mothers should have an appropriate eating behavior in order to have a positive influence on their children's eating habits. In addition, the results suggested that proper nutrition education is needed for mothers of preschool children.

The Development and Validation of Eating Behavior Test Form for Infants and Young Children

OBJECTIVES
This study was conducted to develop and validate Eating Behaviors Test form (EBT) for infants and young children, including eating behaviors of their parents and parental feeding practices.
METHODS
Draft version of EBT form was developed after a pretest on 83 mothers. It was consisted of 42 questions including 3 components; eating behavior of children, eating behavior of parents, and parental feeding practices. Using these questionnaires, the first survey was conducted on 320 infants and children, 1 to 6 year old, for exploratory factor analysis, and the second survey was collected on 731 infants and children for confirmatory factor analysis.
RESULTS
Exploratory factor analysis on 42 questions of EBT form resulted in 3 factor model for children's eating behavior, 3 factor model for parents' eating behavior, and 1 factor model for parental feeding practices. Three factors for children's eating behavior could be explained as follows; factor 1, pickiness (reliability alpha=0.89; explanation of variance=27.79), factor 2, over activity (alpha=0.80, explanation of variance=16.51), and factor 3, irregularity (alpha=0.59, explanation of variance=10.01). Three factors for mother's eating behavior could be explained as follows; factor 1,irregularities (alpha=0.73, explanation of variance=21.73), factor 2, pickiness (alpha=0.65, explanation of variance= 20.16), and factor 3, permissiveness (alpha=0.60, explanation of variance=19.13). Confirmatory factor analysis confirmed an acceptance fit for these models. Internal consistencies for these factors were above 0.6.
CONCLUSIONS
Our results indicated that EBT form is a valid tool to measure comprehensive eating and feeding behaviors for infants and young children.

Evaluation of Food Behavior and Nutritional Status of Preschool Children in Nowon-gu of Seoul by Using Nutrition Quotient (NQ)

The objectives of this study were to assess food behavior and nutritional status of preschool children by using the Nutrition Quotient (NQ) for children and children's growth index. The subjects for this study were 424, 5-year old children, who enrolled in child-care centers (n = 219) and kindergartens (n = 205) in Nowon-gu, Seoul. The NQ was examined by NQ questionnaire which consisted of 19 food behavior checklist items. Their items were grouped into 5 categories: balance, diversity, moderation, regularity, and practice. Children's anthropometric measurements were performed by using InBody J05. All data were statistically analyzed by SAS 9.3 and significant difference was evaluated by Student's t-test and X2-test. The rates of overweight and obesity for subjects were 11.1% and 3.3%, respectively. Total NQ score of the subjects was 65.1, which was within medium grade. The NQ score of kindergartens (66.1) was higher than that of child-care center (64.2), showing significant difference by institution type. In addition, the NQ score of obesity was significantly lower than that of normal weight subjects. The scores of balance (p < 0.05) and regularity factor (p < 0.001) were higher in kindergarten compared to child-care center. Particularly, the frequency of consumption of white milk and Ramyeon was higher (p < 0.001) and lower (p < 0.05) respectively in kindergarten compared to child-care center. Frequencies of meal regularity (P < 0.01) and breakfast eating (p < 0.001) were also higher in kindergarten compared to child-care center. These results indicate that kindergarten's children had better eating habits than those of child-care center. Overall analysis of items for food behavior checklists implies that children in Nowon-gu are short of vegetables consumption. Therefore, children and their parents need proper nutrition education and counseling to correct their eating habits and to improve their nutritional status.

Applying the PRECEDE-PROCEED model, the nutrition education program was developed and focused on changing beliefs, increasing nutrition knowledge and consumption of vegetables & fruits (V/F) and dairy foods. Subjects were children attending a childcare center in Seoulwho were grouped into education (n = 33) and control group (n = 32). Education group received four sessions of nutrition education during 2011 fall. Both groups completed the questionnaire at pretest and posttest, measuring nutrition knowledge, beliefs, and preferences of V/F and eating behaviors. Compared to control group, education group made significant gains in total score of nutrition knowledge after the education (p < 0.05). In addition, the pretest-posttest changes in total score of beliefs regarding V/F consumption and eating behaviors were higher in the education group than in the control group (p < 0.05). Two groups were significantly different in the pretest-posttest changes in specific beliefs regarding the benefits of V/F consumption and some eating behavior. However, there were no changes in the preferences of vegetables or fruits between the two groups after the education. The consumption of V/F and dairy foods was not significantly different after the education. This study revealed that nutrition education for preschoolers was effective in improving nutrition knowledge and perceived benefits regarding V/F consumption and specific eating behavior. This study suggested that more intensive education is needed to induce changes in eating behaviors. This program can be used in nutrition education of children at the childcare centers or kindergartens.

Effect of Nutrition Education and Exercise Intervention on Physical and Dietary Patterns of Some Obese Children

This study set out to investigate the effects of 16-week nutrition education and exercise intervention run by a public health center on the physical activities and dietary patterns of obese children at the before, after, and after one month point. After the program, the obese index of the obese children dropped by 5.9% from 38.4% to 32.5%. One month after the end of the program, their obese index increased by 1.4% to 33.9% (p < 0.001). The obese children's hours of walking of physical activities increased to 2.6 hours from 1.2 hours after the program and remained at the 2.6 hours range one month after the end of the program (p < 0.01). The total scores of their food habits increased to 10.4 points from 9.1 points after the program and 10.3 points one month after the end of the program with significant differences (p < 0.01). The total scores of their eating behavior made a significant increase to 6.5 points from 5.3 points after the program and then dropped to 5.9 points one month after the end of the program (p < 0.05). As for changes to their dietary pattern scores according to the obese index, only the food habits scores showed significant main effects of term (p < 0.05). According to these results, there is still a need to develop proper programs to help them increase regular exercise, improve their physical activities by cutting down time with TV, computer, Internet, and video games, and enhance their nutritional knowledge and to provide them with ongoing management and guidance until the improved food habits and eating behavior become part of their habits.

Association of Whole Grain Consumption with Socio-Demographic and Eating Behavior Factors in a Korean Population: Based on 2007-2008 Korea National Health and Nutrition Examination Survey

The objective of the current study was to examine associations of whole grain consumption with socio-demographic (i.e.: sex, age, household income, education, marriage status) and certain eating behavior factors (i.e.: dish source, eating place, meal type) among a generally healthy Korean population. Using twenty-four hour recall data from the 2007-2008 National Health and Nutrition Examination Surveys, whole grain intake (g/day) was calculated for a total of 8,836 generally healthy Koreans aged 6 years and higher. The study subjects had very low whole grain intake. Specifically approximately 60% of the subjects reported no whole grain consumption on the survey day, and mean daily intake ranged from 8.0 g to 15.1 g in different gender and age groups. Living with a spouse was found to be a positive environment factor for whole grain consumption, especially among men. As household income levels increased, whole grain consumption status also improved. The proportion of non-consumer was lowest in a 6-19 year group, and mean intake amount was highest in middle-aged adults. Major dish sources for whole grain consumption included boiled rice with mixed grains, corn, boiled rice with brown rice, cereal products, and other types of boiled rice. It was found that whole grain consumption was highly affected by eating places rather than meal types. The best contributing eating place was home in each age and gender group. The study findings may be useful in planning nutrition education strategy and formulating dietary behavior guidelines for whole grain consumption improvement.

Nutritional Status and Eating Behavior of Lactating Women in Daejeon

Nutrients intake status of 73 lactating women, that is 45 breast feeding (BF), 13 formula feeding (FF) and 15 mixed feeding (MF), living in Daejeon was investigated. Self-recorded food intakes for two weekdays and eating behaviors using questionnaires were surveyed from May to August 2008. Subjects aged 29.2 +/- 3.4 years and their infants aged 8.2 +/- 3.2 months. Body mass index of the subjects was 21.0 +/- 3.2. Of the subjects 23.3% were employed. Daily energy intake was 1953 +/- 391 kcal. Mean adequacy ratio (MAR) was 0.77 +/- 0.14 and was higher in FF (0.86 +/- 0.13) than in BF (0.76 +/- 0.11) and MF (0.72 +/- 0.18). Nutrients that over 50% of the subjects took less than estimated average requirement were vitamin A, riboflavin, folate, vitamin C and calcium. And index of nutritional qualities of those 5 nutrients were below one Forty six and sixths percent (46.6%) of the subjects showed GMFVD = 11111 pattern of five food group intakes and 57.5% took meals three times daily, 56.2% skipped often breakfast, and 64.4% dined out two times and more per week. Subjects having lower MAR (< 0.72, n = 24), compared with those having higher MAR (> or = 0.83, n = 24), showed more skipping daily meals and less frequency of eating-out, and took less legumes, vegetables, fishes, and milk. As the results, intakes of calcium, vitamin A, riboflavin, folate, and vitamin C were insufficient in lactating women, especially in BF and MF mothers. Meal skipping and low intakes of dairy foods, legumes, vegetables, and fishes might have adverse influences on nutritional status of lactating women. Accordingly, nutrition care program for lactating women should be focused on intake of three meals daily and a variety of food.

Nutrition Label Use, Self-Efficacy, Snacking and Eating Behavior of Middle School Students in Kyunggi Area

This study was designed to examine nutrition label use, self-efficacy, snacking and eating behaviors of middle school students, and to investigate if these characteristics were different by nutrition label use. A cross-sectional survey was conducted to 348 middle school students in Kyunggi, Korea. About a third of subjects read nutrition labels when they purchased snacks/packaged foods. Most nutrition label users were interested in reading information on calories, fat and trans-fat. Self-efficacy of eating/selecting snacks or general nutrition behavior was moderate (mean score: 44.4 out of 60), with significantly higher score in nutrition label users compared to nonusers (p < 0.001). Nutrition label users felt more confident in 9 items out of 15 items of self-efficacy, such as "taking fruits instead of cookies/candy for snack" (p < 0.001), "choosing milk instead of soft drink" (p < 0.01), "not having snacks after dinner" and "avoiding processed foods for snacks" (p < 0.05). Subjects had snacks 1.3 times a day, and nutrition label nonusers consumed snacks more frequently than the counterparts (p < 0.01). About 55% of nutrition label users and 64.7% of nonusers mainly purchased snacks for themselves (p < 0.05). Commonly purchased snacks by adolescents were ice cream, cookies/chips, breads and ramen. Major considerations in purchasing snacks were taste (46.9%) and price (34.6%). In selecting snacks, the influence of friends and parents was greater than the other sources. Based on eating frequency of snacks, nutrition label users were more likely to consume healthy snacks, such as fruit juices, vegetables, milk, yogurt, and potato/sweet potato than nonusers (p < 0.05). Eating behaviors measured by 15 items scored 33.6 out of 45. Nutrition label users showed better eating behaviors, such as "eating meals slowly", "eating foods cooked with plant oil", and "eating out less frequently" (p < 0.05). Study results showed that majority of adolescents did not read nutrition labels, selected snacks for themselves and had somewhat unhealthy foods for snacks. This study also showed the differences in self-efficacy, snacking and eating behaviors between nutrition label users and nonusers. In nutrition education, it is necessary to stress the importance and skills for reading nutrition labels. It is also needed to help adolescents to select healthy snacks and have desirable eating behaviors, as well as increasing self-efficacy.

The purpose of this study was to examine vegetable & fruit (V/F) intakes, beliefs and self-efficacy regarding V/F consumption, nutrition knowledge and eating behavior of elementary students. A survey was conducted to the 4th graders (n = 234) at two elementary schools in Guri, Kyunggi-do. About one-fourth of subjects were overweight or obese. Subjects had 4.2 servings of V/F a day, consuming 340.2 g of V/F. Girls consumed significantly more amounts of vegetables than boys (p < 0.05). Girls were more favorable regarding V/F consumption (p < 0.01), and believed more strongly on advantages of having V/F such as "good for skin", constipation prevention (p < 0.001) and cancer prevention (p < 0.05). Boys felt more strongly in disadvantages or barriers of eating V/F, including mother's cooking time constraints (p < 0.01), lack of past experience of eating V/F, and family members' disliking of V/F (p < 0.05). Girls felt more confident in eating V/F (p < 0.05) than boys; they also felt more confident in specific items of "eating fruits/salads instead of cookies/chips for snack" and "eating fruit juice/vegetable juice instead of soda" (p < 0.01). Subjects showed low level of nutrition knowledge, especially in items such as balanced meals, recommended servings of V/F and vitamin deficiency. Compared to boys, girls had more desirable eating behavior such as eating adequate amount of meals (p < 0.001), having a variety of foods, eating fruits daily, and having fatty foods less frequently (p < 0.05). Intakes of Ca and K were quite below the recommended level, while the intakes of protein, Na and vitamin A intake were much above the Dietary Reference Intakes (DRI) for 9-11 old children. Nutrient intakes expressed as %DRI was higher in girls for vitamin A (p < 0.01), energy and riboflavin (p < 0.05). High V/F consumption group (> or = 5 servings of V/F a day) compared to the counterparts showed higher self-efficacy and had better eating behaviors. Nutrition education for children should focus on increasing consumption of V/F, by helping them to increase self-efficacy for eating V/F and to recognize the benefits and reduce the barriers of eating V/F, especially in boys. It is also needed to provide nutrition information for balanced meals or increasing V/F consumption, and help the children to adopt desirable eating behavior.

Subjects of this study were 1,211 children, 645 boys and 566 girls, attending 6 elementary schools (4th, 5th and 6th graders). 389 children lived in Seoul and 822 children lived in other regions. Mean height, weight and BMI of subjects were 142.4 cm, 38.7 kg and 18.8 kg/m2 respectively. 70.5% of the subjects had breakfast every day and 12.4% of the subjects skipped breakfast. There were significant differences between boys and girls in causes of skipping breakfast, overeating, meal volume, and duration of meals. Girls showed more desirable eating behavior than boys (p < 0.001). Scores for specific eating behaviors such as unbalanced diet and intake of meats and vegetables were better in girls (p < 0.001), and boys ate meals faster than girls (p > 0.001). There were significant differences between Seoul and other regions in eating behavior. Eating behavior scores of children in other regions were higher than in Seoul (p < 0.01). Children in Seoul had a higher frequency of watching television with meals. Frequency of fruits (p < 0.001), milk products (p < 0.01), and meats (p < 0.05) of children in Seoul were higher than other regions. Otherwise the frequency of simple sugar products of children in other regions was higher than Seoul (p < 0.001). Frequency of green vegetables was higher for girls than boys, and frequency of fast foods was higher for boys than girls. These results showed that in nutrition education programs designed to improve the nutritional health of elementary school children, we need to focus more on differences in the children's food habits and eating behaviors by gender and regions. In consideration of these differences, such educational programs need to have a different emphasis for each gender and regions to serve its specific needs.

Effects of Weight Control Program on Food Habits, Eating Behaviors and Life Habits in Obese Elementary School Children

This study was conducted to investigate the effects of weight control program on food habits, eating behaviors and life habits in obese elementary school children. The program consisted of nutritional education, physical exercise and behavioral therapy was conformed for 10 weeks. Participants of the study involved 41 obese children and their parents. There was significant difference in waist circumference (p<0.05) and children's body fat % significantly decreased from 35.8% to 33.0% (p<0.01) after program. There was significant increase (p<0.05) in HDL-cholesterol, 47.8 (mg/dL) to 53.6 (mg/dL) after weight control program. Food habits and eating behaviors of obese children were showed positively changes but there were no significant differences after program. Regularity of having breakfast and amount of meal under the stress condition were not significantly different after program. The levels of physical activity of obese children were significantly increased from 1.40(hr) to 1.74(hr) per day (p<0.05). But there were no significant changes in spending hours of watching television and playing computer games. Food habits, eating behavior and physical activity showed significant correlations to weight control. These results suggest that the body weight control program for obese children including nutrition education, physical exercise and behavioral therapy may be effective to improve their food habits, eating behaviors and life habits. Nevertheless we need a more concentrating program to improve life habits such as physical activity and watching television.

The Evaluation Study on Eating Behavior and Dietary Quality of Elderly People Residing in Samcheok According to Age Group

The purpose of this study was to evaluate the eating behaviors and dietary quality of various aged adults. This study conducted through questionnaire and dietary survey by 24-hr recall to 850 adults residing in Samcheok. Subjects were divided into four groups according to the age in male and female, which included 20~29 yrs group (male n = 94, female n = 66), 30~49 yrs group (male n = 201, female n = 216), 50~64 yrs group (male n = 88, female n = 96), and >or = 65 yrs group (n = 46, female n = 43). In male, 20~29 yrs group had a larger proportion of subjects who skipped breakfast, lunch and dinner compared to other groups (p<0.001, p<0.05, p<0.01). The daily food and energy intakes in > or = 50 yrs group were significantly lower than those of < 50 yrs. Protein and fat intakes of 20~29 yrs group were significantly higher than those of the other groups. But ND (Nutrient Density) of minerals as like calcium, iron and plant iron in 20~29 yrs group were significantly lower than those of other groups. The KDDS (Korean's Dietary Diversity Score) of 20~29 yrs group, 30~49 yrs group, 50~64 yrs group and > or = 65 yrs group in male were 4.1, 3.8, 3.7 and 3.5 respectively and there was significant difference (p < 0.001). In female, skipping breakfast and dinner were significantly higher in 20~29 yrs group than in other groups (p<0.001, p<0.001). And the use of nutrient supplementation was higher in 30~49 yrs group than that of other groups (p<0.05). The daily energy intakes was higher in 20~49 yrs group than that of >or = 65 yrs group. The ND (Nutrient Density) of animal protein, vitamins A and B1 in 20~29 yrs group were significantly lower than those of other groups. The KDDS of 20~29 yrs group, 30~49 yrs group, 50~64 yrs group and > or = 65 yrs group in female were 4.0, 3.9, 3.9 and 3.6 respectively and >or = 65 yrs group was significant lower than other groups. According to these results, >or = 65 yrs and 20~29 yrs group had more dietary habit problems and poor nutrition status than 30~64 yrs group. The results of this study revealed that nutritional management and education for adequate meals should be emphasized in adults and elderly.

The Weight Control-Related Attitudes, Dietary Self-Efficacy and Eating Behaviors according to the Perception of Eating Disorder and Obesity Index in Dancing Major High School Girls

This study was performed in order to compare the differences in dietary self-efficacy and eating behaviors as well as the relationship of weight control attitudes according to eating disorder perception and obesity index for high school girls majoring in dance. Almost half (45.5%) of the subjects perceived eating disorders, and the rate of underweight group was 45.7%. Forty-four percent of the group that perceived eating disorders were in modern dance, while 55.0% of the group that did not perceived eating disorders were in Korean dance (P <0.05). For the obesity index, a similar rate was shown between the different types of dance for the underweight group, but in the normal group, 54.5% were in Korean dance (P <0.05). Most (82.0%) of the group that perceived eating disorders had fears on obesity, while only 53.3% of the non-perceiving group had fears on obesity (P <0.01). Over half (58.3%) of the underweight group had fears on obesity, while 77.2% of the normal group showed fear in that (P <0.05). For necessity of weight loss to do dance performances, 25.0% of the underweight group and 57.9% of the normal group need that (P <0.05). Most of the group that perceived eating disorders (92.0%) answered that they had experience in very low calorie diets, while only 40.0% of the non-perceiving group had experience (P <0.001). For necessity of calorie education, 42.0% of the group that perceived eating disorders and only 20.0% of the non-perceiving group answered is needed (P <0.05). For eating behavior , the group that perceived eating disorders had lower total scores compared to the non-perceiving group (P <0.001), The group that perceived eating disorders showed lower scores for restraint eating (P <0.01) and emotional factors (P <0.001) except by external eating. This study showed that high school girls majoring in dance have high interest in weight control and problems with wrongful body images and eating behaviors, as well as need for calorie education were suggested. Thus, it is necessary to develop and execute a proper weight control education program for the subjects.

Nutrition Knowledge and Eating Behaviors of Elementary School Children in Seoul

This study was aimed to examine nutrition knowledge, dietary attitudes, and eating habits of elementary school students and to examine if their characteristics differ by gender. Subjects were 5th and 6th graders of an elementary school (n = 317) in Seoul, and the survey was done during July 2007. Mean height, weight, BMI of subjects was 148.1 cm. 41.7 kg, 19.0, and 14.3% of subjects were categorized as the overweight/obese group. Anthropometric data were not significantly different by gender. Mean score of nutrition knowledge was 14.9 out of 20 showing moderate knowledge levels, and girls scored higher on nutrition knowledge than boys (p < 0.05). Subjects showed knowledge deficit in areas such as nutrients, food groups and specific weight control information. The percentages of correct answers regarding meals for brain function were significantly higher in girls than in boys (p < 0.05). They got nutrition information mainly from mass media and family/relatives. The mean score of dietary attitudes was 41.2 (possible score: 10-50) indicating somewhat positive attitudes, and the score of eating behaviors was 34.8 (possible score: 15-45). Subjects showed problems in eating habits such as having unbalanced diets and snack foods. 82.6% of subjects had unbalanced meals, and these percentages were higher in girls (87.2%) than in boys (78.1%, p < 0.05). Vegetables and fish/shellfish were the most disliked foods. Specific eating behaviors, such as eating slowly, eating grains and having processed foods less frequently, were better in girls than in boys (p < 0.05). Results also showed that majority of subjects need to improve specific behaviors including having diverse foods, eating meals slowly, having meals at regular times, having adequate foods in each food groups, and eating sweets or salty foods less frequently. Only 52.7% of subjects perceived their body images as normal, and 56.4% had experience of weight control. Reasons for weight control were different by gender (p< 0.05). Based on these findings, nutrition education for school children should focus on modifying eating habits or eating behaviors, by suggesting practically applicable methods and providing nutrition information that is interesting and suitable to school-aged children.

A Comparative Study of Nutrition Knowledge, Nutrition Attitudes and Eating Behaviors of Dietitians and Non-Dietitians Working in the Metropolitan Area

This study was carried out to compare the nutrition knowledge, nutrition attitudes and eating behaviors of dietitians and non-dietitians. The subjects of this study were 148 dietitians and 195 non-dietitians who are working in the metropolitan area. The general characteristics, nutrition knowledge, nutrition attitudes and eating behaviors of the subjects were surveyed using a self-administered questionnaire. The results were as follows: The result of anthropometric data and body mass index showed no significant differences between dietitians and non-dietitians groups. The dietitian group (16.61 +/- 1.82) showed a significant difference (p < 0.001) compared to the non-dietitian group (14.60 +/- 2.17) in nutrition knowledge scores. Nutrition attitudes of the dietitian group (36.66 +/- 6.91) was a little higher than the non-dietitian group (36.21 +/- 7.95), but not a significant difference. The dietitian group (61.52 +/- 9.37) and the non-dietitian group (62.50 +/- 11.25) were no significant difference in eating behaviors. The correlation between nutrition knowledge scores and nutrition attitudes score of dietitians and non-dietitians groups were no significantly difference and also the correlation between nutrition knowledge scores and eating behaviors scores were not statistically significance. Whereas, the correlation between nutrition attitudes and eating behaviors showed a significant difference (dietitian r = 0.40829, nondietitian r = 0.51914). From these results, we could see the necessity of emphasis of nutrition knowledge by mending the education is necessary to enable dietitians to apply that in real life. Also it is important to guide non-dietitians to adjust their nutrition knowledge, nutrition attitudes and eating behaviors.

Comparison of Weight Control Behavior and Self-esteem between Healthy Weight and Obese Children

The study compared eating and physical activity related behaviors and self-esteem between healthy weight and obese children by presenting 175 primary school students in Busan City and Gyeongsang province with a self-reported questionnaire and Coopersmith's self-esteem inventory. The questionnaire was composed of 25 items, weighted primarily by a Likert scale. The self-esteem inventory presented to the students comprised 25 "Yes" or "No" response questions to different statements. The study found obese children were more likely to think they always had to control their weight (p = 0.000), reportedly measuring their weights significantly more than the healthy weight children. Also the study found that obese children are significantly more likely than healthy weight children to go on a diet, however neither group were successful in losing weight as the duration of the diet in 79.5% of the total sample lasted no longer than one week. In comparison to healthy weight children, obese children reported that they consumed fewer snacks during the day, avoided snacking subsequent to an evening meal and exercised more frequently for as long as physically possible. Interestingly, we found no difference of reported self-esteem between groups, though the obese group were more likely to answer that their parents did not understand them (p = 0.055). Based on these findings, we concluded that the obese children who participated in the study were more aware of their body weights than the healthy weights children. It may be necessary to investigate further the relationship between self-esteem and participants' weights while considering other variables such as personality and body image.

Development and Application of a Health Belief Model Based Nutrition Education Program for Day Care Center Children

The purpose of this study was to develop various nutrition education materials, including an animated CD, for day care center children and their teachers and in order to apply the nutrition education programs systematically. We evaluated the effect of the nutrition education programs on nutrition knowledge in the first year, and the effect of the nutrition education programs on nutrition knowledge, food attitudes and eating behaviors in the second year in day care center children. In the first year, nutrition education foundational materials, such as the animated CD-ROM, videotape, textbook, panels, posters, slogans, leaflets, picture disks, hand puppets, stickers for compensation and poster boards were developed. The subjects were 537 children (286 boys, 251 girls) aged four to six years. In the second year, nutrition education materials, such as the animated CD-ROM and textbook were developed. The nutrition education group included 368 children (177 boys, 191 girls) aged four to six years, and the comparison group consisted of 108 children (54 boys, 54 girls). Regarding the nutrition knowledge test results in the first year, the pre-test mean of children was 6.82, however, the post-test mean was 11.35 and showed a significant increase (p < 0.001). Regarding the nutrition knowledge test and the food attitude test results in the second year, the nutrition education group had significantly higher scores than the comparison group in a post-test (p < 0.001). For the eating behavior test results, the post-test means between the comparison group and the nutrition education group were not significant. The test results show that several months of nutrition education is not enough to improve eating behaviors. As a result, nutrition education has improved nutrition knowledge and food attitudes in day care center children but short-term nutrition education was not sufficient to induce a change in eating behaviors. To improve eating behaviors in day care center children, nutrition education programs must be applied to day care center children in addition to their parents and persistent education will have to be continued.

Characteristics of Infants' Temperaments and Eating Behaviors, Mothers' Eating Behaviors and Feeding Practices in Poor Eating Infants

The purpose of this study was to determine the characteristics of infants' temperaments and eating behaviors, mothers' eating behaviors and feeding practices in poor eating infants. The participants were 80 infants of 12 - 24 months (27 poor eaters and 53 matched normal controls) from a hospital and a public health center. Mothers were questioned about their eating behaviors and feeding practices, and infants' temperaments, eating behaviors, and nutrient intakes by one day food recall. Subjects were divided by mean nutrient adequacy ratio (MAR, < 0.75; poor eater). Intakes of Ca, P, Fe, Zn, thiamin, riboflavin, niacin, vitamin C, E, folate were below 75% RDA in poor eaters, whereas protein, thiamin, riboflavin, vitamin B6, C, folate exceeded 125% RDA in good eaters. Rhythmicity of infants' temperaments and eating behaviors, restriction of mothers' eating behaviors and feeding practices were significantly lower, whereas activity levels of infants' temperaments were higher than good eaters. In multiple logistic regression model of poor eaters, activity of infants' temperaments (T, OR: 1.19, CI: 1.05 - 1.35) and attention spans of infants' eating behaviors (A, OR: 1.18, CI: 1.03 - 1.35) were significantly positive, whereas rhythmicity of infants' eating behaviors (R, OR: 0.79, CI: 0.67 - 0.94) was significantly negative [E (the logit) = -6.8644 + 0.1712 x T - 0.2337 x R + 0.1641 x A]. Our findings suggest that examination of eating behaviors, feeding practices, and temperaments will help target interventions to improve infants' food intakes, and these variables should be examined at the time of nutrition counseling.

A Study on Weight Control, Nutritional Knowledge, Dietary Attitudes and Eating Behaviors among High School Female Students

This study was designed to examine weight control, nutritional knowledge, dietary attitudes and eating behaviors of 370 high school girls and to investigate if there were differences in these variables by weight control status. The weight control attempters (65.1%) had significantly higher body weight and BMI (p<0.001). The difference between desired and current body weight was -9.1 kg in the attempters, showing a significantly higher difference than the counterparts (p<0.001). The attempters also showed more interest toward weight control (p<0.001), but were less satisfied with their body size (p<0.001). Most of subjects (88.1%), especially in the attempters (96.7%) responded that they would try to control their weights in the future. The regular exerciser was 22.9% in the attempters while the percentage of the counterparts was 11.9% (p<0.05). The use of internet or television watching was not significantly different by weight control status. Subjects scored 15.8 out of 20 on a nutritional knowledge scale, which showed a moderate level of knowledge. The nutritional knowledge score was 15.7 for the attempters and 15.8 for the counterparts. None of the nutritional knowledge items reached statistical significance, although the percentages of correct answers regarding weight control or balanced meals were slightly lower in the attempters. The attempters showed more favorable eating attitudes than the counterparts (p<0.001), especially in the attitudes of applying nutritional knowledge to daily life (p<0.01), attitudes for modifying diets (p<0.01) and importance of having adequate meals (p<0.01). The eating behavior was moderate, with mean scores of 31.1 (possible score: 15-45). Subjects showed problems in eating a variety of foods, eating meals regularly, eating slowly, eating breakfast and consumption of some food groups (e.g., dairy foods, fruits). The attempters consumed seaweeds more frequently than the counterparts (p<0.05). Although there were not many significant differences by weight control status, this study suggested that nutrition education for adolescent girls should be planned to provide nutrition information regarding desirable weight control as well as modifying diets and eating behaviors.

A Study of Early Child Care Center Teachers' Attitudes for Meal and Snack Guidance between Sweden and Korea

The objective of this study was to compare early child care center teachers' attitudes for meal and snack guidance between Sweden and Korea. Participants were 251 early child care center teachers (Sweden: 134, Korea: 117) working in Goetebory, Sweden, and Seoul, Korea. The survey was conducted from December in 2003 to February in 2004. SPSS programme was used for statistical analysis. Sixty five point eight percent of the Korean early child care center teachers provided a certain amount of foods for children. But 20.9% of Swedish provided a certain amount of foods for children, 79.1% of them provided the amount a child wanted. Sixty one point seven percent of Korean teachers allowed a child leave foods on the plate, but 95.5% of Swedish teachers asked a child eat all food on the plate. When a child didn't want to eat, 61.1% of the Korean teachers fed him/her, but 11.0% of the Swedish teachers did. Only 42.4% of the Swedish teachers allowed a children eat sweets, but 92.9% of Korean did. The Swedish teachers' perception for food guidance were eating by child himself/herself > washing hands before eating > having appropriate table manner > eating as talking with friends > not playing during the meal time, while the Korean teachers' was taking various food > having appropriate table manner > eating by child himself/herself, not playing during the meal time > washing hands before eating. The Swedish teachers thought 'eating as talking with friends' and 'eating by child himself/herself' is important, where as the Korean's did 'eating without making noise', 'not playing during the mealtime' in the eating behavior. For 'brushing teeth after meal' the Swedish teachers' score (1.5) was lower than the Korean (4.2). The results is necessary to improve meal and snack guidance for Korean early child care center teachers' education.
